Lentil 💛
Masoor ki dal with Rocket {Argula}. Recipe below

The recipe is a take on a simple 'Bhune masale wali masoor ki dal' from my childhood. It uses simple basic pantry ingredients, and gets a good dose of rocket too. You could always use spinach if you like, but I love the peppery goodness rocket adds. A generous squeeze of lime, a drizzle of ghee makes this bowl scraping good!

Ingredients:
1 1/2 cup masoor chilka, soaked for an hour
1 1/2 tbsp ghee/clarified butter
Pinch hing/aesofitida
2 small onions, chopped
1 tsp garlic paste
1 tsp ginger paste
1/4 tsp haldi/turmeric powder
1 tsp dhania/coriander powder
2 small tomatoes chopped
2 green chillies chopped
Salt to taste
1 1/2 – 2 cups rocket greens {or baby mustard greens, spinach etc}, chopped
1/2 cup Greek yogurt, whisked
1 tsp ghee
Juice of a lime

Method:
Heat oil in pressure cooker. Add hing, then chopped onions. Fry onions until golden brown.
Add ginger garlic pastes and green chilies. Sauté for 2 minutes, then add dry masalas, sauté for 30 seconds.
Add chopped tomatoes and sauté for 5-7 minutes over high heat until they release oil.
Now add the greens and sauté for 2 minutes until wilted. Add the soaked dal with water, add salt to taste and cook under pressure until done, for 12-15 minutes.
Let it sit as is for at least 15-20 minutes cooking in its own steam. Open and check if dal is soft, else cook under pressure for another 5-7 minutes. Mash some dal with the back f a spoon to give the dal a creamy consistency.
Stir through whisked yogurt and simmer for 5 minutes.
Taste and adjust seasoning. If you like a tangy dal, squeeze in half a lime before serving.
Top with a spoon of ghee and serve over hot rice, or with chapatis, parathas etc.

Healthy lunch post workout consisted of a salad bursting with clean nutrients that are going to keep me energized for the rest of my work day. 
I baked chicken breasts on Sunday with just garlic, sea salt and black pepper, then cut into cubes to make easy meals for the rest of the week. 
The salad consists of spinach, tricolor carrots, cucumber, pomegranate seeds, avocado, pumpkin seed and pecans. 
Dressing: equal parts olive oil and red wine vinegar and a pinch of sea salt and pepper. 
Staying motivated in these days leading up to the holidays getting my workouts and healthy meals in!

Whole Wheat Dark Chocolate Chip Zucchini Muffins 😍 I made these last weekend and ended up munching on them throughout the week either as a quick morning breakfast, afternoon snack, or dessert. At first I thought they seemed a little undercooked but then realized they were actually perfect and stayed moist all throughout the week. And if you wanna go nuts....cut it in half, lightly toast, and put a very thin sliver of butter in between...yup that happened. I used vegan chocolate chips and vegan butter when that incidence occurred but these did have egg in them 🥧

Take humble BAKED BEANS. Serving these on a beautiful slice of wholegrain toast with a simple salad could be an easy and totally nutritious meal... NO FUSS! 
Some of my other favourites include: ✅ Roast chicken and salad on a wholegrain wrap
✅ Poached eggs on toast + avocado, spinach and tomato ( Did you know you can poach an egg in the microwave in a mug of water in < 1 min? Don’t forget to pierce the yolk!) ✅ Chickpea & Lentil Salad + red onion, grated carrot, chopped cucumber and spinach . 1 cup lite coconut cream
2tsp red curry 🍛 paste
1 tsp curry 🍛 powder
1tsp seasoning salt
1/2tsp coriander
1/2tsp cayanne 🌶pepper
1tsp salt for bell peppers
1tbs olive or coconut 🌴 oil

📍Add 1/2 tbs oil to skillet and heat
📍Chop bell peppers and green onions, then add to heated skillet. Cook until tender- approx 8mins
📍Add 1/2 Tbs oil to separate pan and heat.
📍Add shrimp to this pan and cook until pink.
📍Add coconut milk, red curry paste, curry, seasoning salt, coriander and cayanne pepper
📍Bring to a boil. Add in pepper mixture and allow to simmer for 10mins
📍Serve over 🍚rice or wrap in 🥗 lettuce!

Here is my finished chicken iskender. I just cooked my marinated chicken (check my previous post) and some diced onion in tinned toms, chilli sauce and Harrisa, you can make it as spicy as you like🌶🌶🌶! Then I served it on top cubes of toasted pitta, they soak up the sauce and go all soggy and delicious! .

Brussels Sprouts Curry! Healthy recipe before all that holiday eating. Easy for a weeknight. Here is the recipe:
7 cups chopped brussels sprouts (1.25 pounds)Chopped in strands similar to cabbage
1 large potato chopped in med size pieces
1 tsp Mustard seeds
2 tsp Jeera seeds
1/2 tsp Turmeric
1 1/2 tblsp Coriander
3 garlic cloves
1 tsp ginger
1/8 tsp red chile
Asafoetida
Salt to taste
2 tblsp oil

1. add oil and three pinches of asafoetida, all the mustard seeds and jeera seeds to pan, turn on med heat
2. Once seeds start popping, add potatoes and stir
3. Lower heat to low-med, cover
4. Check every few min and stir
5. Once potatoes are breakable with stirring spoon, add brussels sprouts, garlic and ginger
6. Stir well, put heat on med to high and keep stirring for a few min
7. Lower heat to low, add all spices and salt. Stir and cover.
8. After ten min, stir and cover again
9. After ten min, stir and cover again

At this point, if you do not want the brussels sprouts overcooked, serve. If you want them a bit softer, cover for five more min
