Christmas Tree Salad by @lumadeline 💚 - 4 cups baby arugula
- 2 Persian cucumbers, sliced
- 1 avocado, cut in half and sliced, then arranged into avocado roses
- 1 head buttercup lettuce, bases trimmed and leaves separated
- 1/2 yellow bell pepper, use big star-shaped cookie cutter to cut out a star as topper
- 1/2 big carrot, peeled and sliced, then use small star-shaped cookie cutter to cut out stars
- 2 cups of heirloom small tomatoes
- 1 stick of celery, cut in half lengthways
- 5-6 radishes, green leaves cut, leave the root, cut into little ornament style
- 1/4 cup chopped toasted macadamia nuts
- Slices of baguette
Papaya Seeds Vinaigrette:
- 1 tbsp fresh papaya seeds
- 1/2 small shallot
- 1/4 cup raspberry vinegar, or apple cider vinegar, or white balsamic vinegar
- 2 tbsp agave syrup
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/3 cup olive oil
- Pepper, to taste
Blend everything together until smooth. Then drizzle it over the salad.
How it's made:
Arrange the leaves on a very large platter or cutting board in a Christmas tree shape. The platter should be large enough to accommodate a star on top and a trunk on the bottom. Arrange a layer of little buttercup lettuce leaves to create tiers on the tree. Use celery sticks to create the trunk of the tree. Place the bell pepper star at the top of the tree. Scatter cucumber, tomatoes, carrots, radish and macadamia on top. Drizzle papaya seeds vinaigrette or your favorite vinaigrette on top. Decorate the ground under the tree with slices of bread. Serve immediately. #bestofvegan

Off to take my yoga final! I’m half-way done with teacher training and could not be more excited! I’m not sure if I plan to teach yet, but this journey so far has been magical. I’ve never felt more confident and in-tune with my body. 🙏🏽✨

There are some days that I come home and feel that my brain is completely fried. Today is one of those days. But the worst of it is that it's only Wednesday and there are still 2 more days left for me to tackle before I get a reprieve. 😭In fact I couldn't think of anything to really jazz up this bowl of noodles so I opted to pair it with Chinese five spice tofu puffs, left over roast veggies and peas and fresh cucumber slices. As far as seasonings go I only used a partial sprinkle from the seasoning packet that came with the noodles, a little soy sauce, pepper and everything but the bagel seasoning. My way of adding a lot of umami to the meal. Definitely savored this bowl and now plan to relax my brain by enjoying some hot tea. 😌🍵Have a good night everyone. 🙌🏽I feel that my evening will involve passing out very soon. 😂

Let me tell you a story about a lady who bought enough caeser salad ingredients to serve 100 people then ran out of time to make the salad before her book launch party and will now be eating the Kale Caesar Salad with Crispy Chickpeas for breakfast, lunch and dinner for the foreseeable future. 🙋🏻♀️ Anyways, this is one of my favorite sneakily protein-packed salads and you can find the recipe in my cookbook!

So it’s not the most beautiful bowl I’ve made 🤷🏻♀️ but it‘s a super yummy bowl of split pea soup made with whole plant foods that pairs perfectly with a green salad and your favorite bread. 88% of those who took my poll wanted this recipe so please give it some love ❤️ . Recipe, as requested, will be below. After all, it was absolutely freezing in NY today❄️—soups are definitely in order. Not so cold where you are? Well, feel free to drop the AC and curl up on the couch to pretend it’s winter with this comfort food.
Split Pea Soup
1 large onion, chopped
2 stalks celery, chopped
2 large carrots, chopped
2 cloves garlic, minced
2 medium potatoes, chopped
1 lb green split peas
8 cups vegetable broth
1/2 tsp oregano
1/2 tsp dried parsley
1 bay leaf
1 tsp salt
Fresh ground pepper, to taste
Juice of half a lemon
Fresh parsley, to garnish
Sauté onion until translucent. Add celery and carrots and continue sautéing a few minutes more. Add garlic and sauté a minute more. Add potatoes, split peas, herbs/seasonings, and broth. Bring to a boil. Reduce to low and simmer for about 45 minutes. Remove 2-3 cups (depending on desired texture) of soup and blend in a high speed blender for about 10-15 seconds. Return to pot and stir to combine. Add lemon juice and stir. Enjoy hot topped with fresh parsley!
