One of the best dinners I've had in months! Grilled cauliflower steak over a cauliflower mash with toasted capers and parsley chimichurri. Completely #vegetarian , #vegan , and #gfdf . I ate to my heart's content and felt amazing afterward--no bloated or full feeling, just completely satisfied. 😁 But I have to be honest--I didn't make it past the dessert. I shared a chocolate torte with peanut butter mouse and a plate of fresh baked chocolate chip cookies with sea salt and cinnamon ice cream. 😃 LOL...not gonna lie, it was effing amazing...so much so that I couldn't even wait to take a picture before digging in! 😆🤤😋 #cauliflowersteak#meatfree
Umm, this was the best Michigan salad I've ever had. Seriously. I ordered sans blue cheese to keep it GF/DF, and I didn't even miss it cause somehow it still had a creamy quality. Freezer meal for tonight's dinner: veggie patty from #traderjoes topped with shredded cheese, yellow onion, home grown tomatoes, and perfectly ripe avocado slices 👌🏼. On the side was Brussels sprouts that I sautéed with garlic and onion, along with sweet potato fries because I'd rather have those than a bun😎.

Made @crunchycreamysweet's beef stroganoff for dinner. So yummy! I used frozen thicker egg noodles and let the beef cook with the veggies for the 10 minute simmer, but other than that, I followed the recipe. Will definitely make this one again! 👌🏼
Browsing Pinterest tonight and this quote stuck out to me. One of the reasons I love @weightwatchers so much is the flexibility the plan offers. That being said it's also very easy to get comfortable and relaxed with the plan. We leave for vacation in exactly two weeks and I wanted to challenge myself to really focus these next two weeks so I made a few goals 👇🏻👇🏻👇🏻
-blue dot everyday for 2 weeks -close all 3 activity rings 10 of the next 14 days -100 oz of water everyday
-TRACK EVERYTHING .
We have friends coming in town this weekend so this is going to be a challenge trying to entertain and stay on plan 🤞🏻
My main reason for all of this? To feel better. To remove the fear that comes with being overweight. Fear of medical issues, missing out on events wirh friends, of entering stores other than kmart/target where I know I'll find clothes and fear of my body giving out. Im already so much more comfortable in my skin and so much happier.
