I can't believe how simple this soup was to make! Only three ingredients: one butternut squash, a tsp curry powder, and two cups veggie broth. Bake squash @ 425 F until fork tender, then blend with other ingredients and heat in a pan before serving. This would be a perfect side dish or appetizer for Thanksgiving! P.S. Today is one year since I went vegan, or as I like to call it, my veganniversary!!!

Why keeping couscous savoury?! Here is my first attempt at breakfast with belboula 😍 (barley couscous) and it was amazing!!! I use the quick method to cook it (by microwave- written on the pack) but add milk instead of water and a healthy amount of cinnamon powder🌺
You have to try it to believe it! !
