Ever thought about this statement? Heck most adults I know can't tell you what happens to these farm animals because we don't want to know. That in itself ought to tell us something too. You bet it's bad, more horrific than you can imagine and something that if any of us saw with our own two eyes would be something we would feel in our bones as inherently wrong. We all agree that cruelty to animals is wrong, yet when it comes to billions of them, we tend to turn a blind eye. These animals are individuals. They are here with us, not for us. They are emotional beings who feel pain, fear and want to live much like our dog or cat and deserve to live a life free from torture. Take a closer look and challenge the beliefs you were brought up with as the norm. Take a look at some the footage of industrialized farms. If the treatment of these animals is appalling to you or if you wouldn't do this to your dog or cat, then take action with your fork and glass. Put less animal flesh on the end of it and less cow's milk and cheese in your glass or plate. Side with compassion and eat more plants. Vote with your dollars. Reduce the amount of animal products you eat, thus reducing the demand for 300 animals lives to be killed every second, simply for the pleasure of our palate. Need ideas? I didn't add any seasoning (apart from a little low-sodium salt) to this meal and it was sooo satisfying 🙌🏼 love how much my taste buds have adapted to crave plant foods in their purest form.

Ok, this is ridiculously creamy and delicious... I only had only 4 ingredients on hand, too tired to go to the store after work... 7 Minute Italian Lentil Bowl:
Saute 1 diced onion and 3 chopped mushrooms, 2-3 minutes over high heat. No oil needed
Add 1/4 teaspoon each: dried oregano, thyme, basil, red chili flake
Cook 1 minute.
Add 1 cup of water, 1 diced tomatoes, 1 minced clove garlic, 1 cup frozen spinach.
Drain and rinse 1 can of lentils and add to pan.
Finish with 2 tbsp nutritional yeast. Season with salt and pepper.
Dinner is done

So thankful there is yet another informative documentary coming out. 🎬 With the democratization of information we are finally able to get past misleading industry funded information and get to the truth as to why obesity, cancer, and heart disease rates are sky rocketing out of control.  It's the food.  It's always been the food. 🌟Domestic Abuse Awareness Month! 
Domestic abuse happens in relationships more than many of us are aware of. I have never liked to be seen as a victim my ENTIRE life because my father raised me tough in Brooklyn, NYC and I'm an empowered Puerto Rican woman!
But just this past week I had a break down because I now accept the fact that I did fall victim for a few years to domestic abuse. Having a child in the mix makes things that much more painful, confusing and difficult.

Anyway, I wanted to share some of the very FEW warning signs that I wish I would have known were red flags in my previous relationship. Of course we want to always empathize but emotional, verbal, physical and mental abuse is NOT just an anger issue- it's a thoughts/belief system issue! These people will not acknowledge their wrong doing and will continue to be abusive. 
I highly recommend reading "Why does he do that?" And getting in contact with a Domestic Abuse advocate if you feel you might be in an abusive relationship. It's not something that is so BLATANTLY obvious sometimes. 
It takes strength to really face what is going on. Let's end these vicious cycles of abuse and begin holding one another accountable for or actions! 🌟

Pesto with sundries tomatoes :). For the pesto: blend a bunch of basil (~1-2 c packed), a couple leaves of kale (~3/4-1 c packed), 1 c pine nuts, juice of 1 lemon, 2 cloves of garlic, 1.5 tbs nutritional yeast, and salt/pepper to taste in food processor. Add to pasta and enjoy! .

Getting ready to have some serious fun today with a group of local elementary public school kids as I embark upon a new, monthly food literacy education program with the @foodbanksbc for their Kids Farmers Market Program.

As a volunteer food literacy educator I am so stoked to have this opportunity to work with kids at this level in hopes of inspiring them to make better food choices, create healthy snacks for themselves at home, learn about seasonal food cycles and the amazing work that farmers do, to understand that the best foods available to us are whole foods that don’t come with packaging and other ingredients, that nutrient rich foods are available everywhere and can prevent most lifestyle related illness and perhaps most importantly that playing with your food is seriously fun!!!

My body is like jelly after Tuesday's "run" and a yoga class to top it all off 😅 My hip muscles were so stiff and now it feels like the hips are not even connected to the body 😂 But I think the increased exercise and the sleep routine are really helping with keeping the autumn blues to a minimum. So for those of you wondering, I had Jamine rice cooked in 1 tbs of Thai green curry like stock, topped with sesame seeds and nori seaweed, surrounded by veg and tofu stir-fry, where I used garlic, lemongrass paste and soy sauce, plus a little splash of sesame oil at the end. Very easy and yum.

These are the collard green wraps I've been enjoying everyday for lunch, and boy are they gooooooood 🤤I made a #whole30 version of my favorite Ethiopian lentil salad, subbing in soaked sunflower seeds for the lentils. SUPER EASY go-to tostadas for lunch today. This lifestyle is truly attainable friends. Eating nutrient-dense plant strong meals doesn't have to be complicated. This started as 3 corn tortillas, a can of organic black beans, an avocado, some salad greens, and salsa. And 15ish minutes later I have a nutritious lunch. Could've been even less if I had made the tostada shells and beans ahead of time! I love cooking big batches of dry beans but I highly recommend having emergency canned beans in your pantry when you have busy and exhausting days. They are lifesavers! I slightly drained the beans and warmed on the stove while mashing with a potato masher. I eyeball seasoned with salt/cumin/chili powder. While the beans were cooking I cooked the corn tortillas on a baking sheet for 17 minutes in the oven at 350°F. They come out perfectly crispy. Then take the shells and build your tostadas. I added power greens, avocado and salsa. They were simple and delicious!
