I just wanted something different so I made #westafricancuisine black rice, cow belly, cow feet, fresh bean leaves, 20 red crashed habanero papers🤧🤧🤧, dried fish powder, shrimp cubes etc. My best attempt yet. This was soooo spicy but omg, it was delicious mudimu!

Today the BBC published an article entitled, "Nigeria's growing taste for haute cuisine", https://goo.gl/fnQAwL. I just wanna say I've been watching this trend for the past 5 years or so and I'm happy to see this taking place.
West Africa, in general, has spectacular cuisine but Nigerian, in particular, is special with some fantastic chefs who've been trained locally and abroad. I applaud all of the culinary trailblazers in Lagos and Abuja who are bringing much-needed attention to what Nigeria has to offer to global cuisine.
To all my fellow chefs, epicureans and culinarians in Nigeria, I'm planning to represent what we do in a restaurant opening in Washington, DC in 2018. Stay tuned and big up to all of you.
