Instructions: 1. Cream sugar and butter in medium mixing bowl. Add egg, beating afterward. Add vanilla and bananas and combine well. 2. Combine baking soda, flour and baking powder. Add to the creamed mixture with the milk. 3. Transfer mixture to greased 8” square baking pan. 4. Bake for 30 to 35 minutes at 350F. Cool on wire rack. 5. To make the frosting, beat vanilla, peanut butter and milk in mixing bowl. Beat in the powdered sugar until mixture is smooth. Spread frosting on cake. Serve.

If you do use golden beets, rather than red beets, they don’t bleed when they are cooked. Instructions: 1. Combine the onions, tomatoes and green pepper in blender. Puree them. Pour 1/2 of puree out into bowl and set aside. 2. Add bell peppers to blender puree. Pulse until they are smooth. Add to set aside mixture. Combine by stirring. 3. Heat veg. oil in medium pot on med. heat. Add the blended veggies. Add thyme, ginger, bay leaves, onion powder, chili pepper, curry powder and salt. Bring to boil. 4. Stir in rice and mix well. Reduce heat. 5. Cover pot. Allow to cook until the rice is al dente. Let the rice at pot bottom to become charred, to give it smoky flavor. Serve.
