Repurposed leftovers for dinner 😄 I served the sunflower soup from yesterday over rice noodles and topped it with lime juice, cilantro, red cabbage, extra tofu and scallions. Served with a side salad with peanut vinaigrette and some cucumber slices. Perfect satisfying summer meal. ❤️
I have a love-hate relationship with Mondays 🙄😂🤷🏻♀️ This brekkie mug makes it better though. Spiced up the overnight oats game last night. 👉🏼 add 1 cup @almondbreeze Almond Cashew milk blend, 1/2 scoop @gardenoflife Chocolate raw proteins & greens powder, 1 tsp @navitasorganics cacao powder, 1/4 tsp @simplyorganicfoods no-alcohol vanilla extract, dash of cinnamon to a bowl and whisk to mix ingredients. Then, add 1 TB @traderjoes unsweetened coconut flakes, 1/2 cup @bobsredmill organic rolled oats, 1 TB @nutiva chia seeds, and gently stir til everything is combined. Soak overnight in the fridge. In the morning, I mixed again and drizzled @wild_friends Peanut Cashew Super Butter and add fresh fruit. ✨ Enjoy this with a big 🥄 outdoors. This will put a smile on your face and a pep in your step. Guaranteed! .

Coconut oil is good for more than just our #naturalhairoil ladies! Coconut oil is helpful to digestion through if antimicrobial antifungal and antibacterial traits to fight off bad bacteria that can cause indigestion. It also helps with weight loss through it short and medium fatty acid chains which help your body's ability to balance the thyroid and enzymes! And that's just me covering coconut oil!
Raspberry and Almond Loaf Cake - one of the tastiest ways to refuel, it has less sugar and more protein than standard cakes. And I made this one with olive oil so it's high in monounsaturated fats.
It also contains the MAXIMUM amount of raspberries possible (for a cake at least!) - great source of polyphenols to help muscle recovery 😊
Here's the recipe, adapted from The Vegetarian Athlete's Cookbook
50g olive spread
50g olive oil
65g brown sugar
100g ground almonds
120g sr flour
1 tsp baking powder
2 - 3 tbsp milk
1tsp Almond extract (Steenbergs)
Mix all ingredients together except raspberries. Carefully fold in the raspberries. Spoon into a 2lb loaf tin (lined with baking paper). Bake 160 C fan oven 45 min. Or until a skewer inserted comes out clean. .
I love alfredo, like I lovveee alfredo. I used to splurge and get it the night before a long run where I knew I'd run it off. Being dairy free now doesn't stop me- this is even better and I don't need to put in 17 miles to not feel like I over indulged. Don't believe me, try it! I added in some pesto to the alfredo to amp it up, bam 💥
4 cup white beans (I used cannelloni from dried)
4 cloves garlic
1tbsp soy milk
1 cup low sodium veggie broth
1/4 c. Evoo or vegan margarine
Salt and pepper to taste
Blend all together in food processor until smooth.
Pesto: (just throw this in with white bean alfredo sauce to blend all at once- saves time!!)
1 bunch basil
2-3 cloves garlic
Zest from 1/2 a lemon
2 tsp lemon juice
1/4 cup nuts (I used walnuts)
If adding to alfredo no need for more oil, If separate add 1/4 cup evoo or other oil to this.
Blend in food processor to desired consistency.
Heat sauce in skillet and toss with your favorite whole wheat pasta. Want a dash of color and nutrients- add asparagus or tomatoes.
My little one baby bird mouthed me after one taste- we have a winner!!
