Turriga is one of the best Italian wine and also one of unlucky! Why !? Because none know sardina story and Sardinia skill well and so not of a lot i this wine are sold ( in percentuale with other Italian big name )! That is a pity because this wine is a trouly rock star ⭐️! Belove and respected tobaniine had tried !

💡 About carbonic maceration, the discussion is always “is it real, full carbonic maceration or not?” As the grapes 🍇 can be slightly crushed. At Cruchon’s estate🇨🇭, they always take the most care to not crush those grapes. 1st - they don’t move those grapes their harvest and stay in the same container for these firsts steps. 2nd - they create great conditions for the intracellular fermentation to start > heat 🌡 in the room + CO2 are the keys! 3rd > check regularly the berries - if it didn’t start to take the color from the skin - it didn’t properly start > the juice when splitting the berry should start being red 🔴; Another thing where they take a lot of care, it’s the settling. Obviously everything’s done by gravity but the remaining deposits still contain about 10-15% of quality juice. Therefore they have an interesting filter only for that purpose. It works with an external layer of earth being cut progressively. It filters the big particles and the dirty mud that retained some solids is cut so the juice always goes through a clean pad🔄. Why they have so much deposit but why does it still contain that much high quality must? Because under the Demeter certification - you can’t use enzymes & sometimes without pectinase it’s hard to get the yield you should have. 📈🔍🎯✅🥇

Don’t see many of these entering the cellars…. 2014 Paul Hobbs Cabernet Sauvignon from the Beckstoffer To Kalon Vineyard. Commanding Grange type prices (well, realistic Grange type prices anyway – not retail) Hand-sorted and fermented in small, closed-top stainless steel tanks with indigenous yeasts, malo in barrel and aged in 100% French for 20 months. Unfined and unfiltered. Mr Parker Jnr 100 points… Would be interesting to have a look… Kudos to the storage client for tracking this one down. #paulhobbs#paulhobbswinery
