VEGAN! Off The Ranch 🍅 Spaghetti Sauce! 🍅 The only thing you have to wrangle up here is some common spices, tomatoes and a package of veggie ground....a vegan alternative to ground beef. I am excited to share this recipe because it has taken me a long time to get it just right! People will ask me..."well if you don't eat meat what is that?!" Veggie ground can be purchased in the fridge in the produce section of your grocery store. It has the look and texture of ground beef but is vegan and much healthier. Its also very economical as one $4 package makes a pot of sauce that will give you many meals. This sauce freezes well. Also quicker too, it's already precooked. This makes a large pot for later in the week lasagna. Spaghetti is a favorite here. Tonight its served with a Carrot Yogurt & Honey Oat cake which I will post the recipe for tomorrow.
In large pot...Saute 2 white onions...add
4-5 cloves of chopped garlic... when all golden add...
1 package St. Yves Veggie ground
1/2 tsp white sugar
1 scant tbsp Montreal Steak Spice ...warm all through.... Add in...
4 cans diced tomatoes 796ml each
1/2 cup water
1 green pepper chopped up
Package fresh mushrooms sliced
(Optional: extra add ins...red pepper, zucchini, 1 fresh tomato)
1/2 tsp each garlic & onion powder
1/4 tsp celery salt
1 tbsp Italian seasoning
Simmer till veggies are all cooked...
Stir in 2 cans tomatoe paste 156ml each and a little olive oil. ( around 1-2 tbsp)
Add.... cracked black pepper (for a spicier sauce) and seasoned salt to taste.
Cook your pasta till el dante in salted water.
Happy World Vegetarian day!! How is it Sunday night already tho 🙄 on a brighter note.. This vegan Mexican "hamburger helper" was so good and hearty. I made the cheese sauce out of boiled potatoes and carrots, jalapeños, almond milk and nutritional yeast. I fried up some yves veggie ground with some red peppers and tossed it with cooked mac and then the cheese sauce. I finished mine off with some black olives of course 🙊🌿 Happy Sunday y'all
