I don’t discriminate avocados. Tbh I’ll eat half brown avocados sometimes and I still think they’re good 😂 Today’s lunch is a baked white sweet potato, steamed sugar snap peas, tomatoes, avocado, sauerkraut, and lots of spinach underneath! I am feeling very productive today. I cranked out a lot of homework at the library this morning. I always feel more productive there and like I’m actually getting school work done lol nevertheless it feels good to be more organized for my week! Anyways, this lunch was bomb and now I’m off to the gym for a good sweat sesh. Have a great night!

4-5 frozen bananas
1 1/2 cups organic frozen mixed berries
1 unsweetened organic acai packet

The most magical day that we could have ever imagined.
We had an intimate wedding surrounded by 112 of our closest family and friends, and got married outside under these two trees that grew so close together that they looked like one.
We asked our guests to put away their phones and cameras during the ceremony, so that they could be present and fully enjoy the moment with us. I'm so glad we did because you could truly feel the love under the trees. ——

For dinner tonight I made this fajita veggie bowl, it is so good. The fajita veggie recipe is from @simplyquinoa, it is super simple but very tasty, and then I made some cilantro lemon rice, added canned black beans, some sriracha baked tofu from Trader Joe’s, and then added avocado and Pico de Gallo on top. You can’t beat a sweet potato stuffed with all the goods though😋 I loaded this ‘tato with lentils, avocado, tomatoes, sauerkraut, and a sprinkle of nutritional yeast on top of a bed of spinach with some steamed broccoli and cauliflower. I added way more nooch as I devoured this delicious meal ☺️ I’m so surprised I have not turned orange at some point yet due to the amount of carrots, pumpkin, and sweet potato I eat. Holy Moly @ancestorscoffee fulfilling all of my vegan dreams with this mac and cheese grilled sandwich. 🤤 Just…. look.. omg I cannot it was so delicious and on my ride or die sourdough bread! 🤩 I spent most of today reading (and am about to go back to it) 📖 Studying English Literature really altered my attitude to reading and I distanced myself from something I loved for such a long time. 🌙However, for the first time in a long time I am excited by the prospect of finishing a book and moving onto the next one, rather than putting it down and forgetting to pick it up again (I’m so sorry to all of the books I have done this to I promise you will be finished. Throwing it back to one of the best batches of fries I’ve made to date... just cut up some russet potatoes and mix with @traderjoes every but the bagel seasoning and bake at 435 for ~35 minutes😋

I have been obsessing over home -grown dragon fruit😍 typically I’m not a fan because dragon fruit tends to have a very bland flavor but the home grown ones I have been having are SO sweet and flavorful! Has anyone else had them? What are your thoughts 💭
It's Friday people so here is something that I just put together for lunch. Put all these ingredients in a pan : half of any onion, 1 can of Busch's medium chili beans, 1 can of beans (your choice), 1 chopped red pepper, corn, bring it to warm stirring constantly. Topping fresh cilantro , and sided with romaine lettuce and rice. So easy and quick , this will make more than one serving 😜 and yes I love spicy food so I put some of the chipotle Tabasco sauce (😋). Yesterday was one of the busiest days I’ve had in a very long time! I didn’t have time to cook anything so I couldn’t post. I’ve been zombie-ing around today, which means an early night is on the cards.

But my phone died overnight while it was charged 💔 I signed a contract for a new phone 5 weeks ago but it still hasn't arrived 😑 So for the time being my mom gave me a super old nokia that is still BW and has absolutely nothing on it #oldschool 😂
