Hi friends! I haven't posted anything in the last 4 months. I wanted to let you know where I'm at with the weight loss. Well it hasn't been going so well. I just have zero motivation even though I have a wedding date that I have been counting down to. I just can't find the motivation I need to kick my ass into gear. I am at 187lbs right now. Over the last few weeks I have slowly but surely been losing some weight by eating a very low carb diet. It has helped to at least shed some weight before the wedding which is in 3 weeks!!! Unfortunately I think my biggest issue is my Fiancé. He eats like crap so I have started to eat like crap. I was 140lbs when I met him and had just run a half marathon. I don't know how to stay motivated when he won't cook and is always wanting to go out for food. We will have perfectly good food in the fridge and he won't eat it because he isn't craving it. He is an extremely picky eater. I end up just going along with whatever he wants to do for food. He also doesn't exercise so it makes me less motivated to exercise. I am going to try my hardest to get back on track. If you are still listening to me rant. I need some advice on how to stay on track when the partner in your life is not. Thanks for listening. Oh hello produce, so fresh, so fine, so utterly delectable 😍 I made up this dish as I went along, and I must say, a crispy kale base with spiced chickpeas and sauteed zucchini didn't let me down.
I sauteed the kale in olive oil and fresh garlic, letting the pan start very hot to get that crispy slightly burnt texture.
The chickpeas were in olive oil and turmeric, paprika, nutmeg, salt, and pepper.
The zucchini with onion.
And fresh roasted carrots for the win! These bad boys were very slowly cooked in a pan and sprinkled with nutmeg. Divine.
