I'm sure you cook mince right, whether it's beef mince, lamb or pork? Even chicken maybe?
Have you ever thought about bulking it up with tofu? For the last two meals, we've had a stir fry, one was a thai pork larb and last night it was fried rice and I added some crumbled tofu to both dishes and no one had any idea!! I told the kids afterwards and they were like, no way, we don't eat tofu and I said, well, you do now!
Tofu costs $1.50 for a block so it's such an economical way to bulk up a meal and a great source of vegetarian protein.
I buy the firm tofu from my local markets but you can get it from a local asian store and just crumble it up finely in your dish. You don't even taste it and if the kids happen to notice it and ask what it is, just say it's egg!
I give you a challenge to try it and see what happens. Are you keen to accept? :-)

OMG people, this is divine!! It's a little bit left field given it's made out of chickpeas but you certainly can't tell and it has more of a stronger peanut butter taste than anything. I LOVED it and couldn't stop eating it... especially warm straight out of the oven. Inspired from @ambitiouskitchen .
Chickpea Chocolate Chip Slice/Biscuits
425gms cooked chickpeas, or 1 can, drained and rinsed
(I used dried chickpeas and soaked and cooked them which gave a really smooth soft texture)
1/2 c peanut butter (or other nut butter would work)
1/3 c maple syrup
2 t vanilla essence
1/2 t salt
1 t baking powder
1/2 t baking soda
1/3 c dark chocolate chips (I used sugar free)
sea salt for sprinkling
Preheat oven to 350 degrees F and spray 8x8 inch pan with nonstick cooking spray.
In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Fold in 1/3 cup of chocolate chips, I like to use dark chocolate because it has less sugar but it's up to you (the batter tasted delicious raw even!). Spread batter evenly in prepared pan then sprinkle 2 tablespoons of chocolate chips on top.
Bake for 20-25 minutes or until skewer comes out clean and edges are a tiny bit brown.
Cool pan for 10 minutes on wire rack. Sprinkle with sea salt then cut into squares. Makes 16. I made a 1/2 batch because I just wanted to try it but I'll definitely make it again. That's why I'm posting it so I know where to find it again!

We had another really fun afternoon at our Mother and Daughter workshop today – perfect way to spend an afternoon while it was raining outside!
I just LOVE the 'uhhhhh's (imagine I'm taking a deep breath!) I get everyone sees how easy it is to cut the kumara and potato chips in the food processor and then when they try them cooked, everyone is blown away about how good they taste and how crunchy they are!
We've only got 2 places left in our workshop on Sunday, 20th August if you're keen to come along... or 5 left on the 10th September.

This is a product that caught my eye and my taste buds yesterday at the Food show! Gorgeous 100% natural coconut water from @cococoastnz and it just tasted so pure! I love that it's family owned (they roped their son in to help out for the expo!😜). A 1.25L bottle was only $4.50 which was a show special so definitely go and check them out.
Gorgeous packaging and also comes in other divine flavours in the smaller cans, I can't wait to try the passionfruit.
I must say my arms nearly fell off after carrying my couple of bottles I bought along with everything else by the time I got to my car but oh so worth it!

I'm going live on Facebook tomorrow at 1pm making these delicious 5 ingredient cookies out of my new cookbook - they're called Banana Oat Cookies and unbelievable moorish, especially warm just after they've been cooked!
I'd suggest you either double the mixture so some might make it into the freezer or you just know there won't be any leftover if you make a single batch! :-) Make sure you join me at 1pm, these are the ingredients you'll need so you can make them with me... • 2 medium bananas, mashed
• Fine rolled oats
• LSA (doesn't matter if you don't have it)
• Chia seeds
• Chocolate drops/chips
You'll also need some measuring cups, bowl and a lined baking tray. Turn your oven onto 180 C too.

How's this for a scrummy quick lunch idea? An omlette, loaded with veggies and goodness to keep you going through the whole afternoon! :-) You can throw anything into an omlette but in this one I put:
splash of milk
1 t wholegrain mustard
finely sliced spinach
salt and pepper
spring onions, finely chopped
fresh basil, finely chopped all whisked together
I heated a small amount of oil in a small fry pan and cooked the omlette for 3-4 minutes, and then I put it under the grill to cook the top, so divine! I served it with a grated carrot and celery salad.
I'm loving having something warmer during the day with these cooler days. What's your number one go to lunch that you quickly whip up?
Last night I received a message from one of my lovely Mum's saying that by accident, her father had taken a girls scooter and helmet from a park in Grey Lynn yesterday, thinking it was his granddaughters as it looked exactly the same.

I used to make baked potatoes a lot when I was younger - if I ever wanted to go the extra mile, I'd bake them, scoop out the filling and stuff them with yummy things like bacon, cheese, celery sour cream and they were so good - not so good on the waist line but still darn good!
So last night, I baked the potatoes and then made a yummy bean mixture with cannelini beans, red kidney beans and whole kernel corn and then served it on top of the baked potatoes with grilled cheese on top (much easier and quicker than stuffing them). It got the thumbs up from everyone actually (although the youngest was reluctant at the start) – I'll definitely be making it again!

The thing is, I was completely sold on the lemon bliss balls cover but then Hayley mentioned to me, it's a great pic but don't you think that bliss balls have kind of been done?
That got me thinking so I went back to my designer and asked her to create a different option.
