A cracking wine list too - Thierry Germain’s Terres Chaudes a really serious wine from one of the Loire’s Top biodynamic producers - often Cab Franc from the Loire can be overly green and austere in cooler sites but this brilliantly harnessed some of those elements with some savoury depth backed up by a good base of rich fruit - very decent pairing to both starter and main. .
Pencil shavings, a little fresh black currant but the leaves are far more apparent, green pepper too to remind you it’s Cab Franc. Some blueberries add fruit to the nose along with a yeasty character common in low filtration wines, manifests itself as a savoury, umami almost-marmitey character. Elegant tannic structure combines with the Loire’s high acid to yield a fresh yet earthy palate.

I’m pairing it with Albert Boxler's Crémant d’Alsace ($35 in the shop!)—white peach and pear freshen the creaminess of the wine, complimenting the slightly sweeter nature of the veggies.
