Ok so I didn't post my weekly check-in last week, because I realized I have officially have hit my plateau. For the last month or so I have been gaining and losing the same 1 or so and it has me depressed. But not depressed enough to binge or stop exercising!! Still meeting with my trainer and still counting points (sorta). Work has me stressed and switching back to living with family from living alone has me in eating worry lol! But I have been doing good staying away from the bad stuff!!! Even the homemade Mac and cheese 😱🙈. Real talk. I’ve been frustrated lately because ever since I hit Onederland at the end of April, I’ve been losing and gaining the same 5lbs. I’ve had a few days of being off track but overall I’ve done well but the scale just hasn’t been cooperating as much as I’d like. I’ve been disappointed because I wanted to be so much further along by now. Last night I did some mountain biking with my husband. Even though I was terrified the entire time that I was going to fly off my bike 🙈I realized that when I started this journey almost 2 years ago I couldn’t have imagined biking 10 feet. I couldn’t even walk up the stairs without getting winded. Going to the mailbox, I would be out of breath. Everyday tasks would exhaust me and I sat around on the couch missing out on life most of the time. And now, I’m able to bike for miles! I forget sometimes how far I’ve come. My goal is curtail the negative thoughts just be KIND to myself. If you’re struggling with this too, you’re not alone. Let’s just try to treat ourselves with kindness. 💗
I have 3 summer food goals. The first one is to experiment with choosing recipes that will not heat my house into a fiery inferno when I make them. I cleared a space on my counter for my air fryer, this will help so much! As for dessert, this is one of my favorite dessert recipes and it has 3 ingredients and no cook time 🙌🏼 woo! Oreo truffles. They aren't calorie friendly necessarily but the fact that you can count them makes them friendly to me! Each Oreo ball is 100 calories. Sounds like a ton but they are insanely rich and satisfying so you can get away with just a few! All you need is a package of Oreos, an 8oz block of cream cheese and 1/4c chocolate chips (this really is optional and I mostly do it for looks). Crush your entire package of Oreos (you can do this by hand, I use my food processor and I've had people tell me a blender works as well!) add a package of cream cheese and either work in with your hands or process it with your machinery. Make a loose tablespoon size dough ball, roll into a sphere and place on a plate. If they are sticky, put the dough in the fridge for a few minutes! It shouldn't really be sticking to your hands too much. Once you have those rolled, you should have about 27-28. Take your chocolate chips and put them in a ziplock baggie. seal and place in microwave, heating for 30 second increments. Between each heating time, mix up your chocolate through the bag so it is smooth with no chunks. Once completely melted, cut off a tiny corner off of the ziplock and drizzle chocolate over the top of each! Other recipes tell you to dip it but that was way too much imo! Happy snacking!
