COELIAC CAKE RECC? 🎂
It’s my birthday in a week and my first as a #coeliac which is probably the first time I’ve been really sad about it. Why? Because I LOVE cake (and biscuits but that’s another story). Being #Glutenfree means I eat far less of this type of stuff these days but if I could I would love to have this beautiful cake again that I had for my 30th! 🥂🍾🎂⭐️.
This white chocolate and pink marbled dream was made by the @albionbakehouse over towards Liverpool. They are AMAZING and rose to my challenge asking for meringues and gold leaf. I see these elements on their cakes all the time now 😍❤️ THEY TAKE GLUTEN FREE REQUESTS TOO!.

And all the tiny @konditor_and_cook raspberry and chocolate vegan cakes and wheat-free, chocolate-coated almond St Clements gathered around the grand cappuccino cake, for she was tall and wise and, most importantly, god damn tasty for a butter-free bake.
A note on gluten-free baking.
After completing an elimination diet at the beginning of this year, I found that wheat causes a good amount of my migraines (along with eggs sometimes). I can still have wheat, but not often and not a lot.
That kinda sucked because, as many of you know, I love to bake. Making all sorts of interesting flavors in muffins is my favorite. I was just getting good with yeast breads and was considering making my own sourdough starter. Then. No wheat.
Girl, you know I’m still gonna bake. That’s just what it is. I tried a lot of gluten free recipes. I made my own flours, I even used black beans and chick peas. I made flourless stuff, but that texture is just not my style.
Was just about ready to give up on baking when I stumbled across one-for-one gluten-free flours. With a gluten-free one-for-one flour blend, you use it like you use regular flour. Dump it in instead of flour and that’s it. Still make your favorite recipes like muffins, cakes, cookies, and quick breads. Made with rice flour, potato starch, some xanthan gum to act as the gluten. Seriously, don’t even fuck with anything else, it’s going to taste funky and gluten-free and people will try it to be polite but secretly just hate you.
This is a wheat-free cake. Tastes just as amazing as a chocolate cake with wheat would.
A while back I went to Ghent (Belgium) to find some nice food spots for you. @madambakster made it to my list of favorites! All their cakes are vegan, wheat free and refined sugar free. This is their banana coconut pie but they also have a delicious chocolate raspberry pie!

Chocolate sponge layers, banana jam filling, tofu chocolate frosting, peanut butter drizzle, peanut butter balls, Nutella doughnuts and a sprinkle of White Malt crumbles! (Sprinkled in true Malt bae style) 👐🏻
Looks a little rough round the edges, but not too shabby for it being the first time we try this combo!
Free from Gluten, Wheat, Dairy, Egg and Vegan-friendly (except for Malt crumbles and PB balls).
