Tom and I attended a fun hands on class at Zest restaurant last night. We learned how to make veggie wraps using rice wraps. Angelique demonstrated how to assemble the wrap and we got to make our own. I've made Vietnamese spring rolls but I learned some good tips last night that make it easier and prettier! You can buy white or brown rice spring roll wraps at Asian markets or Whole Foods. Use room temperature water to dip them in briefly and then place them on a cutting board. As you are filling the wrap it softens and by the time you are ready to roll it up it's soft but not too soft. Don't over fill it because then it will tear. Sprinkle the center of the wrap with toasted sesame seeds or sunflower seeds these look so pretty when the wrap is finished. Next it's all about the layers, place fresh basil, mint or cilantro, leaf lettuce - make sure you break the spine off and tuck it inside the soft part of the lettuce, a spread or hummus on top of the lettuce acts like glue for the next layer of fresh thinly sliced veggies like, red onion, red bell pepper, mushrooms, jalapeño peppers, zucchini, carrots, cucumbers, quinoa, Chana beans. You could add thin slices of mango too. Roll up like an enchilada or burrito and enjoy! Best start to my day, every single day. When we're traveling, we manage to eat loads of greens, but can't get our smoothies in. It makes a big difference. Here's 2 c spinach, 1 c parsley, cucumber, celery (normally use celery leaves too but we're fresh out), frozen berries, 1 banana, and 600 ml water. I look back and think wow. I've been the poster child of consumerism for most of my adult life. My thoughts and behaviours have been influenced by factors outside of myself, that have little to no meaning when you actually deconstruct them. I am. Simply. As is. Nothing I acquire is a true representation of my who. That's just fabricated and actually quite painful because it's a never-ending quest for more. For perfection. And it's clouded who I truly am.

Learning about minimalism and doing #thepantrychallenge is truly helpful. It's forcing me to see that YES! I am enough. Without the glam and the sparkles. I don't need to meet my friends in upscale restaurants to enjoy a nice moment with them. I don't need to prepare elaborate recipes to please. I can just be. My bare self. ME! I can show up at my friend @pazcale357's house with a mish mash of random eats, blend that with her bounty, and spend time creating something together. With no fluff. Just pure appreciation of the moment. And it's so LIBERATING! I'm so grateful I've come to realize these things while Isaak is still young and I can transmit those values to him. The last thing I want is to raise someone who never feels like he's enough. Who never feels like he has enough. Going back to the basics is the most soothing thing we could have done!

Brunch Box 🌻 For my third installment of #plantbasedkidslunch collab with @intentionalism @marypardoux and @veganfoodforoskar I've packed a few make-ahead breakfast favorites. Breakfast for lunch can never be a bad thing, especially when it includes gluten free oat waffle sticks with "caramel dip" (almond butter, maple syrup, and a splash of almond milk), roasted sweet and red potatoes, homemade vegan bean and hempseed sausage patties, and a juicy red plum. The waffles are based on a recipe from the blog, and the "sausage" patties are adapted from a recipe from @vegetariantimesmag. Everything was made ahead of time, making this essentially a lunch of leftovers, which I love! Also, it's all finger foods, which my daughter loves. What's in your lunch box? Happy FriYay! 😁Thought this star quote was appropriate for this blueberry smoothie bowl featuring some star fruit. We generally buy it once in a while because it is expensive, but when we do we enjoy it very much for its unique sweet and tart flavors. The blueberry smoothie is a mix of 3 frozen bananas with about 1 cup of frozen blueberries. Topped with oats, star fruit, frozen berries, seeds and tahini. With tropical fruit it only seems appropriate to eat it out of a beautiful coconut bowl right? 😜

Having dried #chickpeas on hand when making a dish like #pasta is super handy when you don't feel like opening an entire tin! Just toss a handful of dried chickpeas in the pasta cooking water. To make dried chickpeas, place in the #dehydrator for 12h at 57C (135F). Having dried #chickpeas  on hand when making a dish like #pasta  is super handy when you don't feel like opening an entire tin! Just toss a handful of dried chickpeas in the pasta cooking water. To make dried chickpeas, place in the #dehydrator  for 12h at 57C (135F). Zucchini Muffins • My Plant Powered Kids ❤️ love helping to make muffins...I just had to distract them as I snuck in 6 cups of zucchini 😂 They are ❤️-ing them for breakfast right now - so delicious and moist! 😋

Here's my recipe - makes 24 muffins:

Wet ingredients:
6 cups shredded fresh zucchini (I didn't peel them as I wanted the green to poke through)
2/3 cup melted coconut oil
1 cup maple syrup 
2 flax eggs
2 teaspoons vanilla
.
Dry ingredients:
3 cups oat flour
1/4 cup each flax seeds, chia seeds and hemp hearts (I literally put these in everything now!)
2 teaspoons cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking soda 
Pinch salt
1 cup each chopped walnuts and pecans (optional)

Using just a spoon or whisk, mix dry and wet ingredients in separate bowls, adding zucchini last.
Add dry to wet, then nuts (if using) and stir gently.
Bake in lined muffin trays for 20-25 minutes at 350. Remove from tray and let cool.

Happy Friday!! 🎉 If any of you are like me and get peckish between mealtimes, trail mix is a really fantastic healthy snack to have on hand. It’s super simple to throw together, doesn’t need to be refrigerated so is really easy to store/carry around, PLUS nuts and seeds are filled with healthy fats and nutrients making them an ideal snack 👌 Last week when I was away on camp I had a bag of this on me at all times, and it definitely helped fuel me through the week! I copied the ingredients I used ⬇️ (it's so easy I don't know if I can even call it a recipe 😂), but you can really just use any nuts, seeds, dried fruits or anything else you fancy. ~ Mix it all together in a bowl and enjoy! This ratio is a bit heavier on nuts and seeds, so feel free to add more dried fruit if you want even more sweetness in every handful 🤗

For breakfast a juice with apples, carrots, oranges and a lime ⚡️ watched a mind blowing documentary "the human experience" on chemicals... ( well I guess not really mind blowing since I always assumed how many chemicals we get in contact with/put on our body/ingest/inhale - but to see actual studies and how the government refuses to make a change really blows my mind 😡 ) definitely a must watch.
