Orange Chicken Meatballs - Makes 4 servings⠀
1 tablespoon toasted sesame oil⠀
¼ cup shredded carrots (roughly chopped)⠀
¼ cup finely chopped green beans⠀
¼ cup shredded cabbage (roughly chopped)⠀
1 pound ground chicken⠀
1/4 cup almond meal⠀
1 tablespoon coconut flour⠀
2 teaspoons garlic powder⠀
1 teaspoon ground ginger⠀
1 teaspoons salt⠀
1/2 teaspoon pepper⠀
1 cup orange juice⠀
¼ cup apple cider vinegar⠀
½ cup coconut aminos⠀
1/2 teaspoon garlic powder⠀
½ teaspoon ground ginger⠀
1 pitted date, soaked in hot water to soften⠀
2 teaspoons arrowroot powder + 2 tablespoons cold water (combined)⠀ ⠀
PREHEAT oven to 400 degrees. ⠀
PLACE a small skillet over medium high heat and add in sesame oil. ⠀
ADD in carrots, green beans and cabbage and cook down just until softened, about 3 minutes. REMOVE from heat and set aside.⠀
IN a medium bowl combine ground chicken, egg, almond meal, coconut flour, garlic powder, ground ginger, salt and pepper. ⠀
THEN add in the veggie mixture and stir until combined.⠀
LINE a baking sheet with parchment paper and scoop chicken into balls on the pan. ⠀
USE a cookie or ice cream scoop to do this as the mixture will be too moist to roll in your hands. (It makes 12 balls)⠀
BAKE for about 18 minutes or until cooked through.⠀
WHILE meatballs are in the oven, combine orange juice, apple cider vinegar, coconut aminos, garlic powder, ground ginger and the date in a blender and blend on high until the date breaks down.⠀
POWDER the sauce mixture into a medium skillet over medium high heat and bring to a boil.⠀
ONCE it is boiling, add in arrowroot & water mixture while whisking vigorously to combine. This will thicken the sauce. Lower the heat.⠀
ONCE meatballs are done, transfer them from the baking sheet to the pan and coat them with the sauce.

These healthy Halloween party snacks are great for getting them involved in the kitchen! Simply start with 2 thick slices of apples and spread a nice helping of protein-packed peanut butter on one of them. Then, add the teeth, you can use white chocolate covered nuts, yogurt covered raisins or nuts, for this. Finally, spread the second apple slice with peanut butter, and place on top of the first slice and viola, you’ve got a scary good monster mouth that is as healthy as it is delicious!

Bring the flavor of your favorite Mexican restaurant home with this recipe for moist and juicy Slow Cooker Chicken Tacos. ⠀

Servings 4 Servings (2 tacos each)⠀
1 cup low-sodium organic chicken broth⠀
4 cloves garlic finely chopped⠀
2 medium jalapeño peppers seeded and deveined, chopped (optional)⠀
2 Tbsp. chili powder⠀
2 Tbsp. ground cumin⠀
2 tsp. ground smoked paprika⠀
½ tsp. sea salt or Himalayan salt⠀
2 bay leaves⠀
1 lb. raw chicken breast boneless, skinless⠀
8 (6-inch) corn tortillas warm⠀
1 cup pico de gallo or fresh tomato salsa⠀
1 medium ripe avocado sliced⠀
1 medium lime cut into 4 wedges⠀
¼ cup finely chopped fresh cilantro⠀
Place chicken broth, garlic, jalapeños (if desired), chili powder, cumin, paprika, salt, bay leaves, and chicken in a 3-quart slow cooker; mix well and cover. Cook on high for 2½ to 3 hours (or on low for 4 to 5 hours), or until chicken is tender.⠀
Transfer chicken to a cutting board and shred with 2 forks. ⠀
Evenly divide chicken between 8 tortillas. Top evenly with pico de gallo, avocado, lime juice, and cilantro; serve immediately. ⠀
