So we've been dining at some of our old favorites. Happy to report that the service has improved. Food was served quickly despite being fully-booked. Prices are still reasonable, save for the buttered clams! Sobrang konti na nya compared to when this place opened. Still good though. Actually food is still good all in all. No complaints. 👍

Enough chicharon to make a Keto diet devotee go weak at the knees. I never ever forget where we started from, one day, some 9 years ago, I said “so I wonder how hard it is to make good chicharon?” And I learned from an expert, posting my experience on my blog under “the chicharon chronicles”... we used an antique kawa that belonged to my grandmother... and we vowed to do it the old fashioned way, in small batches, slow-rendered, triple-cooked, over wood fires, with only salt and not MSG. Today, we still make it the same way, but as this photo shows, a morning batch towers some 4 feet high cooling to a crisp just before packing. We process over 6 tons of back fat every month!
