So I've posted her pre/post coffee banna almond milk dates cacao powder vanilla hemp seeds smoothie and its a Buzzing Boost with anti inflammation and mood boosting nutrition. OMG! No crust apple and pear pies! Baked apples and pears taste just like pie without the added sugars and are easy as can be to prepare. Kids ❤️it! You can lightly dust the apples with melted coconut oil or ghee then sprinkle them with pumpkin spice or cinnamon and ground vanilla, stuff a a cinnamon stick in the apple and add some lemon or lime zest ( my favorite way) or you can also stuff them with some healthy granola. Bake at 350F until lightly golden and soft but not too soft:) Baking time varies on the size of your apples. 🍎💚🌱

Luckily, my wonderdul friend and photographer, Marcela, was present to document moments like these.

Being that we were hosting our retreat in Puglia, I decided to incorporate a typical and regional Pugliese dish into the menu. 
Instead of serving the pasta with anchovies or bottarga (as it is traditionally presented) I toasted some #almonds and sprinkled them on top.

1 1/2 cups cashews soaked overnight
1/2 cup almond milk
2 tbsp maple syrup
2 tbsp coconut oil melted
1 tsp vanilla essence
3 tsp mint essence
2 tsp spirulina optional
1/4 bar dark chocolate (100g bar)

⏩⏩Instructions
Crush the oreos in a plastic bag until you get fine crumbs. Add coconut oil and combine
Press into a standard sized bread loaf tin lined with cling film and freeze while you make the cream cheese
Now place all the ingredients except the mint essence and spirulina into a food processor or blender and blend until very creamy.
Divide the cream mixture in two
Spread one half on top of the base. Freeze for about 15 minutes
Into the other half stir in the spirulina and mint essence. Stir until evenly green.
Spread this mixture on top of the first layer. Freeze for about 2 hours.
Take out of the freezer and let defrost for about 30 minutes. Slice into 6 slices.
Melt the dark chocolate and sprinkle over the top of the bars
Enjoy!

I was actually preparing myself for disappointment; I wasn’t even excited about cooking or eating it, to be frank. But when it came out of the oven I nearly squealed in delight… and after my first bite, I did!

Food comes in a whole package. However - if we had to break it down - It is without doubt that the bulk of my diet is carbohydrate. And would represent 60/20/20 (C/F/P). Sources of carbohydrate I eat most would be oats, potatoes, rice, quinoa, pasta, bread and fruit. Sources of fat I would mostly come from avocado, nuts such as walnuts, Brazil nuts, almonds, cashew nuts, and a mixture of seeds such as flax seeds, sunflower seeds, hemp seeds, chia seeds and pepitas. Protein comes in the form of all plants and I encourage to eat whole as much as possible. Examples of high protein foods in the plant kingdom that I regularly consume can come from beans, lentils, legumes, tempeh, tofu, and of coarse whole fresh veggies. Heavenly breakfast mess in honour of taco Tuesday 🙌🏻 Turmeric Buckwheat Taco (recipe below) topped with: 🌮 
Sautéed greens 💚
Fresh rocket 🌱
@leefromamerica jammy eggs 🥚 
Leftover roasted tomatoes 🍅 
@coyo_uk plain coconut yoghurt 🌴
Fresh parsley 🌿
All sprinkled with zataar, chili flakes & Himalayan salt 🌶
Plus an obligatory side of avo 🥑

For the taco simply mix (inspired by the @deliciouslyella chickpea pancakes):
1/4 a cup of buckwheat flour (this works really well with chickpea flour but I didn’t have any 😏)
1/3 cup water 
1 tsp turmeric 
Sprinkling of salt 
In a pan with about 1 tsp of olive oil pour the pancake mixture in so it fills the bottom of the pan and cook on medium heat for about 2-3 minutes, then flip and cook for the same amount of time. Remove from the heat and add any toppings you wish! Enjoy ❤️

Heavenly breakfast mess in honour of taco Tuesday 🙌🏻 Turmeric Buckwheat Taco (recipe below) topped with: 🌮 Sautéed greens 💚 Fresh rocket 🌱 @leefromamerica jammy eggs 🥚 Leftover roasted tomatoes 🍅 @coyo_uk plain coconut yoghurt 🌴 Fresh parsley 🌿 All sprinkled with zataar, chili flakes & Himalayan salt 🌶 Plus an obligatory side of avo 🥑 . . . For the taco simply mix (inspired by the @deliciouslyella chickpea pancakes): 1/4 a cup of buckwheat flour (this works really well with chickpea flour but I didn’t have any 😏) 1/3 cup water 1 tsp turmeric Sprinkling of salt In a pan with about 1 tsp of olive oil pour the pancake mixture in so it fills the bottom of the pan and cook on medium heat for about 2-3 minutes, then flip and cook for the same amount of time. Remove from the heat and add any toppings you wish! So I've gone a little matcha cray 😆 at the moment! It all started with the matcha latte, 🍵then the matcha clay mask & now the @fit_mixes matcha cheesecake protein ball mix 🍡 that has been staring at me on the health food store shelf for months! I'm sooo glad that I finally gave in because they're the most DELICIOUS protein balls that I've ever eaten. They actually do taste like matcha AND cheesecake even though they're dairy free. Howww did you do this??? ☺️They're definitely going to be one of my new go to snacks from now on.
I usually make my own balls, however I can easily go overboard with my fat consumption. This way I know exactly how many fats I'm getting per ball. Plus, it will stop me from buying snacks while I'm out.

Confession: I actually put aside two balls as part of today's snack but was too excited when I woke up this morning & all I could think was MATCHA CHEESECAKE 😳 so naturally, I went straight for fridge 🏃🏼‍♀️& inhaled them both! ... well done, Vanessa! 👏🏽 Lucky I had a backup plan. 😂

You wouldn’t believe this travelled in a jar and tubs from my house to uni about 1.5 hours later and actually turned out quite pretty! Tonight I'm sharing this recipe....it's based on Pico de Gallo (with a Katie twist). I don't usually follow a recipe... I go by gut feel and taste but tonight I did try and pay attention (during witching hour which means I tried extra hard) so I could give you the recipe! It's sooooo yummy my dad savoured our fresh Mexican dinner one night and my husband loves it too. These men consider themselves fine food critics....so that's good enough for me 💕 🍀Pico de Gallo 
3 Roma tomatoes diced 
1/4 red onion diced fine
2 avocados diced
2 - 3 tbls Jalapeños (from a jar) - optional - I LOVE them
Liberal sprinkling Himalayan salt
coriander leaves to taste 
10 drops Young Living Lime essential oil
8 drops Young Living Lemon essential oil

Amazing flavour! I love Young Living's culinary oils as they are super economical and even when lemons and limes are out of season I always have them on hand - they are packed with flavour and did you know that Young Living have 33 oils approved by Food Standards Australia for ingestion, including these two 💕Young Living also has a culinary oils starter kit should you wish to play around them and enjoy them for yourself. I haven’t shared much about me so here goes... Born and raised in regional Victoria on a small acreage, I spent much of my childhood foraging.  Foraging for natural materials to make weeping willow cubby-houses, daisy chains, homes for tadpoles and rose soup for dolls.  In my early teen years, I spent any spare time I had, helping in Mum's health food shop. Those years created an innate yearning to embrace natural ingredients.
I have always been a keen cook, selecting wholefoods and cooking from scratch as often as possible.  My aim to reduce the chemicals in my family's food has always been of great importance to me. 
That desire to connect to ingredients from nature has extended beyond food, resulting in the arrival of JOY, simply.  JOY, simply is about creating opportunities to find joy in the simple things.  Shifting one's mindset to see daily rituals, such as bathing, as a time of joy.  JOY, simply encourages you to create time to enjoy gifts from the earth in products for skin, hair and home.  The less ingredients the better, as nature intended - JOY, simply.  So that’s how it all started. I’m learning so much. At the moment I’m loving the benefits of essential oils. When dinner looks this good! I’ve always got a stash of overnight oats in the fridge for a quick no fuss meal. Tonight I added banana, coconut flakes, cacao nibs and peanut butter. All natural all whole foods 👌🏽🌱 Make sure you’re using the most cleanest options. My oats are whole grain so they’ve at least got the best parts of the grain, black chia seeds, coconut flakes are organic (found a cool brand at Woolies), cacao nibs are organic as well and of course the peanut butter is only peanuts. Oh and the almond milk to soak the oats with is organic almond milk. So there are no preservatives in this bowl at all 😳👍🏽 Being back in Melbourne now I’m adjusting to all the different brands and options here. So need to do all the research again to make sure I’m putting the best foods in my body. Yes I’m that one that stands in the supermarket actually reading the labels. People seriously we should not be eating things that have numbers in them! It’s just wrong ✖️🤦🏽‍♀️
