2 ingredient low carb pasta!
Made with mozzarella cheese and egg yolks!! Gonna eat it tonight with my homemade low-carb alfredo sauce (pics of the finished product to follow)

Altthhhoughhhhh they look more like sausage balls in this lighting , they are delightful garlic and pesto dough balls.
If I had to make a change , it would be one more tsp of butter. They were a little dry , but still good .
Trying to eat better, as I’m slipping back into some old habits lately. Breakfast was so easy and super yum - scoop Boomers WPI unflavoured protein powder, one fresh mango, one cube frozen chopped kale, 100ml soy milk. Tasted so goooood! Only got through 3/4 of it, but I’ll have the rest for lunch with another 100ml soy milk. Before and after.
This was the most I’ve eaten in one sitting since surgery. Ignore the dirty plate. It’s what I used for my chicken before I added it to the stove 20 minutes before. I also used it to cut up some fresh avocado I only used like a 1/6th of it. I’m getting better at eating. Before I wasn’t really eating at all. I literally post everything I do and consume on here and my story so some of you many know I haven’t been eating much lately and Ive been constipated kinda bad again lately. I got some milk of magnesia and I’ll be adding that to my diet. I heard the multivitamins with iron will constipate you severely so I’m assuming it’s a mixture of that and maybe me not drinking enough water but I did super good with my water intake last night and this morning! I’m getting better. Baby steps. .
And two day off from going to the gym. I tried to go Wednesday I think it was and the gym was closed so I did Zumba at home until my Apple Watch workout ring was complete and then I attempted the 8 minute and video I used to do and then the 8 minute buns video I tried for the first time. My abs are so sore still. And my sides and my back. Basically from my chest to my hips all around! Tomorrow I’m going to try to go back to the gym. Tonight I’m focusing on drinking more water and protein disinfecting my room because of the flu going around. Bunch of people at work have it, my roommate has it... I’m terrified. So I threw away my last meal prep. The cucumber started to really just gross me out and ruined the chicken. So I started over. .
Cooked diced onions in a bit of olive oil and added some pink salt and pepper. Let those yellow a bit then I added hand minced garlic with red chili powder and some paprika. I used a lot of red chili powder. Really gave everything a nice red color. I used a lower calorie, lower sodium enchilada sauce this time. Except it wasn’t enchilada sauce. It was steak taco seasoning sauce. And it was medium spicy. So I added a bit of that then added my chicken. They were out of plain rotisserie chicken at rouses so I had to buy a BBQ rotisserie chicken. Which was basically the same thing. I took all the skin off so there was really no barbecue to it. Shredded it with my fingers then padded all the grease out of it with a paper towel. Then I added it to the onions and garlic and added more sauce and kept adding more and more and more. Then I tried it and it was hella fucking spicy. I loved it. It tasted like chicken jambalaya without the rice. I added some chopped green onions after I took this pic and it toned down the spice a bit. .
Cooked the whole thing in a large pan over a medium heat. Super fast super easy. The longest part for me was hand dicing my onion and mincing my garlic by hand. Almost chopped my fingers off twice. .
For me, per serving I’d say definitely under 100 calories because I’ll eat 3 bites then be full and done. .
I might pair it with a slice of avocado and a tiny dollop of light sour cream for dinner tonight. .

So at Hardee's they have low carb option for their 1/3 thick burger (no bun but a lettuces wrap!] ! I got it with no pickles, mayo, onion, mustard or ketchup (I added a little of my own!] but oh boy it was super yummy! Great option !
It’s a biggggggg dang plate of salad... and I finished it... and like the best bariatric patient I am...
