❤THAI POMELO SALAD (PLANT-BASED) ❤
If you ever come across a fresh pomelo in your local market – do buy one to create this delicious Thai salad. I have made a Plant-Based version using tamari sauce instead of fish sauce - and removing the prawns. 
Pomelo salads often have roasted peanuts added - but I like them without. Do try both styles.

Pomelo, the "King of the Citrus" family, possesses a very subtle and refreshingly sweet flavor.
One of my favorite salads - the Thai Pomelo Salad blends the sweet, juicy flesh of the pomelo, against a sour & salty sauce that will make your mouth burst with delight.
All of the ingredients are fresh and raw - providing a fantastic healthy meal that won’t feel like dieting. This recipe is;

INGREDIENTS 4 servings
▪️2 cups Pomelo flesh
▪️½ cup carrot, julienned
▪️½ cup kohlrabi, julienned (optional)
▪️1 -2 shallots, thinly sliced
▪️1 hand full of coriander, chopped
▪️1 tbsp ground roasted rice (optional)
▪️1 tbsp roasted fresh coconut
▪️1 tsp roasted shallots (optional garnish)
▪️a handful of roasted whole peanuts
▪️edible flowers ...

DRESSING INGREDIENTS
▪️2 tbsp tamari or soy sauce
▪️1 tsp tamarind puree
▪️1 tsp – 1 ½ tsp coconut sugar
▪️1 tsp chili powder
▪️1 tbsp lime juice ...

METHOD
Place all the sauce ingredients into a small bowl and whisk to combine together. Set aside.
Remove the skin of the pomelo. Remove the flesh and tear into small chunks.

I got some Maca for $4.00 at Trader Joe’s, and then this happened: Maple Maca Ice Cream Sundaes by @queenofmykitchen The ice cream was smooth and creamy and mildly sweet (perfect!), and I think this is the best non-dairy base recipe I’ve tried. The chocolate sauce was quite bitter; I think I’d hold back a bit on cocoa powder next time, but I added some extra chocolate chips, and it mellowed out. I thought this was a wonderful treat, and I enjoyed the Maca flavor (this was my first time trying it!). Swipe to see my concoction in the ice cream maker...I was also super pleased with how this froze up completely but didn’t get crazy hard.🍁 🍨 .

My Mom and I explored another Whole Foods today, and this is what we came out with. We were surprised how many differences there were between the stores, and we also saw some things we missed before. I may have a small Lara bar obsession...they were on sale, and they had several flavors I’ve never seen before. Yum. Also, I didn’t know that you could get Amy’s burritos that were gluten free and vegan. The Rice Dream bar does state that it is made on machinery that is also used for milk products, so if that is problematic for you, I would keep that in mind. The @engine2diet Jalapeño Cilantro hummus was superb! I can’t wait to try the others.

Swipe to see some awesome looking plant based ravioli that also from Engine 2 that is NOT gluten free. This was purchased for the gluten eating portion of the family, and I will not be partaking, but they look great, so I wanted to show them to those of you who can tolerate gluten.

Quinoa salad wrapped in lettuce leaves.
Ingredients: quinoa, red onion, garlic, ginger, broccoli, squash, avocado, tomato, banana, cumin seeds, fresh basil, squeezed lime.
The banana added some sweetness which offset the lime and went great with the cumin. Eating this way has encouraged me to really pay attention to flavours, because you can't get the quick and easy flavour you get from oil, salt or meat. While at first it seemed difficult, I've found my palate has become more sensitive and I've discovered the rich flavours available in plants. I'm 100% herbivore for life! 💚

I made up a filling with two cans black beans, 1 cup corn, 16 grape tomatoes, some cilantro, 3 teaspoons lime juice, 1/4 teaspoon cumin, a few shakes garlic granules, and a shake of salt. ⠀🌿Grão de bico fica bom com tudo, né? Pasta, saladas, refogado, com molho, sem molho, salgadinho, farinha, pão .... um dos alimentos mais versáteis em uma cozinha #PlantbBased🌱

⠀👉🏻Ingredientes: ⠀
⠀1 cebola
⠀2 dentes de alho
⠀2 cm de alho porró
⠀1/3 de pimentão vermelho
⠀1cs de curry
⠀1cc de cominho
⠀500 g de grão de bico cozido
⠀Sal a gosto
⠀200 ml de leite de coco
⠀
⠀Refogue a cebola, o alho, alho porró e pimentão no azeite. Acrescente o grão de bico e os temperos. Acrescente 150 ml de água e deixe ferver. Amasse uns grãos para o caldo ficar mais grosso. Finalize com o leite de coco!!

#TRANSFORMATIONTUESDAY *long post* I've had acne all of my adult life. I deal with it by wearing a lot of makeup, but I decided a few months ago I'd make my very best effort to get rid of it. I've been to the dermatologist, but I didn't want to take any oral/topical meds (I did try an OTC gel once for a couple of days (and proactive many yrs ago)). I've been a #vegetarian for 7 yrs and a #vegan for 3/7. These pics are from a few months ago, and are about a month apart each, with the bottom right being the most recent. I was eating a pretty healthy vegan diet for all of these pics; however, I changed my focus to eating an even CLEANER PLANT-BASED diet (reduced processed foods) and started drinking a green juice everyday with #spirulina (@melissawoodhealth 🙌), I also tried to keep my stress level down by continuing to workout regularly (#spininstructor @s22fitness 👊 & training @melisavlasaty 💪) and also practiced #bikramyoga (@bikramyogascarsdale 🙏) and #pilates (@deniseaustin videos 👍) CONSISTENTLY, #mindbody and of course made sure to clean/moisturize more often. I believe a combination of these things helped reduce MY acne. I still don't have perfect skin, but I haven't had that amount of inflammation since. I had an awesome lunch with my boyfriend's and his lab mates. He and I split the Ancient Grains bowl and the T.L.T. sandwich. They were super tasty. I love how bold and flavorful the bowl was, but it was a bit salty. Though, that was probably because I mixed everything together. The sandwich was actually my favorite because of the light flavors and sandwiches are my bias. Lol These portions were actually split with my boyfriend. The restaurant workers actually split them and put them on separate dishes for us, which was very considerate of them and surprising because even their half portions made me full. So, they are not skimping with the amount they give if we didn't split. I also love how their to-go containers are reuseable, microwaveable, and dishwasher safe. Just spent some time meal prepping for this week. Guys, you have no idea how much easier it is to spend 2-3 hours making two or more big meals for the week. 
For me personally, the meals don’t mean that much. I can think of healthy options day of or night before, BUT when it comes to sweets and treats... I have no self control...
That’s why, my main priority for meal prep is giving myself options for sweets. 
This week I made brownies and blueberry muffins, both from @forksoverknives recipe collection. They look SOOOOO GOOD! I have yet to try them.....I’m resisting so I don’t eat them all in one night 😂
I will let you all know who they taste tomorrow when I eat some 😋
