Yesterday I attended the @dontolmaninternational seminar and I walked away with a deeper understanding on the power of real food as a form of healing as well as a glimpse in to how the "Health Care" system that we lay so much trust in and credit to truly works. For example I was in tears at one point as I listened to learn "LIPITOR" a very common drug prescribed to patients with "cholesterol" is used to thin their blood was in fact initially created as rat poison but dosage was lowered for humans! How is this acceptable??? I listened with guilt and frustration, I know this drug too well because my Dad was prescribed this "for life" by his doctor after his minor stroke a few years ago. One of the side effects of Lipitor is cancer to the liver which was what my dad was eventually diagnosed with in 2014!!! Knowing my dad's health history it all began to link and make sense. In no way whatsoever did my dad ever eat processed foods he was born and raised in the country eating quality fresh vegetables and fruits and always taught us to eat this food as well over any processed food. The modern health system and medicine failed my dad and millions of others by slowly poisoning him. I just wish I knew the information that I know today back then when he was alive 💔💔💔 😢😢😢 Knowing what I understand today I believe it is something that could have been prevented with Real, good food. ❤ #heal

Feeling saucy so I blended all this up and made a roasted red bell pepper / gazpacho-esque sauce! 🍅 I'm not sure what to call it. It's one small red onion, two tomatoes, one roasted red bell pepper, one small bunch cilantro, two cloves garlic, and juice of half a lime with some EVOO and S+P. 👩🏻🍳
I served it with some chicken already seasoned with cayenne so I thought I should keep it mild, but tbh it needed much more acidity and spice. 🌶 If you try it, add in some kind of fresh spicy peppers and/or ground spices, more lime, and maybe more garlic. Also, I couldn't find canned roasted red bell peppers so I roasted them myself and it was super easy! A good meal prep topping/ingredient you can store for a long time 🍴
I made nori rolls for lunch today, packed with cauliflower rice, sautéed veggies, sardines and beetroot kraut. Still need to perfect my rolling technique but the kiddies loved them! #seaweed#norirolls#kidapproved

Food intake: Day 182. Starbuck's reduced-fat turkey bacon sandwich, baked chicken + cheese + pretzels, dinner salad with baked chicken and veggies, and Halo Top, plus 1 serving Pringle's, 1 small cupcake, and tortilla chips with salsa. // Great day today! I had some snacks at a pool party this afternoon, but otherwise it was a good eating day. Plus, I was active all day, swam with my girls, and did an hour on the elliptical. 💪 My goal this Sunday - Friday is to average one hour of cardio a day - that's what it will take to make my June goal. I guess we will see on Friday. Until then, #fitdadby40 .
Sundays are perfect for nurturing, especially as I have a head cold. We passed the winter solstice and had a lovely reverent yin and yoga nidra session to celebrate last night. Along with seasonal practice, winter food is grounding, with ample cooked root vegetables. I like the look of these potato wedges, chickpeas, spinach and avocado.

I tried a new Energy Bar recipe today. I wanted to find a way to use sorghum - a grain with lots of nutrients and a fair amount of protein. You can pop sorghum like popcorn, which I did here. I added hemp, chia, and flax seeds, dried blueberries and crystallized ginger, and a touch of brown rice syrup. Have any of you out there tried sorghum?
