Happy Monday to you ☺️👋🏻 A little lunch/dinner inspiration using some seasonal favorites for you here. Spaghetti squash (roasted whole, scoop out the seeds later!) topped with steamed romanesco, mixed lentils (brown, green, French), micro greens for something alive 🌱 and a drizzle of whatever your fave tahini sauce is at the moment (I spiked our usual lemon tahini with the zest of a tangerine, cayenne pepper, red chili flakes, tamari, and maple 👌🏻).

I’ve found the best way to store fresh herbs in the fridge!  When I went to @joelfuhrmanmd ’s Culinary Getaway back in May all the chefs said to store your herbs like fresh-cut flowers 🌺🌺🌺 you can leave them on your counter but I like to keep them in the fridge and I do cover the herbs with a plastic produce bag when I’m not taking a fridge pic for Instagram 😜. While green onions aren’t technically an herb I love storing them this way too because they keep growing right in the fridge 🙌🙌🙌 What are your favorite fridge storage hacks? I eat a salad like this almost twice daily.  It’s definitely not always this pretty (or so lovingly held by my hubby 😜). 💚💚💚 I’ve been thinking a lot about “gifts” lately with my hubby’s birthday tomorrow and, of course, Christmas on the way.  The gifts we give ourselves are just as important as the gifts we give others.  The trouble is realizing what really constitutes a gift.  For me, getting in those daily salads is the simplest gift I can give myself that has a ripple effect of goodness throughout my whole life—health, energy, emotional well-being. This vegan mushroom gravy is made with onions, garlic, button mushrooms, almond milk, corn starch, a touch of flour, herbs and vegan bouillon by @betterthanbouillon. I love their vegetable bouillon and roasted garlic bouillon, both of which are in this gravy.

Would you pay $15 for a burrito? I would and I did. But only for the Giant Vegan Burrito at Mountain West Burrito in Provo, Utah. 
This humongous burrito 🌯 is twice as big as a regular burrito because they use two huge tortillas to begin with. They then add black beans, rice, grilled veggies, vegan cheese, vegan sour cream, salsa, and lots of love. 
It’s always best to eat a massive burrito while being sedentary and watching your son play in a volleyball tournament where they beat @byuvolleyball alumni. They should have asked me to play!! Burritos are everywhere. Compassionate burritos are not so check out Mountain West Burrito!

I couldn't sleep last night. So, I got up at 3am to clean and then decided to make a big batch of soup. Now, it's 6:15am and I'm having breakfast.  I made an Italian soup with lots of onion, celery, carrots, tomato, zuchinni, spinach and orzo. Soup is so healthy and so easy to make without oil.

What a hot day today. Only 25 degrees but what a scorching sun! What better to cool down than a homemade naturally sweet boysenberry sorbet with caramelly frozen currants? Maybe an orange/currants sorbet. That will be my round 2 for later. Nalin is enjoying a mango sorbet. What a lovely evening by the beach!. I posted this earlier and I should have posted it with a WARNING sign "DANGER!!!" Since I've adopted a #wfpbno diet I have managed my #bingeeatingdisorder very successfully. When I eat this way I feel at my best, never deprived, always healthy, satisfied, full and happy. I need to keep my nuts in check , boxed cereal (even a wfpbno variety) and the occasional chocolate bar to a limited experience, but other than that I never binge. I bought these items for a Christmas party knowing full well that they were dangerous for me, but thought that I was in a healthy enough place in my life that it would not be a problem if I took them back to my home when they became leftovers. I was WRONG. Just like I know I cannot use drugs one more time, take a sip of alcohol one more time, I also know I cannot have processed food. "But it's mostly plants and vegan !" I said to myself. I can have a little bit. I can be "normal" I watched all my girlfriends last night have normal food experiences, why can't I??? So after I posted this picture i decided to eat a little bit ....but it became ...almost all of it. Which might be ok for someone who doesn't have the compulsion to throw up (bulimia) after over eating something not in line with their values and feeling intense shame with my loss of control around eating. Binge eating is about the food, because i am proof that binging can be limited when not eating highly addictive foods but also binge eating is a sign of anxiety , it's a symptom of something larger going on. Just like binge drinking and drug use. It's about those things but it's also about the other. I sat with my feelings to throw up and even rushed to the bathroom and raised the toilet seat....but I KNEW i didn't want to go down this path and that God loves me and that this is not what he wants for me. He doesn't want me to overeat or throw up or feel ashamed. I thought about phoning a friend or texting my therapist but finally realized that it's God I needed. It's Him I need to lean on in these times. He's always there and will always be what I need. I sat down with my stomach in my throat, so ready to purge away my shame. I have a prayer book I go to when I cannot ...

I eat a salad like this almost twice daily.  It’s definitely not always this pretty (or so lovingly held by my hubby 😜). 💚💚💚 I’ve been thinking a lot about “gifts” lately with my hubby’s birthday tomorrow and, of course, Christmas on the way. Pickled beets are a delicious, healthy, easy side and the greens contain potassium, iron, fiber, Vitamins C , B6, magnesium and yes . . . Protein! Just chop and eat raw on a sandwich or pile on soup, pasta, rice or potatoes and microwave covered two minutes. Pickle one bunch steamed beets in  1 cup apple cider vinegar and 4-6 tbsp low sodium tamari. 🤗

If you look at Anth’s posts, you can see the man is fit, he eats tons of delicious foods like pizza, pancakes, wraps, burgers, bowls, and falafel, and he still looks great. 
He was actually vegan in both of these pics but he changed his training and diet and got ripped. All on a compassionate, vegan diet. Plant proteins work!

He went vegan five years ago and after some research online made him aware of the cruelty involved in eating and wearing animals. “I had a sudden awakening to how bizarre it was that humans...showed affection to household pets but consumed other animals”, he says. “I realized I could not put my money into such a business that exploits, tortures, and kills innocent, beautiful beings.” Anthony plays drums and loves to travel. In addition to promoting vegan living on social media, he also wears apparel with a vegan message to the gym to show how fit and healthy people can be on a plant based diet.
