Paleo Steak Fajitas with a Kick.
2 lbs. flank steak
1/3 cup extra virgin olive oil
2 tbsp Paleo Worcestershire sauce
1/4 cup fresh lime juice
3 cloves garlic, minced
2 tsp honey
2 tsp cumin
2 tsp chili powder
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp pepper
1 large onion, thinly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tbsp coconut oil, divided
Avocado, for serving
Cilantro, for serving
1. Stir together the olive oil, Worcestershire sauce, lime juice, garlic, honey, cumin, chili powder, red pepper flakes, salt & pepper in medium bowl. Pour half of the marinade into a separate bowl. In one bowl, place the steak and turn to coat. In the other bowl, place the veggies and toss to coat. Cover both bowls and place in the refrigerator to marinate for 1 hour.
2. Melt one tablespoon of coconut oil in a large skillet over medium heat. Add the marinated veggies & sauté for 3-4 minutes, until just cooked but still crispy. Remove from the skillet to a plate. Set aside.
3. Melt the remaining tablespoon of coconut oil in the same skillet & add the steak. Cook for 2-3 minutes per side. Remove to a cutting board and let rest for 5 minutes. Slice the meat into thin strips against the grain. Serve with veggies and lettuce wraps, topped with avocado & cilantro.
I’m not an expert. I’m not sure exactly how to pick myself up from all of this and get back to life. I know there are going to be good days and bad days. Today was an okay day.
This is what helped me today. I’m not sure if it will help tomorrow. And that’s okay. Today it worked. I share this with the hope that maybe it helps someone who is trying to pick up the pieces of a broken heart and not be sharing publicly. I feel you and I get you ✊🏻 Please know you are not alone. ❤️ 1. I made myself go outside. It’s really easy to lay in bed and numb out. This lifted my spirits immediately 🌺
2. I put on a semi-cute and comfy outfit. I’ve lived in yoga pants and old t-shirts for weeks.
3. I spent a lot of time giving thanks for what I have and ALL the love ❤️ I have in my life.
4. I checked in with the hubs and my family when I needed to chat. I’m really good at internalizing everything and I’m learning it doesn’t serve me to keep it all in. I used to think I was a burden on people. I now know that was in my head.
5. I drank more water and made healthy food to fuel my body. When I eat well and drink enough water, I feel better. When I eat junk, I feel like junk. The water especially helped today.

The alternative for baking day tomorrow. The kids are having jelly & custard with sugar jellies at school tomorrow for their Baking Friday so I’m making the healthier alternative with some fruitskewers and some NAKD treats together with a Paleo home made custard.
Easiest Home made custard ever!
1 and a bit tablespoon tapioca starch (arrowroot)
1 tablespoon raw honey 🍯 or organic Erythritol (this adds a nice flavour)
1 cup Almond milk
A dash of vanilla essence
Whisk egg, starch and sweetener together until smooth.
Gradually add the almond milk, ensuring a smooth texture throughout.
Heat slowly on the stove, whisking continuously until mixture thickens (approximately 5-7min).
Remove from heat and enjoy hot or cold!

🍫Chocolate Energy Bites🍫
1 heaping cup pitted dates
1/2 cup organic cashew butter
2 Tablespoons + 1 teaspoon unsweetened cocoa powder
1/4 cup + 2 Tablespoons pecan pieces
2 scoops high quality, grain free, dairy free chocolate protein powder
1. Place all of the ingredients into a food processor, & pulse until a soft, thick dough forms. 2. Remove the blade from the food processor, & roll the dough into balls. Place the balls in the refrigerator until firm. Store in an airtight container for up to one week.

Up close and personal with @thecoconutcult and my strawberry banana oat smoothie. 1 frozen ripe sweet banana, 1/2 cup of frozen strawberries, your favorite vanilla protein per the package recommendations (probably 2 scoops), a spoon of greek yogurt, 1/4 cup whole oats & 1 cup almond milk... more or less to blend based on how you like it. I like smoothies thick!! Topped mine with coconut cult bc why not? 🤷🏻♀️I get a big bag of frozen strawberries at @costco plus bananas in bulk to ripped, peel, chop and freeze. My favorite protein right now is @alohamoment which I buy from @target. I use old fashioned @bobsredmill oats from Kroger or any grocery store...I also have a store brand organic Greek yogurt that’s unsweetened + any unsweetened almond milk. @thecoconutcult you can order online or if you live in Michigan @betterhealthmarket in Shelby Township will have it soon (lots of places have it so check online through their website if your outside of MI)! I always buy unsweetened or naturally sweetened foods so if I want it sweeter I can add a date or two. I prefer to avoid added sugar unless it’s a doughnut 🍩! #dkmvsmoothies#smoothie
Throwback to this time last year 2016 when abs were life and before life got in the way! 🙈 oh if only I was an “unfit” as I thought I was then! I’ve decided that life has got in the way, I haven’t look after myself, eaten well or exercise and my body isn’t thanking me! I’ve probably put over a stone on in weight, feel tired, lethargic, low mood and it’s all because I haven’t listened to my body and given her the love and attention she really needs! I’m not going to put pressure on myself but I’m going to focus on moving more even if it’s just 10 minutes every day, a little walk, a little workout and not put the pressure on myself to be some fitness guru because who am I really pretending I haven’t worked out properly in months and have lost my fitness completely!! I’m also going to focus on small little healthy changes every day! Less processed and more fruit and veggies but not aspiring for some unreachable perfection which makes me binge on chocolate even more! We all struggle but it’s how we come through the other side which is the most important! 💜 #throwbackthursday#throwback

A photo of the Glebe Farm gluten free vegan carrot cake (see my earlier post for more details on this premade cake mix). I added extra grated carrot, cashews and pineapple to the mix and I created an awesome vegan cashew butter icing using whipped coconut cream, vanilla essence and lemon rind...very tasty! My mum and dad said that they prefer my homemade gluten free (non vegan) recipe with pineapple, walnuts and raisins, more spices and my usual dairy free butter icing...I agree but this is also pretty lush! 🐇🍍🍰😋
Chicago friends who eat at Roti or chipotle, etc: you must try out @idreamoffalafel! These plates filled with chicken schwarma, rice, tons of fresh veggies and herbs and topped with spicy sauces were all #glutenfree and so satisfying. Thanks IDOF!!
Day 18 and I haven't killed anyone from pizza withdrawals....yet!! Breakfast was a banana, chia seed, rice milk and blueberry yoghurt smoothie and as I've been working from home today I made a lovely, spicy, carrot and parsnip soup for lunch. I've never had stuffed peppers at home as 15 years of vegetarianism and 5 years of veganism means I've had my fair share of stuffed peppers when eating out! But, I thought I'd give them a go! I filled them with Mediterranean flavoured tofu, quinoa, basil and cherry tomatoes and actually they were ok. I made way too much so I'm full to the brim with calories to spare.
