Healthy whole food banana bread with apples and cranberries 🍌 I used a slightly adjusted version of @veganricha 's One Bowl banana apple bread recipe:
- 1 3/4 cup of whole spelt flour
- 2 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp pumpkin spice (koek & speculaas kruiden)
- 1 tbsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup cashewmilk
- 3 medium very ripe bananas - 1,5 tbsp black strap molasses
- 2 tbsp nut butter
- 1 tsp vanilla extract
- a few drops of @goodgoodbrand caramel stevia drops
- 1 large grated apple
- One apple chopped up
- A few tbsp of nuts and cranberries

What are some ways you use apple cider vinegar?? I love using apple cider vinegar in my dressings! It gives my salads such a great punch of flavor! 👊🏼✨😋 As far as promoting digestion, ACV does so by encouraging growth of friendly bacteria in your body. There is this age-old digestion remedy calls for sipping one tablespoon of raw apple cider vinegar, diluted in a cup of water twenty minutes before meals. 💚You can give this a go but I prefer to use it in my salads as in dressing, and tossing it into some of my other savory dishes. I personally am more of an eater than a drinker of ACV, but if you like sipping it yourself, then by all means go for it!😉

Guess what I’m making for breakfast?😏 That’s right, another cacao smoothie bowl which is rich in antioxidants and high in magnesium!💪🏻Before I started eating plant-based I had low magnesium levels and was prescribed different pills to help me. Although I found the pills to do absolutely nothing for me and the idea of putting a man made substance into my body to regulate my levels didn’t seem right. After doing more and more research it became clear that food is medicine - knowing which foods have the power to heal you is the most empowering source of information!✨ Thank you yummy cacao smoothie bowl, I’ll take you over some pill any day!🙌🏻
Experimenting with whole foods plant based cold soak hiking meals. Now if that isn't a niche I don't know what is... As as you as you can see I also gave in to my inner organisational freak and organised everything into meals and days. I also haven't quite learnt to buy small quantities... my shoulders are going to suffer over the next few days.
This is six days of food assuming my portions are right.
Breakfasts: Muesli - oats, flax, desiccated coconut (left over from lunches), almonds, raisins, peanuts. (I bought this pre mixed except the coconut).
Lunches: chia, flax and desiccated coconut pudding thing. Yay for protein.
Snacks: pre mixed dried fruit and nuts. Dates, raisins, all kinds of nuts and added extra pumpkin seeds.
Dinners: cous cous with TVP (textured vegetable protein) and soy sauce.
I prepare these by putting them into an empty peanut butter jar (one of the big ones), adding water and letting it soak for a few hours.
Incidentally I don't really miss hot food, even on cold days. I look forward to the heat of my sleeping bag most. I do often fantasize about hot chocolate or vegan chilli or curries etc. but in the same way I fantasize about a hot shower and warm fluffy bed sheets.
So walking through the store and seeing things like Pumpkin Pie ice cream makes me feel
A) sad to be vegan 😂
B) like a mom who deprives her children 😚
C) why can't we just be vegetarian instead 😝
D) none of the above! 😎 Anything you can do, I can do vegan! So today I made my own pumpkin pie ice cream even with mini marshmallows in it!!! It's a little on the soft side because my kids were begging for it early! Judging by Bronx's face....It. Was. Amazing!!! I didn't know if it was going to turn out, because I just put a bunch of things together to see if I could do it but it's the bomb!! Wowza!!! So good!! Note to self. Write this one down for sure!!!! (I always forget to write down my recipes) 😂😂

Kale soup with garlic, sundried tomatoes, pumpkin seed and soy "meat". Nothing like a little hot 🍵 on a cold November day. I make a big pot of veggies with lots of taste. Sometimes I add protein rich seitan or tofu for taste, balance and texture. Two big scoops in a bowl with some organic bouillon and 2 cups of boiling water on top, and you have a nice tasty soup ready to eat!
