Im really excited about my final workshops not only because they have a Christmas theme, of course, that's always exciting, and it's not only because they're a Cooking AND Creative workshop (they are that too) but it's because the kids will actually have their own bowls and they'll be making their very own mixture! Individually they'll be learning, measuring, stirring, cooking and of course eating (don't worry, they'll get to make you one too!). So, coming up on Sunday, 3rd Dec (Parent and daughter class) or Sunday, 10th Dec (Parent and son class), we'll be making: + Healthy Waffles, served with strawberries (gluten free option available)
Then as a group, we're going to make: + Chocolate Cinnamon Popcorn and + Chocolate Christmas Bark (this is so easy and such a yummy gift!). In the creative session they're going to make homemade Christmas Crackers - imagine the kids delight going home to make one for everyone on Christmas Day?
We've been ferreting our way through Look Sharp finding some cool crafts to put inside them and we're pretty chuffed with what we've come up with!

An enforced lie down on the couch while I’m icing my calf after injuring it at Netball last night and reading Rushing Woman’s Syndrome. Do you know, I’ve had this book for years and have always been too busy to read it! Ironic isn’t it as who do you think needs it the most??? Have you read it?
I love knowing that after my classes, not only are the parents going to make some healthy changes but also the kids are too. And they're going to ask their parents if they can do some cooking after what they've learnt... which means more healthy options out there, yay!
I also LOVE the aha's that they get during the class which might be as simple as knowing that their food processor came with the same extra blades and they've just cut their dinner prep by 10 minutes or what ingredients to swap recipes out with that make them healthier... really simple but game changing... This was the only thing I manage to whip up on Monday night in prep for school lunches on Monday night- Chocolate Brownie Muffins. I thought I'd pushed it too far again as I used wholemeal spelt flour which is finer than normal wholemeal flour and has quite a gritty texture... so I was thinking, the kids would reject them but alas no, the girls had one for dessert and they said, these are delicious Mum! Yay!
Here's the recipe... Chocolate Brownie Muffins
125gm dark chocolate (I used whittakers 70%)
125gm butter, chopped (could use coconut oil if dairy free)
1 1/2 c spelt flour
1 c wholemeal spelt flour (could use wholemeal flour or just more white spelt)
4 t baking powder
1/3 c cacao powder
3/4 c coconut sugar (it makes 16 muffins)
1/2 c chopped walnuts
1 1/4 c milk (use a nut milk if dairy free)
1 t vanilla essence
Place chocolate and butter in a heatproof bowl or saucepan over the top of another saucepan of simmering water. Melt until mixture is smooth. Preheat oven to 200C.
Line a 12 hole muffin tray with liners or grease with butter. Sift flours, baking powder and cacao into a large bowl. Stir in sugar and walnuts. In another bowlo, whisk together milk, eggs and essence. Pour chocolate mixture and milk mixture over dry ingredients. Mix lightly until ingredients are just combined. Do not overmix. Pour into prepared muffin tins and bake for 20 minutes. You'll need to do an extra batch for the excess mixture. Stand for 5 minutes until turning onto a wire rack to cool completely. Serve warm or cold. Suitable to freeze. Makes 16 muffins.
After my recent post about my 3 c-sections, how they've impacted my self confidence and the reason behind creating the Wicked Healthy Tribe, I was absolutely overwhelmed by the response from mothers who had also had c-sections and wanted to join the tribe.
It got me thinking, what can i add to the Tribe to help you get even better results?
The answer was Nikki Williams from @positive_choice who is a personal trainer (and she’s a finalist for instructor of the year exercise awards in 2017 for her own choreo btw!), mother of two gorgeous girls and just an all round passionate person who oozes energy!
Throughout the 6 weeks in the Wicked Healthy Tribe, Nikki will be sharing exercises with us that we can do from home in a safe environment, at your own fitness and ability level to target certain areas. Nikki will also be available to answer any questions throughout the 6 weeks. Awesome huh?
Are you wondering if you can join if you haven't had a c-section? The answer is OF COURSE, the exercises that Nikki will be sharing are suitable for anyone! In fact, you'll probably connect quicker to your abdominal muscles than we will! :-) I'll of course also be sharing with you what exercise I do on a daily basis and remember it's also about accountability and making sure we're out there moving our bodies - the food thing comes naturally to me so I'll have that down pact for you so you have a clear outline of how that looks, including a Wicked Toolkit full of amazing recipes and ideas!

Finally the rain has stopped and we can get outside - love being down in the bay enjoying the activities they have to offer!! A walk at Park Island and a scooter ride along marine parade.... doesn’t sound like the rain is staying away though... 😟
A couple of months ago, Mel was diagnosed with a gluten and dairy intolerance and has been trying to navigate her way through the ingredients she used to be able to eat to what she can now eat.
Her biggest challenge was needing help adjusting her pantry to suit, and coming up with healthy alternatives - especially flours and grains. She found she was reading too many cookbooks and getting a bit confused, slightly overwhelmed by all the options and wasn't sure which ones were healthy. She even found that some cookbooks took things a step too far for her and needed something that was realistically life changing and not just achievable for a couple of months.
So I went round to Mel's house and we did a Pantry Edit. I took several ingredients with me and I showed her what the healthier options are, how easy it is to incorporate a gluten free diet, what products are great and which aren't so great, how to make your own gluten free flour that actually works, where to source the ingredients from that didn't break the bank and how to find a happy medium between normal eating and paleo that works for the whole family.
Here were Mel's comments after the Pantry Edit. "Thanks for great morning Wick, your advice was simple and informative and now I'm armed with a great shopping list and feel so much more confident about what to buy and where to shop. Thank you". I'm sure you cook mince right, whether it's beef mince, lamb or pork? Even chicken maybe?
Have you ever thought about bulking it up with tofu? For the last two meals, we've had a stir fry, one was a thai pork larb and last night it was fried rice and I added some crumbled tofu to both dishes and no one had any idea!! I told the kids afterwards and they were like, no way, we don't eat tofu and I said, well, you do now!
Tofu costs $1.50 for a block so it's such an economical way to bulk up a meal and a great source of vegetarian protein.
I buy the firm tofu from my local markets but you can get it from a local asian store and just crumble it up finely in your dish. You don't even taste it and if the kids happen to notice it and ask what it is, just say it's egg!

OMG people, this is divine!! It's a little bit left field given it's made out of chickpeas but you certainly can't tell and it has more of a stronger peanut butter taste than anything. I LOVED it and couldn't stop eating it... especially warm straight out of the oven. Inspired from @ambitiouskitchen .
Chickpea Chocolate Chip Slice/Biscuits
425gms cooked chickpeas, or 1 can, drained and rinsed
(I used dried chickpeas and soaked and cooked them which gave a really smooth soft texture)
1/2 c peanut butter (or other nut butter would work)
1/3 c maple syrup
2 t vanilla essence
1/2 t salt
1 t baking powder
1/2 t baking soda
1/3 c dark chocolate chips (I used sugar free)
sea salt for sprinkling
Preheat oven to 350 degrees F and spray 8x8 inch pan with nonstick cooking spray.
In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Fold in 1/3 cup of chocolate chips, I like to use dark chocolate because it has less sugar but it's up to you (the batter tasted delicious raw even!). Spread batter evenly in prepared pan then sprinkle 2 tablespoons of chocolate chips on top.
Bake for 20-25 minutes or until skewer comes out clean and edges are a tiny bit brown.
Cool pan for 10 minutes on wire rack. Sprinkle with sea salt then cut into squares. Makes 16. I made a 1/2 batch because I just wanted to try it but I'll definitely make it again. That's why I'm posting it so I know where to find it again!

We had another really fun afternoon at our Mother and Daughter workshop today – perfect way to spend an afternoon while it was raining outside!
I just LOVE the 'uhhhhh's (imagine I'm taking a deep breath!) I get everyone sees how easy it is to cut the kumara and potato chips in the food processor and then when they try them cooked, everyone is blown away about how good they taste and how crunchy they are!

This is a product that caught my eye and my taste buds yesterday at the Food show! Gorgeous 100% natural coconut water from @cococoastnz and it just tasted so pure! I love that it's family owned (they roped their son in to help out for the expo!😜). A 1.25L bottle was only $4.50 which was a show special so definitely go and check them out.
Gorgeous packaging and also comes in other divine flavours in the smaller cans, I can't wait to try the passionfruit.
I must say my arms nearly fell off after carrying my couple of bottles I bought along with everything else by the time I got to my car but oh so worth it!
