This was AMAZING!!!! lunch doesn't gave to be boring! Take yo salad and chop it up with garlic and a bit of olive oil, add it to some toasted loaf covered in hummus and add some balsamic if you're feeling extra fancy and viola lunch taken to the next level 😎
So, it was Happy Birthday for someone dear to me this last week, who was also vegan ~ this was a lunch for him as I was stuck at home with an injured fur-kid. .

The benefits of pre making food- had this done in 20 minutes. I have frozen flautas in my freezer so I reheated them in the oven. While that was going on I quickly chopped some garlic, onion, chili peppers and bell peppers and pan fried them with cumin and coriander. When I flipped the flautas I added a mixture of leftover tomato paste I had from yesterday that I thinned out with chopped tomatoes, olive oil and hot sauce. Sprinkled with vegan cheese and put back in oven. Added mixed greens to the frying veggies and a splash of lime juice, orange juice, and tajín. Put all together with a scoop each of salsa, guac and sour cream.
Cupcake on a coke can, cos I’m classy yet trashy. Bite me. Not the cupcake, that’s for me.☝🏻Look how pretty this cupcake is?? 😭😭😭 Such a good day at smithyyy, so hard choosing through the desserts. Everything was in my favourites!! Could never pass up a cupcake tho.🍰🌷 And yeah they have a brownie frappe, which has brownie chuncks in it. My incredible other half came home with a bag full of @superiorityburger tonight, including our first ever TFTs. I want to say it was worth the wait to finally try this monster, but I’m really just thinking about all the TFTs I’ve missed out on. Going to have to make up for lost time now. This was a very good sandwich.

This week I have some burrito bowls in my plan!! So simple!! Beans & seitan with brown rice and kale in a tahini sauce. I just sautéed the beans and seitan in cumin, garlic powder, and a little @flavorgod taco Tuesday seasoning and for the tahini sauce I just mixed 1t tahini with nutritional yeast and cumin with enough water to thin it out. Was totes going to add salsa but forgot! Whoops! It was soooo good but couldn’t finish it because I was watching a graphic scene from this week’s episode of shameless while I was eating and totally lost my appetite... anyone else know what scene I’m talking about??

I reinvented beef stroganoff this evening, turned out pretty well although the richness of the sauce was slightly lost due to the meat substitute having quite a strong flavour. Still very tasty though and next time I will make more of the creamy mushroom sauce with perhaps a tad more mustard. I used @frysfamily tender meaty strips instead of the beef and @tofuttibrands creamy tofutti (much prefer the garlic one, but unfortunately it was out of stock) and @oatly creamy oat fraiche to make the sauce nice and creamy! I swear vegan meat and dairy alternatives are getting better and better 😋🤤

1 x Wholemeal Wrap
Warmed the Jackfruit through in a pan, it also had kidney beans with it as well which is a bonus. 😍
Black Beans I cooked in cayenne pepper and then mixed the jackfruit into it.
Wholemeal wrap placed in pan for 1 minute so it warms through and gets a bit crispy.
