These take me right back to my youth ( long long long ago.. ok not that long but still lol) I remember making these with my Mom and my Grandma. Of course when we made it "way" back then it was stuffed with hamburger and made with store bought white bread dough rolls from the freezer section lol. BUT I still have fond memories of them even right up and past when I got married. Its one of the things that my husband always says "we should make thoses" but we just never got around to make them ( ok thats not true mostly it was why put all that work into them when you could just buy something from the freezer section and pop it into the oven... no wonder we were sick and fat). ANYWAYS point being is that its a happy memory I have from growing up that I got to share today with my son as he helped me make them. Was nice to say "when I was your age we made these" and know that my version is so much better for him than the ones I grew up on. Perk? This was a food adventure for the kiddo and I. Before this I had only used soft tofu to make 1 salad dressing with and we used the rest up in a treat smoothie because I didn't know what to do with it ( nor did we really like it ). First lunch of the week brings a good old chopped salad with chickpeas to make it filling. Working hard this week to get more fresh veggies in. Obviously we are good at getting veggies in since that is our whole diet at some level lol but more on the cooked side than the raw side so a soup and salad week is a good exercise in making it a habit to work more fresh veggies in. We love the raw and fresh its just that its been the biggest learning curve for us even 19 months out to adjust to eating fresh veggies after so many years of cooking everything to death. What do you do when you have left over pizza dough? Duh BREADSTICKS! LOLOL - 
I had left over marinara sauce from the guys eating the leftover Lasagna rolls ups yesterday so I just used that for dip. The topping is nutritional yeast and cashews that I ground up in the Nutribullet. I then mixed in by hand a Dried Roasted Garlic seasoning mix I get from Sam's Club and took a wet brush ( just water ) and brushed it on the top of the dough to dampen it enough for the toppings to stick. β₯ Taco Pizza Time! -

Everyone voted we would have pizza today because I needed to use up some roasted sweet potatoes and black beans. So we did! Turned out yummy! 
Basically its just roasted sweet potatoes that I mixed with salsa and some cayenne pepper ( you can omit that ). Put a nice thick layer of that on your pizza dough and top with corn and black beans. Pop it into your oven at 350 for 25 to 30 minutes ish or until its as done as you like it. Then just top it with your favorite taco toppings and eat up! Easy peasy. 
Here is the info about the pizza dough we use. You can change up the proportions anyway you want but I like a 50/50 mix for my pizza dough. The more bread flour you use the fluffier it is. Think you have to give up eating burgers and fries when adopting a plant based diet? Think again!
Actually you don’t have to give up anything when you go vegan. You can still eat pizza, burgers, pasta, fries, ice cream, nachos, tacos, burritos, sandwiches, stir fries, soups, salads, and all the other foods you love. You just eat healthier, more compassionate, plant based versions.
Here I ate these delicious zucchini and onion burgers I made a few weeks ago with all the trimmings like lettuce, avo, tomato, pickles, catsup, mustard, mayo, and of course my baked potato wedges to go with. 
I love this food, I love this lifestyle, and I love how it makes me feel. No meat, no dairy, no fish, no eggs, no oil, and no animal products whatsoever. 
I never have to count calories, I never worry about macros like protein, fats, or carbs because all of the plant based foods I eat come preloaded with the perfect ratio of each automatically. 
I have more energy, I sleep less, I am trimmer now and weight less than in high school, I think clearer, and I feel more peace in my life knowing no animals had to die in order for me to survive and thrive.

SWEET GRAPES & CHERRIES: For a couple of my whole-food, plant-based, no-oil (WFPBNO) desserts while visiting my family in August, I had a bowl of delectably sweet grapes and cherries.

The main course? A veggie/bean burger sandwich with an Engine 2 Plant-Strong burger. That sandwich was on lightly toasted sprouted whole-grain no-salt-added bread (Alvarado Street Bakery), with some cashew cheese spread (Treeline Cheese); Baby spinach; as well as herbs and spices (no-salt-added).

With that sandwich I had some oven-roasted red potatoes (Earthbound Farm) no-oil, no-salt-added). They are the only pre-oven-roasted frozen ones that I have found with only potatoes... nothing else!! They are so convenient and delicious!

I also had one of my favorite veggie dishes... corn and baby spinach with scallions and no-salt-added herbs and spices.

The gravy is made by MamaSezz (@MamaSezz), and is actually their Hungarian Mushroom Soup, which they suggest can be used as a gravy. It sure can!! Scrumptiously so, I might add.

That gravy/soup included: Organic Mushrooms; Organic Onion; Organic Potato; Organic Cashews; Organic SoyΒ Milk; Organic Vegetable Broth; Organic Lemon Juice; Organic Apple Cider Vinegar; Sea Salt; and Spices.

This particular MamaSezz dish is definitely not low fat (cashews). They have a number of dishes that are, however.

Delicious and very satisfying meal!!

SIMPLY SWEET BLUES & GREENS OATMEAL & MORE: For one of my whole-food, plant-based, no-oil (WFPBNO) breakfasts in August, I had a delicious bowl of Simply Sweet Blues and Greens Oatmeal and More, which included: pre-batch-cooked Farro, Kamut, and Wheat Berries with Oatmeal; more Oatmeal; Blueberries; Banana slices; Flaxseed meal; Cinnamon; and Water.

And the greens, of course... this time baby spinach.

Delicious and very satisfying meal!!

NOTE: I wanted a bowl of cooked oatmeal. I stirred together the pre-batch-cooked grains, oatmeal, flaxseed meal, cinnamon mixture, added in some of the banana slices, then poured in water, stirred it all together, and let that soak for a bit. I then cooked it.

Right after the oatmeal finished cooking, I stirred in the greens. Those were followed by the blueberries. And then I topped it with more banana slices, etc.

Dinner tonight: Sweet Potato & Red Lentil Thai Peanut Curry with Tofu, served over Millet & Brown Rice Ramen (@lotusfoods).
β€’ 4 small sweet potatoes, diced small β€’ 1 cup red lentils β€’ 4 cups low-sodium vegetable broth β€’ 1 red onion, diced β€’ 4 oz Thai red curry paste β€’ 1/2 cup coconut milk β€’ 1/4 cup powdered peanut butter (@bellplantation PB2)
β€’ In a sautΓ©e pan, sautee the onion in a few Tbsp veggie broth β€’ Add the sweet potatoes and 1 more cup of veggie broth, bring to a simmer and cover for 5 minutes β€’ Add the lentils and 2 more cups of veggie broth, bring to a simmer and cover for 10 more minutes β€’ Add the red curry paste, the rest of the broth, coconut milk and PB2, simmer for 5 more minutes or until the sweet potatoes and lentils are soft β€’ Serve over Millet & Brown Rice Ramen cooked as instructed on the package (4 minute cooking time). Red Lentil Bolognese. One of my all time favorite #mealmentor recipes. Simple, full of vegetables, just a damn good red sauce! Topped with @violifeamerica parmesano I got from @districtatmills. You gotta go check out their alternative cheese and meats if you haven't already. They got some pretty awesome stuff going on over there! I decided last minute to make a double batch of this sauce. It took me the exact same amount of time to make, and now I have an extra meal in my freezer for a busy day in the future. Simple things like this make life easier. #plantbased life doesn't have to be difficult, time consuming, or expensive. #carbsarelife
