🌱Roasted Cauliflower Steaks🌱
1 head cauliflower, trimmed
2 Tablespoons extra virgin olive oil
1/4 teaspoon garlic powder
Salt & freshly ground black pepper, to taste
1. Preheat the oven to 450°F. Line a baking sheet with aluminum foil.
2. Place the cauliflower onto a cutting board with the stem side facing upwards; cut vertically into four steaks, even in thickness.
3. Arrange the "steaks" onto the prepared baking sheet. Drizzle the olive oil over the steaks, & season with garlic powder, salt, & black pepper.
4. Roast in a preheated oven for 20 minutes, turn with a spatula, & continue to roast until soft in the middle & darkening around the edges, about 15 minutes more.

Currently devouring this BLAT+ salad with some crispy veggie bacon. I love how this kind of salad *feels* indulgent but absolutely is not. I added a little tajín seasoning and a drizzle of a homemade creamy vegan lemony-garlic dressing (for the mayo-ish vibe of a BLT 👌).

Cheese Stuffed Meatballs from new #kristyturner book. Def worth the labor for these, and it was really simple. The smoked Gouda #vegancheesesauce was awesome and also very simple. This comes from a person who currently eats cheese made from milk. I would serve these to non-veg peoples in a heartbeat.
Chia Seed Blueberry Muffins! I love these for the morning, and I have finally come up with with a recipe that tastes delicious but cuts out half of the added sugar. I got inspiration from @ohsheglows chia power donuts which are amazing 😍🌱 These muffins are great for on the go, or before or after a gym session because of the perfect combination of healthy fats, protein, and carbs the chia seeds provide😎
