i made this vegetable spring rolls video mainly because i was so mad at myself for spending $9 on them a few weeks ago in sf, and i knew i could make them at home. it's SO EASY and you can fill them with whatever vegetables you want. you can add some protein or noodles  in there too, if you want them to be more filling. i kept the spring rolls pretty plain, which is why you have to make the peanut sauce!.

here's what i mixed together for the dipping sauce: 1/2 cup peanut butter, 2 tbs rice vinegar, 2 tbs soy sauce, 2 tbs honey, 1/3 cup filtered water, 1 tsp sesame oil and a pinch of salt (add more to taste). stir until smooth.

the spring rolls are best eaten within a few hours. if you're not eating then immediately, make sure to cover them up with plastic wrap to prevent the rice paper from drying out.

in the recipe, i'm using @mina harissa, which is quite saucy. if you're using dried harissa spice, you might want to mix a 1/4 teaspoon of it with a few tablespoons of tomato sauce to get the same consistency.

I love the transition from season to season because it’s a harbinger of change. 🍲 BLACK RICE & SPRING VEGETABLE PILAF 🍲

Instructions:
Soak black wild rice for 30 minutes or up to a day. Cook rice in 1 cup plus 2 tablespoons of water in a rice cooker (I hit the “brown rice” setting on mine) or in a saucepan for approx. 60 minutes.

In a small saucepan, heat butter and add sliced shallots. Cook, stirring occasionally until translucent. Add garlic, cardamom, cinnamon, and cumin and cook for 30 more seconds until fragrant. Remove from heat and stir into cooked rice while the rice is still hot so the flavors marry. Set aside.

Mix yogurt sauce by whisking together yogurt, lemon zest, lemon juice, agave or honey, olive oil and salt. As needed, stir in a tablespoon of water to thin it out.

In a medium saucepan, heat a bit of olive oil and add asparagus, broccolini, edamame (you can add it frozen or thawed), and a pinch of salt. Cook, stirring occasionally for 3-4 minutes until the vegetables are tender, but still vibrant green.

Plate rice and vegetables. Top with yogurt sauce, chives, mint, a squeeze of lemon juice, and serve.

Whisk room temperature butter (or oil), with sugar, milk, vanilla, and apple cider vinegar.
Sift together flours, baking soda and salt and set aside.
Mash bananas.
Gently stir together the dry and wet mixtures. Fold in bananas and walnuts. Don’t over-stir, mix until ingredients are just combined to avoid dense bread. Top with a few extra walnuts.
Bake for 30-50 minutes depending on your oven. Bake mini-loaves for 25-30 minutes.

Holiday appetizer idea if you are having an indian meal- My version of Aloo Tiki Chaat made with delicata squash...a little healthier than potato and feels more festive! Here's how to make it if you are using the quick chole recipe I posted yesterday. If you are making a more time consuming chole, make it ahead of time. This can even be a main dish if served with rice or quinoa! Happy Friday!

Sprinkle chaat powder on each slice. Begin to make the chole. Put the delicata slices in the oven for 20 min. After 20 min, turn over each slice. Remove from oven after 5 min. Put chole on plate and top with squash slices. Top with tamarind chutney, green chutney and yogurt. Sprinkle a bit more chaat powder or black salt and some sev. .

You can use a wok to cook most everything. I steamed some black lentils (I love them because they make the water black and creepy) then added in a homemade balsamic reduction with spinach, onion, garlic, peppers, enoki and other kinds of mushies. I even used my favorite spices (turmeric, cumin, chile powder, ginger etc.) and topped it with some verde hot sauce that I put on virtually everything.

I had a night full of solitude and food for myself, and now I get to enjoy the leftovers for lunch today. Blesst.

* 1 orta boy kuru soğan iri iri kesilip ( hiç dert değil, sonunda çorba blenderla bıızzzztt !) * 2 çorba kaşığı tereyağ ile şeffaflaşıncaya kadar  kavrulacak.
* 2 çorba kaşığı dolusu un * 1/2 yemek kaşığı domates salçası eklenip , çok az daha çevrildikten sonra * 2 büyük domates ( kabuklarıyla birlikte ) blenderden geçirilip eklenecek.
ve * 2 su bardağı su da ilâve edilerek  kapağı kapatılıp, kısık ateşte soğanlar yumuşayana kadar pişirilecek.
* Sonra 2 su bardağı süt
* 1/2 çay kaşığı kara biber ve tuz ilâve edilerek kısık ateşte 15 dakika pişirilecek. 
En sonunda, blender ile bıızzztt yaptıktan sonra afiyetle...

No bake chocolate cake-

Butter-1/2 cup
Dark Chocolate-1 cup
Sugar-1/2 cup
Coco Powder-1 tab sp.
Vanilla essence-1 tsp.
Marie biscuuits-6-7 crushed
Almonds, pistachio, rasins-3/4 cup
lemon zest-2 tsp.
orange juice-1 tab sp.
Method-
1.In a heavy bottom pan, cook butter and chocolate pieces on a very low heat till chocolae melt.
2.Add sugar and coco powder, mix well.
3.Add dry nuts and  crushed marie biscuits, lemon zest, juice and mix properly.
4.Spread this mixture on cling foil and wrap tightlyand keep it in refrigritaorfor 2 hours.
5.Unwrap and slice as per your choice.
Tips-
1.You can store these logs in refrigerator for 1 month  Cut and serve when you want.

SWIPE LEFT for easy step by step instructions on how to cook this!

INGREDIENTS: (Serves 4-5)

1. 2 tins or 450g Red kidney Beans 
2. 3 large onions finely chopped
3. 6-8 cloves of garlic sliced 
4. 6-8 tomatoes grinded or use one tin of chopped tomatoes/passata
5. 2 tbs sunflower oil 
6. 1 tsp cumin seeds (jeera)
7. 1 dry red chilli 
8. 1 tsp asafoetida (hing)
9. 1 tsp salt (or to your taste)
10. 1 tsp ginger paste 
11. 1 tsp green chilli pasta (or alternative use red chilli powder)
12. 1/2-1 cup water
13. Garnish: coriander.

METHOD:

Step 1: In a large pan on low-medium heat add sunflower oil, cumin seeds & dry red chilli.

Step 2: Once the cumin seeds & red chilli start sizzling, add the garlic & onions. Sauté until soft for 4-5 mins or until soft.

Step 3: Add asafoetida, ginger & chilli paste and mix well.
