It’s been too long since I posted a veggie burger! This one was from Dale Pues in Dan Juan del Sur, Nicaragua. No veggie burgers on the menu today, happily / sadly. Instead I’m in the kitchen whipping up a vegan barley risotto with spinach, sundried tomatoes, roasted fennel, zucchini and pesto, along with a big pot of curried tomato, lentil and coconut soup (inspired by @ottolenghi) and probably some banana bread to deal with The Forgotten Banana Situation (its like the #TrumpShutdown but worse). 👩🏽🍳
A hot hot hot and jam packed morning at the market. There’s loads of food, clothing and homeware products on offer. It’s so good to see this monthly event gaining popularity. 🤗

Maple syrup and almond pancakes from @bistroorganico 👌 I've been wanting to come here since we visited Syulita in September. This restaurant is in different town in Hotel Chielo Rojo. Was not dissapointed!! Tumeric ginger juice was amazing. ❤🇲🇽

Yesterday I chatted with a friend who is traveling to Sri Lanka this year. It had me thinking about my amazing visit, and how much I’d really like to go back someday. I loved the people, the history and the food, and it was fantastic to have some wildlife experiences. 🐘

My slightly dinner-like breakfast today: scrambled eggs, steamed veg, and sweet potato with nuts. Eating veggie here is easy, and I think I could have been more adventurous and gone all-out vegan, as every waiter has asked whether I can have eggs when I’ve asked for veggie food (so they must be familiar with veganism to some extent). BUT some meals have been protein light - just veg and rice. So I’m being sure to have as much protein as I can at breakfast. Baked potato shop
Medium Jacket potato with mushrooms and macsween haggis £6.80
Really small store near the royal mile, nicely tucked away at one of the side roads. This shop has been selling baked potatoes since 1983 and the potatoes are REALLY good! I guess the thing that really tops the cake is the vegan Haggis that is savoury and fragrant at the same time! The steam from the hot potatoes while chomping this dish down gives me a pretty unforgettable experience.

Really loving my stay in Edinburgh! It's really very vegetarian friendly! Dropped by this store for lunch and the soups are amazing! The menu changes daily so you will never be bored of this small little store. Do try the stromboli, it's really flavorful and delicious! Apparently, the store operates a truck that drives around the University of Edinburgh to sell their soups so hungry students, don't forget to eat!
Traditional Colombian Arepa with mushrooms, lentil patty and guacamole 👌🏼 We’ve arrived in Medellin and saw Mercado Del Rio recommended online. It’s a gastronomic market, and it did not disappoint less than $10AUD/CAD for the arepa and glass of wine 👌🏼
Every time I’ve been by new vegan deli Shift Eatery, it’s full. Yay for them and bummer for me!

You don’t go to Nicaragua expecting to find vegetarian lasagna, but if you happen to stumble across it on a menu then you would be crazy not to order it! This is from Café Campestre in Balgue, on Isla de Ometepe. The vegetarian lasagna was filled with local beans, lentils and vegetables, and it was served with salad made from local vegetables and homemade garlic bread. Seriously, you have to visit Ometepe if you like sunshine, monkeys and vegetables! (And if you don’t, go away.)
We spent the last 3 nights at Finca Carpe Diem, a beautiful eco-lodge up in the Sierra Nevada mountains in Northern Colombia. They had a range of vegetarian and vegan meals available and these falafels were amazing! Definitely worth staying there and exploring the surrounding area 👌🏼 #fincacarpediem
Greek moussaka €4.99
Hungry fingers attack! We HAD to go back to try the moussaka after the guy hyped so much about it. The presentation was ok but the taste was perfect! It actually tasted like Shepard's pie 😍 the top layer was made of coconut milk which made it extra fragrant. And the layers had aubergine and lentils which gave the perfect texture to match the creamy top. This was finished off with a bottom layer of creamy potatoes as well. By far one of the best meals ever!
Today I went for a walk and popped into a busy Asian food court in Haymarket. There I enjoyed a lovely (and cheap) bowl of teriyaki tofu and rice. 🍚
I must have picked the right spot, because chef Dan Hong was eating at the table next to me! 🤩
What great eating places have you discovered lately?
Breakfast at the stunning La Urraca Loca hostel in Balgue, Nicaragua. It started with a proper cup of coffee (none of the weak stuff that we were served in other restaurants!), then there was a fruit smoothie, and finally this plate - toast with local jam, eggs scrambled with vegetables, and banana drizzled with honey and cinnamon. 🍌

Pligouri with V. Salad €4.49 "Good morning, how are you?" The owner piqued immediately when we walked in. He started introducing all his food with gestures and emotions as though he's selling his babies. We ended up choosing the hot burger and a cold salad. The hot burger made me take back what I said about mushrooms replacing patties. The pligouri was so flavourful and we enjoyed the tinge of spice with every bite! Undoubtedly, the enthusiasm of the owner won our hearts, a good stopover for a quick bite after your shopping in the famous flea market!

Trust me, Google said that this place was a vegan restaurant and we were nearby. We entered the restaurant and found out that it's a bar. The waiter came up and told us that for dinner they only had burgers, pizzas and sandwiches. Slightly put off by this but it's recommended by our fellow Greek vegetarians so why not right? Turns out the pizza was pretty good (despite being frozen) as there are lots of fresh veggies added to it! The burger was pretty decent with the patty, something you usually won't find in mixed restaurants which replace the patty with a mushroom. This was a good meal, no doubt a "restaurant" that can survive on a 3 item menu must have really good food.

Located at a small street very near to the main square, this small cafe exceeded our expectations! The satori rolls had cheese over it which tasted slightly toasted and fragrant. The burgers were their signature burger and it's no wonder why! The taste of the sesame is very strong in the burger. Zucchini seems to be a Greek favourite in their foods and it's no wonder that the parmigiana di zucchini tasted fantastic as well!

There’s always a big line for these delicious korean sweet doughnuts (Hotteok 호떡)on the weekend. When we first got to Korea our friend @mlhmcanulty told me how to spot the good ones. They need to be freshly cooked and puff up. More delicious vegetarian food from Isla de Ometepe. This is the housemade pesto pasta at Café Campestre in Blagüe. I love how they make the pesto with ingredients that are grown locally (basil and peanuts!) instead of importing pine nuts from China. I think I might be hooked on peanut pesto now! 🥜
If you’re like me and still love your desserts even though you’re trying to stick to a healthy diet, here’s a healthier version of one of my most favorite desserts, Thai Mango Sticky Rice. Hope you enjoy it!
Mango Sticky Rice
2 Sweet ripe mangoes
1/2 cup Thai glutenous rice
1 cup coconut milk
1/4 cup dates + 1/4 cup water
1/4 tsp salt
1 tbsp organic corn starch + 3 tbsp water
Toasted Sesame seeds for garnish
1. Wash rice until water is clear. Place rinsed rice in a sieve and place over a deep pan with simmering water. Sieve should not touch the water. Cover and steam rice till tender.
2. As the rice cooks, puree the dates and water.
3. Pour the coconut milk, date puree and salt into a small pot. Bring to a light boil. Mix the corn starch and water and stir into the pot. Turn heat to low and stir for 1 minute more.
4. Plate the dessert with sliced mango and rice, and then pour the sweetened coconut milk mixture over the rice. Top with sesame seeds.
