Today's family dinner was spaghetti Bolognese from my freezer supplies. The Smaller One likes all his food to be in separate sections of his plate. This was his pasta. He is happy to eat plain spaghetti but the Bigger One isn't usually the biggest fan of pasta. (She likes the meat sauce best and would happily just eat a bowl full of that). So, today I threw in a handful of peppa pig pasta into their whole-wheat spahetti and we played hunt Peppa. Worked a treat - she ate a lost more pasta than usual!
Went back to @friday.saturday.sunday on Wednesday and another bar too.. New fav hangout spot for me! This project is the last one my 2011 iMac will work on. Thanks for the processing, iMac! Onto the 2017 one! ... this year has been crazy expensive.. 😭
GROCERIES | Here is my grocery haul from today. Normally I would not purchase tetra packs.... 🙈 But I made an exception today for almond milk. I normally would make my own. However, we have been "camping" out in our home now for three weeks waiting for our furniture and belongings to arrive. And, for the most part the experience has been positive. You really do see how little is necessary in life. The only items I think we have truly missed are: our comfy beds - borrowed air mattresses are only fun for a night or two 🛌. Our couch - oh how I miss having somewhere soft to sit down! 😂 Our blender - we typically make a smoothie every morning for breakfast, this is how I have bipassed the "need" to buy juice and I make my own almond milk too. BUT, most of all I have missed all of my jars!!! Who would have thunk!? You know your a real Zero Waste nerd when your most prized possession is your jar collection 😉 haha! NERD ALERT! Grocery shopping, food prep, and storage has been a real challenge these past few weeks. I brought with us a picnic set for dishes, glassware and the cutting board, my grocery bags, produce bags, my abeego and a few containers and jars and a pot and pan. Not having all of my "tools" has led to a few undesirable purchases, but thankfully we received a message that our furniture arrives TOMORROW!!! I have never been so excited to see a messy kitchen that needs organizing 😝. On another note, I am not sure what's a good deal and what isn't where groceries are concerned, but this haul will last our family about 4 days and cost approx 110 Euros. There's everything from organic produce, bread, cookies, coffee, butter, steak, nut butter, juice and tomato sauce. We also bought two bags of spelt flour, pasta, museli, and we cannot forget Belgian Chocolate.... Oh the chocolate 🙏❤🐖. I am sure over time I'll figure out what is and isn't a good deal!
Cheats midweek roast dinner traybake
Chicken mini-fillets, sausages (halved), stuffing balls, parboiled potatoes (in the microwave), carrots and cauliflower. All traybaked in a little olive oil for around 30 mins. In hindsight I should have added the chicken fillets at a later stage as they were a little overdone, but it was an experiment and you live and learn!
Reposting this cause I can't get enough of it. My parents gave the copy of @saveurmag to our relatives. But what I didn't know till now was that they got everyone out in the village to party like it was 1999 over the photos and the article in Saveur. My mom took the story to show everyone who she knew was into cooking and food. Should have asked them to take photos of the party.
Thai curry for grown up dinner today. Poorly lit picture and the chicken is hiding underneath the veg! I used a ready made red curry paste (to taste - about 1.5 tbsp for us), one pack of diced chicken, 2x peppers and one pack of baby corn. Cooked those in a wok for a few minutes. Then added coconut milk, a little sugar (1tsp) and fish sauce (2tsp). I thickened the sauce with cornflour (2.5tbsp used to make a paste to stir in at the end of cooking). Very quick and easy. Served me and the Husband and made a freezer meal for us both another day too.
After a long 🌞 day at the beach and finding that the fridge veggie drawers are running on empty with only a few stray veggies.
What's on the menu.... takeaway or rustle up some rice noodles and make a veggie stir fry? After digging around in my freezer, I found some broccoli, corn kernels, in my fridge there was just under 500g of mushrooms, 1 red capsicum/pepper, I had some beans shoots, an onion and tamari.... dinner was ready in under 20mins! 😍
Toasted crumpet with cheese and ham (grilled to melt the cheese), apple slices and 2x dried apricots. The things in the top of the apricots are fun food picks - a green cat and an orange dog. Primi Recco Pasta for every one else but my daughter who for some reason or the other dislikes that particular Pasta Dish 🤔
So what to do.....what do I prepare for her????? Digging in my deep freezer I struck gold.....🙌

This Margherita Pizza from Pizza News is a favorite with my family.
Not only is it convenient to have for days like this, but it is so tasty.
A beautiful and slightly thick base that bakes to a perfect level of crispness using a pizza stone or baked directly on the rack of the oven- and don't worry about it oozing over melted cheese that may mess the oven, the base is thick enough to contain all that yummy gooey cheesylicious cheese... The Margherita is surprisingly very flavorful and so is the tandoori flavor that we've tried.

Today's post nursery snack - half a ham roll, cucumber flower shapes, fruit salad (orange, blueberry, strawberry, grape) and a treat - a mini goodies apple and orange oat bar.
Offering things repeatedly seems to be working with our fussy eater. Until recently he wouldn't eat cucumber, but I kept giving it to him. I started by getting him to just lick it, then the next time I asked him to just quickly nibble it, and now a few weeks on he happily just eats it! It's usually the last thing he chooses to eat, but today it went before the treat - they both knew without being told that was a treat and should be last after they'd eaten the rest!
