Shut the front door! I lost 5lbs in 3 days by eliminating plain junk in my diet. I’ve been teetering lately on becoming vegan, but this may do it! I recently hit a plateau where my weight wasn’t budging at all. I decided to try something new with my diet. I used this method to help kick start my metabolism and gut health again.
For 3 days, I only had fresh fruits and vegetables. I also eliminated grains, caffeine, and dairy. I did supplement with a protein and fiber drink to help clean the junk out... I guess I had a lot of junk because my results were quite noticeable. I felt better much better today!
Today I’m slowly transitioning in some meat and bread, but I’m going back to veggies tomorrow.

Another crazy clean out the fridge meal last night - Thai tofu soup starting w @nonalimfoods Thai Curry broth adding bok choy, green onions, carrots, zucchini, jalapeno, garlic, lime juice, and ginger. Near the end I added drained and chopped tofu and a lot of Chinese pepper paste cuz I was out of Thai chili paste. Topped it w diced tomato, avocado, and cilantro. I'd describe it as eclectic fusion 👊 >>> Dinner served.

All done with the Multipurpose Steamer: We have steamer chicken seasoned with Epicure’s Souvlaki, we have steamer Stipetti Squash (spaghetti squash cousin) the squash “noodles” tossed with Epicure’s Alfredo Mix and sprinkled with some SPG! I made some regular fettuccine noodles too for the kiddos and husband......OH MY! Simply delightful! 🔷
Oh did I mentioned it was cooked and served in about 30 minutes, yes that’s right! When I got home I didn’t know what to make. Now I had some ingredients in my fridge but no meal plan......but it all came together and in record time too! 🔷

I spent the morning / early afternoon visiting my parents and being treated to barfi (Pakistani sweetmeats) of #saffron , #koya ,#pistachio and #almond variety. I do have an unapologetically sweet tooth and am particularly fond of certain #pakistani / #indiansweets ! Served with a steaming cup of tea, I'm often quite happy to forego a 'proper' meal, just so I can further indulge in nutty, sometimes syrupy, and sumptuously milky (and incidently #glutenfree )sweet #mitai !🍡☕️😋 I digress with my fondness for fudge-like, mouth coating, spirit lifting sweet treats!🙌🏼👅
Now, in order to balance out my afternoon of decadence, I decided, with little persuasion, that the pretty #savoycabbage staring at me in the fridge HAD to feature in tonight's evening meal, not as a supporting 'side' mind you, but as the star of the show! ✨Braised Savoy cabbage drenched in peppery #gravy makes the foundation of this #veggi#sausage#onepanmeal . Served with crispy, golden #yorkshirepuds , the kids devoured every last shred of cabbage, and mopped up the remaining gravy from their plates with buttered #bread , in what appeared to be 'quiet contentment' ! Tonight’s post run meal was a vegetarian chilli 🙌🏼 it was a taste sensation.
Ingredients: onion, garlic, tinned chopped tomatoes, red and yellow peppers, celery, carrot, sweetcorn, kidney beans, chickpeas, hot chilli powder, vegetable stock and red wine 😝! @lauranaylor and I lightly blended 1/4 of the ingredients to give it a thicker, chilli like texture. If you give this a go I would definitely recommend the red wine- it gives it a fuller flavour and gives it a darker colour 😏 I could definitely substitute this meal for an original beef chilli! I wanted to share with you a preview recipe that is on the Menu in the upcoming group Eat Clean, Get Lean and Keep Your Routine 🌮
We will be nutrition focused to help you get to your fitness goals. Remember! You can keep your current gym routine Or if you don't have one (that is okay too!) Taco Peppers
4 large bell peppers
3-4 cups taco filling (see below)
3/4 cup shredded cheese, extra as desired
3/4 cup chopped tomato
3/4 cup chopped lettuce
cilantro and lime, as a tasty edible garnish
FEISTY FILLING OPTIONS:
a. 1lb ground beef, chicken, or turkey – seasoned your favorite way and browned on the stove-top! I use a combination of enchilada sauce (homemade or store bought) and homemade taco seasoning to flavor mine, plus a little mexican hot sacue for a kick! You can also make your protein option in advance and keep in the fridge for 2-3 days or freezer for emergency taco night filling.
TASTY TOPPINGS (choose your favorites)
shredded cheddar or pepper jack cheese (Blue)
plain Greek yogurt
fresh or leftover grilled/roasted/sautéed veggies
fresh chopped avocado (blue)
pico de gallo
lime wedges, for a burst of citrus
Pre-heat oven to 400 degrees F. Choose your protein option(s) from the above list and cook via preferred method.
Slice each bell pepper in half. Hollow out each pepper, removing stem, seeds, etc…
Lay peppers on a baking sheet and cook for 8-10 minutes until al-tente or for 10-15 minutes for softer peppers.
Fill each pepper to the brim with your taco filling of choice and top with cheese.
Bake for an additional 10 minutes, then pile mile-high with all your favorite taco toppings! Anything goes on taco night!

I’m a pretty lazy cat in the kitchen so I loved this @lazycatkitchen pasta recipe this week! I roasted the other half of baes butternut pumpkin, sautéed garlic, added bulk organic penne from @valeriespantry, blended through heaps of packaging free spinach and a very generous squeeze of lemon, topped with walnut and lots of salt and pepper. This meal is proof to me that incredibly tasty food needn’t have lots of preparation nor ingredients ✌🏼
