This black futsu squash soup is a recent favorite on our table. It’s simple and satisfying and would make for a delicious light dinner in between holiday feasts. The recipe can easily be doubled or tripled if you’re feeding a crowd, and it also happens to be vegan (using coconut milk for richness). on both my trips to Italy, I’ve come back wildly creatively inspired. this year, it’s trickled down into our thanksgiving celebration. our yearly Mallmann-giving, where we cook nearly everything outside on open fire, is going to have an Italian accent. hubs is making porchetta, there will be homemade pasta and toppings for crostini and I’m roasting squash in ashes and hanging radicchio over the flames to char. the cooking life in Italy is invigorating - the beautiful produce, the simple methods, the communal feeling of it all. can’t wait to inject a bit more of that into our holiday celebration. this photo is from my first trip - to Venice - nearly 3 years ago.
I finally had some time this weekend to figure out what to serve for Thanksgiving. Seeing as my family is not vegan, we’re probably going to have a turkey, but I’m going to make sure we have some vegan dishes in there some where. Maybe some roasted squash and brussel sprouts? A hearty soup? Or apple pie for dessert? So excited! 🦃
Here’s my #scones#recipe : 450g self-raising flour
2 teaspoons baking powder
75g room temperature butter
50g caster sugar
225 ml milk. Pre-heat the oven to 220°C. Mix the flour and baking powder add the butter and rub until a crumble, then add the sugar. Beat the eggs and mix with the milk, then put some of the egg/milk aside for glazing the scones later. Add the egg/milk mixture to the dry ingredients until you have a soft dough. To make sure the scones rise well, I like to use scone mixture that is on the wet side and sticking to your hands. Don’t handle too much before shaping in round balls. Place on tray with baking paper and bake for 15 minutes

Made @nigelslater’s oxtail last night and today for lunch I ate the leftovers, added a tin of tomatoes, cooked up some polenta with provolone picante and finished it off with parsley and lemon peel. All I missed was a glass of red... but it’s a monday and it’s lunchtime and I have just my own company so let’s show some restraint! If it were a friday...

Bir kabın içine bir miktar un koyalım ve havuz şeklinde açalım.
İçine tüm malzemeyi malzemeleri sırasıyla ilave edelim ve ele yapışmayan yumuşak bir hamur yoğuralım.
Hazırladığımız hamurun üzerini nemli bir bez ile örtelim ve 15 dakika dinlendirelim.
Hamurdan Ceviz büyüklüğünden az daha küçük parçalar koparıp, yuvarlayalım..önce yumurtanın sarısına sonrada susama hashasa corek otuna, cekirdek içine batiralim...
Yağlı kağıt serili fırın tepsisine dizelim,
Fırın tepsisinde yaklaşık 1 saat dinlendirelim...ve kapattalim
Önceden ısıtılmış 200° fırında üzerleri kızarana dek pişirelim.firindan çıkar çıkmaz elimizle hafif su serpip üzerini bir havlu ile kapatalım 15 dinlendirelim....afiyet olsun..
