Soft boiled eggs, roasted garlic broccolini & mushrooms with spiced mixed quinoa. I get my grocery shop delivered once a week and walk to the local fruit & veg shop for all my fresh ingredients so Tuesday & Wednesday I often do meatless meals that also work for lunches.
I was roasting some chilies & capsicum for preserving relish so added some extra garlic in as well because it's so much sweeter when roasted.
Sorry I think my photography is getting worse!!...promise to try and up my game!...but I can tell you this was quick, easy and tasty! This was my dins as kids had swimming tonight...(are you bored of me telling you that every week!?!? 😂) Anyway yes cooking for one tonight so here’s what I had!
I popped some veg into the oven while I was putting the kids to bed and the rest took 5 mins! So for the veg I roasted half an aubergine and half a courgette I had lying around in the fridge, mushrooms and carrots then I quickly fried off some chicken mini fillets, added some @merchantgourmet puy lentils, stirred through half a can of tinned tomatoes and added a big dollop of pesto, garlic and seasoned! Threw in some spinach and then grated some parmesan over the top..and that was it! Took no time at all yet felt comforting, filling and healthy! 👍🏼 Usually when hubby is away and I haven’t eaten with the kids I would probably just reach for a bowl of granola! I love breakfast for dinner!? Anyone else?? 🙋🏻♀️ but I fancied something warm tonight! So yeah that was my dins! 😋 Easy, no fuss!

This is what we've been eating this week. I've decided to post at the end of the week as normally things don't go exactly to plan... like this week just gone. Monday was fine, apart from Sam won't eat pasta so he had the veg, but he also refused to eat the meatballs! Tuesday we had an afternoon playdate and got back home late so Sam ended up having scrambled eggs and beans and Ben and I had the fish and chips . Wednesday to Sunday all went to plan. The omelette was a huge success with Sam and daddy's roast dinner this evening was delicious!! You hear things when you are ready to hear them. This week, after watching a YouTube video that the I have been forced into a spending freeze since Christmas thanks to my car. No, I really mean "Thank you." Why? Because this video inspired me to inventory my kitchen and realize, I have PLENTY in my pantry and freezer. Meals are finished for the next week, possibly 2. I know I’m going to sound cliché.. but man, did these first two weeks of 2018 flew by? Between picking up after Christmas, getting the house back to normal (which it’s a never ending project!) and getting adjusted to the back to school routine, I feel like I can never get caught up! The past two weeks being couped up in the house has us stir crazy.
Sun is out and we're gonna brave the cold, explore some parks and get these kids (and dogs) some exercise.
Loaded up on healthy snacks, my yummy shake and planning our meals for the week. So this brings up two questions...what do you with your kids during the cold months ? And what's on your menu?

Weekly Meal Planning.... I was waiting for the kids at youth group the other night and over heard other parents talking about dinners. They were talking about cooking, how much they ate out, and how if they just had someone to come up with the meal plans for them, they would cook more. That they wanted to cook more, it was just hard coming up with meals that were timely, everyone liked, etc.
I'll admit, that was once my least favorite part as well. I made the same things every week, got take out way too much, and generally hated having to come up with what I was going to make for dinner.
After I started meal planning it did become easier, but I still rotate the meals our whole family enjoys, sticking in the ones the kids like the most here and there and the ones Nathan likes the most here and there too.
The biggest thing for me is making sure I have time to actually cook what I plan!
I've decided I would share my meal plan for the coming week, and see how it went.

Well friends, it’s week 2 of using my @commit30 planner and I’m already off track due to a gnarly stomach bug😖🐜 I’ve missed some work outs and only had 2 pieces of toast, an egg, and a bowl of soup since Sunday BUT finally feeling better and hoping to get back on track tomorrow!💪🏼🙏🏼
I soo love weekly meal planning. I don’t have to scramble every day trying to come with something for dinner, I can go grocery shopping one time and get everything we need.. it definitely makes life easier!

Menu for the week! I’ve always loved planning my weekly menus, but it’s even more helpful now to know what I’ll be eating every night! I’ve mostly been sticking to our normal family favorites, just trying to make some substitutions to make them point friendly. Excited to try @thedailydoseofpepper ‘s street tacos as well as the #twoingredientdough !
I've finally go myself organised enough to try meal planning again. Every time I try something goes wrong and I end up wasting food. I think I tried to make it more complicated than it has to be. I try to vary up our meals too much instead of choosing meals we eat week after week.
Meal planning is a big part of me being organised this year so I'm taking it slowly this week to get it right. Already struggling because woolies was out of rice paper 😂 I did hamburgers and will swap the rolls in another night.

Meyve olarak da nar yedi kendisi. Biz salatamıza ekledik. ✍️Bu şekilde yemek planlaması yapmak hem zaman ve enerji kaybını hem de israfı önlüyor bence. Günde iki kez markete gitmeme, onca para harcamama rağmen buzdolabını açtığımda yiyecek birşey bulamadığım zamanlar oluyordu. Pişmediği, pişip yenmediği için çöpe giden ya da buzlukta aylarca bekleyen yiyeceklere ayrıca üzülüyordum. Hem bu sayede kurtulmayı umuyorum bugün ne yesek derdinden!
