Pizza delivery at the pool tonight! Did you know you can order pizza without cheese? Until I went plant-based I had no idea. And yes, believe it or not, all my kids ate this. My picky-eater may have picked everything off but the olives but she still ate it. When I first started #pushingplants , ordering pizza without cheese or making it at home sans cheese got me some confused looks. But now they actually request it and one of my daughters noticed she feels so much better when eating pizza now. (Me too honey!) And I also brought baby carrots, pitted dates, popcorn and apple slices to munch on. Such a fun evening!
P.S. Side note, if I had remembered to bring my vegan cashew parmesan, this pizza would've been covered in it. It's @minimalistbaker's recipe and everyone should make a batch and stock it in their fridge. It literally takes 5-10 minutes in a blender or mini food processor. It's delicious on pizza, salad, pasta, you name it. It tastes like the real thing only better. .

Som tilbehør skulle der selvfølgelig avocado til, og jeg valgte at lave avocadoroser ud af dem i stedet for de normale skiver eller tern. Det giver en helt anden oplevelse for øjnene. Det er faktisk slet ikke så svært at lave; skær avocadoen midt over, fjern stenen og skræl avocadoen så forsigtigt, du kan, så overfladen bliver flot. Skær den i meget (!) tynde og ensartede skiver. Glat den ud til en lang række og fold den dernæst ind fra den ene ende af til, at du har en flot rose. Jeg håber det gav mening, og tag mig endelig, hvis du prøver det - elsker at se og spise alt med avocado 🥑 💚
Friday night nachos and fries! I made nachos for my guys and some oil free fries for me! The nacho cheese sauce is made from potatoes and carrots and is oil free too! Topped the nachos with some taco seasoned jackfruit, corn salsa and avocado. Dipping my fries in guac and cheese sauce. Vegan junk food at it's best! The secret is, that aside from the store bought tortilla chips, nothing here is bad for you! Everything's homemade from whole foods. So delicious! 😋❤️🌈

Ben and I settled our differences and went to Pho 90 Degree for a late lunch/early dinner. I got their vegetarian vermicelli (bun chay) which is basically a giant bed of shredded lettuce topped with vermicelli noodles and vegetarian "shredded pork" (tofu) with veggie lime sauce, and it was so yum! He got pho tai (rare beef). Typical 🙄
. //This was the one pho restaurant I had never been to in San Jose, my parents were just never big fans of this place so they never took me. Kind of upsetting because they have the most vegetarian options out of all of them (although I'm not gonna lie, I for sure eat meat when I have to hehe).
Good eats at South restaurant in Leavenworth this weekend! Shout out to our amazing server who was from Regina of all places! I tried the roasted veggie soft tacos and washed them down with a craft beer! Mmmmm
Just did a charcoal face mask, and now I'm waiting for Ben to finish up at the gym so we can go get food. He's bulking right now, protein and carbs for dayzzz, so I'm not sure where we can go to suit both our dietary needs, yikes! .

@nourishcafesf "Tuna" Sandwich - fresh and delicious! San Francisco has such fresh vegan food. Don't get me wrong, I love a big greasy burger here and there, but we try to keep it healthy AND delicious as much as we can while on the road 🌱 It's not too difficult to eat healthy when you're vegan though! Thanks to Nourish for having such great options! We can't wait to revisit. 💚

The path to wellness is a lifelong path that we choose to take. Sometimes we take side roads or paths that meander way off course, but that's okay. Just acknowledging it and finding little ways to get back on track is what's important to feeling good again.
I certainly am not perfect and find myself drifting during times of stress, which is when I need my clean eating and self care the most. It is also just as important too that we are kind to ourselves when we don't follow our own rules by eating something unhealthy or just not taking care of ourselves. Having compassion for yourself is so important.
Right now I am struggling with a few food frustrations while also starting my own business and get it going to support myself and my son. I need good nourishing food to give me energy and strength to be able to play with and take care of my son and then run my business during naps while also cleaning, cooking, and everything else. But at the same time that life can be so overwhelming that I just want to go get Taco Bell for dinner or some other crap.
Planning meals better has been the biggest help. Even if it's just half a day ahead. During breakfast I'll decide to what to make for dinner. Some weeks I have the whole week planned. It varies. So I am compassionate with myself and patient. It's hard work being a single #wahm or even just a #sahm and I am never going to say I have it all down, but I love sharing tips to make it easier and feel good along the way.

I distinctly remember sucking in for this picture. Why? Because I would do that for all photos. I was so uncomfortable in my own body. I was constantly counting calories. Portion controlling. Dieting. Yet absolutely nothing worked. If I lost weight, I'd gain it back and then some. I could talk for hours about the science of why none of it worked! In fact, I'm giving an hour long free presentation regarding this exact topic that will be live streamed on Facebook through @basilbandwagon on August 2nd at 6:30pm 💕🌱🍉 Ironically, despite my lifelong struggle with weight, my original reason for going plant-based had nothing to do with weight and everything to do with health. By not focusing on weight loss, my world and perspective changed. The weight effortlessly fell off while eating more than I used to. Here I am, almost three years into my whole food plant-based journey and I've never had so much energy, had more confidence, or been more comfortable being myself. Most importantly, I've never felt better or been healthier in my life! This is also proof that you can eat lots of healthy desserts (like the ones in my Choco-healthy ebook 😉🍫👌) while nourishing your body and reaching your ideal weight 💪🍰
One thing that's always in my freezer are big bags of frozen organic fruit from @costco . They're so cheap and make it so easy to blend up a smoothie anytime. Pineapple and banana star in today's smoothie along with spinach, spirulina, maca powder, morninga powder, vanilla protein powder, chia seed and some almond butter. Yum! 🌈😋❤️
