You will need the following: * 1 can of organic black beans (rinsed and drained)
* 2 @vitalfarms eggs
* 1 small avocado
* 1 tbsp coconut oil, melted
* 1/2 cup unsweetened cocoa powder + 1 tbsp
* 1/2 tsp baking powder
* 1/4 tsp baking soda
* generous pinch of sea salt
* 1 tsp vanilla * 1/2 cup of organic maple syrup
* 1/2 cup of @eatingevolved chocolate bar pieces broken up + 2 tbsp of broken up @hukitchen Chocolate bar for topping
Preheat oven to 350 and spray 8x8 inch pan with coconut oil. Blend the beans in food processor first. I usually blend in my mini @cuisinart_food first, then add to my @kitchenaidusa mixer. Add all other ingredients, except the chocolate. Blend until smooth. Then by hand, fold in the 1/3 cup of chocolate. Then pour into pan and top with the two tbsp’s of remaining chocolate. Bake for approx 30 mins or until fork comes out clean and top begins to crack. Add some pink sea salt on top while still hot. Let cool for 20!

It’s been a pretty loooong week for this girl 🙋🏻♀️ and it (almost) culminated with a Thursday that I thought was a Friday when at 10pm i received a text from a neighbor with a simple “???” This vague text snapped me back into reality (aka Thursday night) as I remembered I was supposed to be at a party with my tennis team.
I had been looking forward to our end of season party for weeks. I’m terrible at tennis so the social aspect is kinda why I’m on the team so I didn’t want to miss out.
As I assessed my condition, pjs + no make up + legit messy bun, I threw on some jeans + a sweater and decided the girls were used to seeing me sans make up + gross hair. Soooo I grabbed a bottle of wine + a blanket scarf and caught the last hour of time with my fun friends!
Starting off my REAL Friday (aka my second consecutive Friday 😩🙄) on the right track with @pedersonsfarms bacon and a fried @vitalfarms egg over a cauli rice fritter (microwaved a handful of @traderjoes cauli rice for 1 min then added some whisked egg + garlic powder + paprika + salt, scooped it up and fried in leftover bacon grease for 2 min each side) and sautéed @earthboundfarm baby kale + some blistered tomato slices (just placed them in the pan next to the egg while it fried).
Yesterday was a #Thanksgiving#recipe showdown! Am I the only weirdo who tests out recipes for 🦃 day?! Hey, I want my guests to be satisfied! What can I say? Actually, a couple of years ago when I cooked Thanksgiving dinner for a large group, I didn’t test out the recipes & I was very disappointed in some of them so I’m trying to avoid any surprises this year!
Anyway...who loves #sweetpotatoes ?! 🍠🍠 I know I do! 🙋🏼♀️ No thanksgiving meal is complete w/out them IMO. I tested 2 seemingly similar recipes yesterday (same ingredients pretty much) but the results were drastically different! I’m still getting opinions from my friends but I chose my favorite & I’m sharing the recipe with you guys!
It’s delicious! The good news is its #paleo aka #grainfree / #glutenfree & there’s an option to make it #vegan by subbing the eggs & butter w/non-dairy alternatives. So pretty much everyone can enjoy this yummy treat! Unless you have a nut allergy, then unfortunately I can’t help you there. 🤦🏼♀️ The #pecan topping is 🔥🔥🔥🔥 Without further ado... (makes 4 servings, double up (or triple based upon how many ppl) the recipe for Thanksgiving)
For the mash-
▫️1.5 cups mashed sweet potatoes (about 2 medium sized)
▫️2.5 TBS non-dairy milk (I used unsweetened rice milk because it was what I had in the fridge)
▫️1.5 TBS melted butter; can sub vegan butter or coconut oil (I used @vitalfarms brand) ▫️2 TBS maple syrup
▫️1/2 tsp sea salt
▫️1/2 tsp vanilla flavoring ▫️1 egg (I used #vitalfarms )
For the topping-
▫️3/4 cup chopped pecans ▫️1 TBS melted butter, vegan butter or coconut oil ▫️1.5 TBS maple syrup
▫️1/4 tsp cinnamon ▫️dash of sea salt
For the mash-
1) Put sweet potatoes in a large pot & cover with water. Cook on high heat until boiling starts. Lower heat to a simmer/medium and cook about 10-15 mins longer (or until fork tender). Strain potatoes.
2) Transfer potatoes to a large mixing bowl & mash with a fork. Add milk, butter, sweetener, salt, vanilla & egg. Whisk until well combined & no lumps remain.
3) Pour mixture into a greased square baking pan (I used olive oil spray)
4) Preheat oven to 375 degrees F. (Continued ⬇️)
Fun fact: Wanna know what color eggs a chicken will lay? (Or is it just us who lay awake at night pondering these things??) Check out the earlobes! After 2 days in Columbus for work, which = catered lunches of 🍕🥪+ small airport fare + team dinners with all the appetizers and fried foods + snacks, cookies 🍪 and candies 🍫 if I’m being realllll honest, I’m so excited to get back to my kitchen and my ingredients!
