Today's dinner was a modified version of the Peanut Greens and tofu recipe from the #plantpurekitchen cookbook (my latest splurge) with just kale and broccoli as the veggies, and a pearled barley base.  I loved how the textures worked together, the ease of the recipe, and above all - the taste! Mixed greens with leftover farro + red kidney beans + carrot + red cabbage + sweet cherry tomatoes + radish + cucumber + dried tart cherries + hemp seeds + candied pecans.

Ranch Dressing:

• 1/2 cup raw cashews (soaked and drained)
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp apple cider vinegar
• 1 tap dried parsley
• 1 tsp dried basil
• 1/2 tsp dried dill
• 1/2 tsp red pepper flakes
• 1 date
• 1/4 cup water

Blend all ingredients until smooth and creamy. Add more water if a thinner dressing is preferred.

Nature's candy.🍊These oranges are so sweet and juicy! I love to make simple fruit like this a meal during the summer...or juice them for an amazing high dose of nutrients. Nothing better! I know you have been noticing me eating tons of watery fruits and salads lately...it's just what I have been craving these days...but if you are starting out on a plantbased diet, you do not have to be eating this way. Of course, you can if you want to because it makes you feel amazing...but it is fine to have oats, beans/brown rice, cooked veggies, brown rice or whole grain pastas, bean chilis, baked potatoes, and sweet potatoes. You need to fill satiated because at first when you give up meat and dairy, you long for that full feeling. A huge salad with beans and some healthy fats are a great choice, but so are beans, brown rice, and sweet potatoes. Eating a mostly raw diet is just one way to do plantbased. Find what works for you as long as it is health promoting. So, my recommendation for optimal health is 100% plantbased, no oils at all, lots of fruits and veggies(with green vegetables being a priority) and starchy vegetables, a small amount of healthy whole food fats like avocado or nuts/seeds...and some grains and legumes if want.  Dairy is one of the most unhealthy foods out there for humans and is linked to many cancers, skin disorders, and digestion issues...and all meat including fish is linked to shorter life spans and chronic diseases. Saturated fat and cholesterol from animal foods is what causes high cholesterol, high blood pressure, strokes, cancer, dementia, type 2 diabetes, etc. Cows milk is designed for a BABY COW, not an adult human. We are the only species on earth that drinks milk for a different species. No wonder it causes so many issues...think about all the hormones from a nursing cow that goes into dairy...that is not even including the hormones they are injected with. Dairy is also the most cruel of all animal agriculture...they literally have no life and their babies are taken away from them after birth each time. They are forced to become pregnant. It's terrible. I will not support that kind of cruelty. I really hope you don't either.💚

Made an impromptu dressing for my salad yesterday - calling it TANGY MUSTARD DRESSING. 🥒🥕🍅🥗I used some of my CASHEW SOUR CREAM (recipe found in previous post under my "chili 'cheese' fries" pic 😉). It turned out yummy ... kind of tastes like a honey mustard dressing. 👏👍 It would be good for dipping oven-baked fries (sweet 🍠OR regular 🥔potatoes) too! 🤗 Mmmm ... have you tried my CASHEW SOUR CREAM, yet?? It's SO versatile. I also used it to dress a whole grain & veggie pasta salad last week! I'll post pics, soon. If you have nut allergies, try it out with tofu, instead of cashews, and let me know how it turns out!? What an afternoon! My rockstar co-workers came over for a #wholefoodplantbased cooking class and we made some fantastic, healthy #vegandishes.

Tahini Dill Sweet Potatoes with chickpeas, spinach and a tomato-parsley salad (Great Job, Jodi and Karen!) Ugaso made a romanescu beet noodles dish with #hemp seeds and toasted #hazelnuts. 
Asia killed it with her sweet potato bao buns with #peaches and #kimchee.

And I finished the night with a sweet potato #quinoa salad with #cranberries and #pomegranate. 
Dessert was a vegan chocolate cake with fresh berries.

Chop into florets and toss with a mixture of:

✏️ 1/4 c corn starch
✏️ 1/4 c bread crumbs
✏️ 1/4 c water
✏️ 1 tbsp tamari
✏️ 1/4 tsp cayenne
✏️ 1 tsp toasted sesame seeds, chopped
✏️ 2 tsp aquafaba (optional)

Roast in oven until tender and then broil until crispy.

Kung Pao Sauce:

Prepare:

✏️ 3 tbsp chopped raw cashews
✏️ 3 cloves of garlic, minced
✏️ 1 inch ginger, minced
✏️ 1/4 c red bell pepper, finely diced

Mix together...
.
✏️ 3 tbsp tamari
✏️ 1.5 tbsp rice vinegar
✏️ 1 tbsp Sambal Olek
✏️ 1 tbsp stevia
✏️ 1/2 cup water
✏️ 2 tsp cornstarch

Instructions:

Toast cashews over medium heat in a nonstick skillet until fragrant. Add garlic, ginger, and red bell pepper. Cook until tender and then add the sauce mixture. Continue to cook until the sauce bubbles and thickens.

Place the baked cauliflower in a serving bowl and drizzle the sauce over the florets. Enjoy! 😋
