#Chooseday for #Chorizo with stuff. Chicken breast fillets, sliced chorizo, chickpeas and cherry tomatoes (I am totally calling this alliteration week). Oven baked and served with long grain white rice. .
PS, I should have browned the chicken before baking, so they weren’t as pretty but were juicy and tender anyway!
It’s the start of a new week and I think I’ve finally accepted that I need to stop saying, “it’s a busy week ahead!” Because they are ALL busy these days! I think im finally getting the hang of these busy week menus with a nice combo of recipes, some requiring a little more work for those slower days and some coming together quick and easy for those “we have 30 minutes to eat dinner and get back out the door” nights.
