If you were to come to my house and eat this spaghetti meal that I prepared, you might say that there's no way it's vegan. In fact, it is! So dang good! This meal was 20sp. I still have 4sp left for today. Dessert will be in my future after my sunset walk! 😊☀️
My lunch for today. Plus I bought this oh so cute lunch box for my new job that starts on Wednesday! As most of you know I am now doing plant based weight watchers. My daily smart points are 39 which seems like a lot but I can do it! For the first time today I actually enjoyed grocery shopping, it didn't feel like a chore. I feel free and happy eating this way. Finally! Happiness! 😊
You are what you eat! Finding fun ways to serve our fruits and veggies! I'm feeling guilty about ordering pizza (hello, Monday 😒), so while my husband and the kids are picking it up, I'm arranging the fruits and veggies into fun faces for the kids 😜🌱💪🏻
Nature's candy.🍊These oranges are so sweet and juicy! I love to make simple fruit like this a meal during the summer...or juice them for an amazing high dose of nutrients. Nothing better! I know you have been noticing me eating tons of watery fruits and salads lately...it's just what I have been craving these days...but if you are starting out on a plantbased diet, you do not have to be eating this way. Of course, you can if you want to because it makes you feel amazing...but it is fine to have oats, beans/brown rice, cooked veggies, brown rice or whole grain pastas, bean chilis, baked potatoes, and sweet potatoes. You need to fill satiated because at first when you give up meat and dairy, you long for that full feeling. A huge salad with beans and some healthy fats are a great choice, but so are beans, brown rice, and sweet potatoes. Eating a mostly raw diet is just one way to do plantbased. Find what works for you as long as it is health promoting. So, my recommendation for optimal health is 100% plantbased, no oils at all, lots of fruits and veggies(with green vegetables being a priority) and starchy vegetables, a small amount of healthy whole food fats like avocado or nuts/seeds...and some grains and legumes if want. Dairy is one of the most unhealthy foods out there for humans and is linked to many cancers, skin disorders, and digestion issues...and all meat including fish is linked to shorter life spans and chronic diseases. Saturated fat and cholesterol from animal foods is what causes high cholesterol, high blood pressure, strokes, cancer, dementia, type 2 diabetes, etc. Cows milk is designed for a BABY COW, not an adult human. We are the only species on earth that drinks milk for a different species. No wonder it causes so many issues...think about all the hormones from a nursing cow that goes into dairy...that is not even including the hormones they are injected with. Dairy is also the most cruel of all animal agriculture...they literally have no life and their babies are taken away from them after birth each time. They are forced to become pregnant. It's terrible. I will not support that kind of cruelty. I really hope you don't either.💚
Last night's #Dinner brown rice slathered with "Matt's Sofritos" witl Mango-Lime Salsa both from @jane_esselstyn_rn and Ann's Prevent and Reverse Heart Disease Cookbook. Small purple potatoes with cranberry Salsa from the same cookbook and lots of diced veggies to throw on top of a 1/4 sweet potato. #wfpbno#ihadseconds#plantbaseddiet#plantstrong#plantbasedcle
Made an impromptu dressing for my salad yesterday - calling it TANGY MUSTARD DRESSING. 🥒🥕🍅🥗I used some of my CASHEW SOUR CREAM (recipe found in previous post under my "chili 'cheese' fries" pic 😉). It turned out yummy ... kind of tastes like a honey mustard dressing. 👏👍 It would be good for dipping oven-baked fries (sweet 🍠OR regular 🥔potatoes) too! 🤗 Mmmm ... have you tried my CASHEW SOUR CREAM, yet?? It's SO versatile. I also used it to dress a whole grain & veggie pasta salad last week! I'll post pics, soon. If you have nut allergies, try it out with tofu, instead of cashews, and let me know how it turns out!? Happy Monday. 😊 #dairyfree#oilfree#sugarfree#butflavorFULL _______________________________________________________ TANGY MUSTARD DRESSING 🥗2 Tbs vinegar • 2 Tbs mustard • 1 Tbs pure maple syrup or raw honey • 1 Tbs plant-based milk, unsweetened • 3-4 Tbs cashew sour cream. Place all ingredients in a bowl and whisk together until combined well. Refrigerate in an airtight container for several weeks. Perfect! Yum. 🍯
You know your mommy loves you when she makes you your favorite artichokes from childhood with parsley and garlic with some Zucchini Cheese Fritters on the side.
How cool is it to see others incorporate more compassionate foods into their lifestyle?
Compassion is cool!!
Yesterday I ended up with no time to eat or cook. 1/2 can no-salt Ro-Tel, 1 cup frozen brown rice, 1/2 can no salt pinto beans, large handfuls of kale, 1/2 cup low sodium vegetable broth. Microwave 4 minutes. It was hot, yum and fast! #wfpb#wfpbno#howdirtygirlsroll#sevendayrescue
