And it's a simple square meal tonight. 
Rotis (whole what flatbreads), the typical Punjabi dal makhni or Maa ki daal (black lentils and red kidney beans cooked in the goodness of butter, cream and spices), boondi raita (boondis are droplet sized deep fried savoury snack made from chickpea flour- which is further made into raita by mixing boondi with yoghurt, chopped onions and tomatoes + spice and salt) and last but not the least, jeera rice (long grain basmati rice sautéed in cumin seeds and then cooked to perfection). All of which adds up to pure homemade magic ✨

Recipe⠀
Makes 1 pizza⠀
Crust:⠀
2 medium sized sweet potatoes⠀
olive oil⠀
sea salt⠀
black pepper⠀
pizza spice mix⠀
garlic clove, minced⠀
⠀
Filling:⠀
pesto sauce⠀
125 g organic mozzarella (and/or feta or vegan cheese)⠀
couple of handfuls baby spinach leaves⠀
1 spring onion⠀
4 stalks of sweet baby broccoli⠀
artichoke hearts (cooked/from a jar)⠀
3 slices of lemon⠀
pine nuts⠀
olives⠀
fresh oregano⠀
fresh basil⠀
sunflower sprouts⠀
⠀
Preheat the oven to 200 Celsius / 390 Fahrenheit degrees. Cover a baking tray with a parchment paper. Peel the sweet potatoes and slice them up with a cheese slicer or a mandolin vegetable slicer into very thin, almost transparent slices. Arrange the sweet potato slices on the baking tray so that they overlap each other and make a circle. Fill all holes and also the inner circle, so that you get a circle with no holes or see-through spots. Nos sprinkle on some olive oil, salt, black pepper and pizza spice mix. Add also the garlic. Bake in the oven for 10-15 minutes until the sweet potato slices get softened. Take out from the oven. Spread some pesto on the crust and add the cheese. Add also the spinach leaves. Cut the spring onion and broccoli into small pieces and sprinkle them on the pizza. Slice the artichoke hearts and add them with lemon slices, pine nuts and olives. Bake in the oven for 10 minutes until the cheese melts and the filling get a nice tanned color. Take out of the oven and top with fresh oregano and basil + sprouts. Serve and enjoy!

Coming at you with a #MeatlessMonday and my best tips on 👉 How to make vegetarian meals more hunger satisfying:

1.) LOAD UP ON VOLUME:
Stick with non-starchy vegetables such as salad greens, cucumbers, tomatoes & bell peppers! 🥗 These veggies are easy to eat larger amounts of while still being low calories, nutrient dense and packed with fiber!🌿

2.) HIGH PROTEIN:
Add a protein rich source such as tofu, legumes or quinoa (or all 3 made into veggie meatballs 😉). If you're not Vegan you can also add cheese for an added boost of protein and fat soluble vitamins! 🧀

3.) SMART CARBS:
Sure you could go for pasta or bread, but if you choose a more whole food based carb source such as sweet potatoes you get the added benefit of less processing, no additives & more antioxidants! aka more health!!🍠

Vegan Stew w/Mushrooms Rosemary Sauce by @vegaliciously 💗

INGREDIENTS:
•150g soy stew (the one I use is dry!)
•1 red onion
•1 garlic clove
•1 carrot
•3 rosemary springs
•1 thyme spring
•salt & pepper
•a pinch of nutmeg
•150g portobello mushrooms
•150g soy cream (or oat cream)
•1 tsp coconut oil
METHOD:
1. soak the soy stew in boiling vegetable broth for 10 minutes. Drain and put aside.
2. Mince the onion, garlic clove and the carrot.
3. Heat a saucepan over medium heat. Add the oil and the minced veggies, cook for 5 minutes.
4. Add the spieces and the soy stew and cook for another 10 minutes. 
5. Rinse and dry the mushrooms. Cut them in not too small slices (3mm). 6. Add the mushrooms and cook for another 5 min.
7. Pour the cream and let it stew until it reaches a creamy consistency.
8. ENJOY!

spanakopita recipe

Ingredients:
2 Tbsp olive oil
1 small red onions (finely diced)
2 green onions (finely chopped) 
2 cups feta cheese (crumbled - drained - no brine)
1 pkg frozen chopped spinach (drained and all the liquid squeezed out, so the phyllo pastry won't get soggy)
1 yellow or red pepper (seeded and sliced into small pieces) 
1 garlic (finely minced)
salt and pepper to taste 
1/2 cup melted butter
olive oil cooking can spray (optional) 
Directions:
Preheat oven to 375 F. 
For the filling:
In a large non-stick frying pan, heat olive oil (medium heat) and sauté onions, peppers and green onions for 5 minutes. Stir in minced garlic and season with salt & pepper (*do not over salt - the amount of salt added depends on the saltiness of the feta cheese) and cook for 2 minutes. Turn heat off and mix in spinach. Transfer mixture to a bowl and add in feta cheese - stir and fold until combined. Set aside. 
Forming the Spanakopita:
Place one phyllo sheet on a clean dry work surface. Keep remaining sheets covered with plastic wrap and lightly damp dishcloth. Quickly brush sheet lightly with melted butter. (*I used a can of olive oil spray to lightly cover the sheet first, this way I didn’t need to brush the entire sheet with melted butter.) Cut the phyllo sheet into four strips lengthwise.

Place 1 Tbsp filling at the bottom of each strip. 
Begin folding the filo into triangles.

Fold one corner of the filo over the filling so the bottom edge meets side edge to form a triangle, continue folding up triangle until end of strip to incase the spinach and keep the mixture from spilling out.

Brush your final product with melted butter and either place on a baking sheet lined with parchment to bake.

Bake on the middle rack at 375 F for 15-17 minutes or until golden brown and flaky. (Swipe right for visual aids.) Enjoy!

Today, I made a mildly sweet version of Zarda (#sweet yellow rice) with jaggery. When I was growing up, zarda was never made at home. But every Basant Panchami I looked forward to digging into a little dabba (lunch box) of this fragrant rice sent over especially for me by a close family friend. I like mine with a touch of kewra (pandanus extract). Am sharing the recipe I tried below.
Yellow Sweet Rice (Zarda):
1/2 cup basmati/long grain rice
Water for cooking 
3 tbsp powdered jaggery/sugar (I added only 1 tbsp, but you can add more to suit your taste)
A large pinch of saffron
1/4 cup milk
2 tbsp ghee
1 tbsp raisins
1 tbsp slivered almonds
1” piece cinnamon
2 cloves
2 green cardamoms
1/4 tsp grated nutmeg
1/4 tsp ground turmeric
1/2 tsp ground cardamom
2 semi dried apricots, chopped 
Dash of kewra (you can use rose water or almond extract if you prefer)
Wash the rice well and cook in 2-3 cups of water until almost done. Drain well & set aside. Stir the powdered jaggery, saffron & milk together until the jaggery dissolves. Add in the jaggery mixture, turmeric & ground cardamom and fry for a minute. Then add the drained rice & chopped apricots, mix gently until the grains are evenly coated and turn yellow. Lower the heat, cover and cook for another 5 minutes. Remove from heat, stir in a few drops of kewra and serve warm garnished with the almonds & raisins.

Today, I made a mildly sweet version of Zarda (#sweet  yellow rice) with jaggery. When I was growing up, zarda was never made at home. But every Basant Panchami I looked forward to digging into a little dabba (lunch box) of this fragrant rice sent over especially for me by a close family friend. I like mine with a touch of kewra (pandanus extract). Am sharing the recipe I tried below. Yellow Sweet Rice (Zarda): 1/2 cup basmati/long grain rice Water for cooking 3 tbsp powdered jaggery/sugar (I added only 1 tbsp, but you can add more to suit your taste) A large pinch of saffron 1/4 cup milk 2 tbsp ghee 1 tbsp raisins 1 tbsp slivered almonds 1” piece cinnamon 2 cloves 2 green cardamoms 1/4 tsp grated nutmeg 1/4 tsp ground turmeric 1/2 tsp ground cardamom 2 semi dried apricots, chopped Dash of kewra (you can use rose water or almond extract if you prefer) Wash the rice well and cook in 2-3 cups of water until almost done. Drain well & set aside. Stir the powdered jaggery, saffron & milk together until the jaggery dissolves. Heat the ghee in a large pan/wok and lightly fry the raisins & almonds. Drain and set aside. The sauce is tomato and super green pesto - Two flavors which I thought wouldn’t mix and might taste a bit dry BUT I take back my false judgement because the flavors mixed very well together and it tasted absolutely gorgeous! 😋 Creamier than I thought!

If you followed my Insta stories you’d see that I bought some green Marmonde tomatoes of SouthWest region of France, harvested green for its full flavour. These were sweet and slightly tangy,  perfect for making an Indian green tomato chutney.

As I was making this chutney, it reminded me of the times when my grandma used to make this from their freshly grown tomatoes in the farm. I used to love the aroma and flavour of green tomato in its sweet and sour sauce and would quickly polish it off with the ‘Bhakri’ served with it. .
[A small digression : A Bhakri is a flatbread usually made out of dark millet flour or Sorghum flour in western India. It is cooked by flattening the dough by hands (instead of rolling) and then roasting it on naked flame.]

🌱 I finely chopped 2 big onions, 4 garlic cloves and diced the Marmonde tomatoes.

🌱 I fried the onions in vegetable oil until golden brown. Fried the garlic until slightly brown.
.
🌱 Then, I added half a teaspoon of red chilli powder and poured the diced tomatoes in. Added salt to taste. Let the entire mixture cook for 3-5 mins.

🌱 I added roasted and finely ground peanuts as it goes well with most Maharashtrian dishes. And..... there was a green tomato chutney ready to fill some hungry tummies 😍
