🌱 VEGAN LASAGNA ❤

_ • lasagne sheets, enough for 4 layers
• 1 1/2 cup veggie ragù (recipe on my feed @mymeatlessmeals)
• 1 cup raw cashew nuts, boiled till soft (about 10 minutes)
• 1 cup plant milk, hot
• 1/2 cup nutritional yeast
• 1/2 tsp salt
• 1/2 tsp pepper
• 7-8 leaves fresh basil
• 1 tsp tapioca flour (for thickening the mixture)
• more nooch
• more fresh basil leaves
1. Cook lasagne sheets al dente and transfer them to cold water to rest.
2. Heat up your ragù sauce, make sure it's not watery.
3. Make vegan bechamel by blending all the ingredients together. It's important that the cashew nuts and plant milk are hot so that they cook the tapioca flour as it's added to the mixture.
3. Start assembling a lasagna:
- begin by spreading ragù on the bottom of the baking dish and add a layer of cooked lasagne sheet, followed by more ragù, bechamel, and once again, a layer of lasagne sheet. - repeat the steps as shown in the video, and as you reach the final layer of ragù, sprinkle some nutritional yeast on top (spray some cooking oil if you want)
4. Bake at 375 for 30-40 minutes
5. Allow lasagna to rest for about 10 minutes before serving.
6. Garnish with more nooch and fresh basil leaves.
7. Indulge. 😍

I started practicing yoga for peace of mind, and then realized the workout itself was helping me gain muscle tone more than any #workout I’d done in the past (mainly in my arms).

There's that moment of uncertainty and belly butterflies 🦋, then you conquer the fear of that moment and oh how good it feels! My heart was beating out of my chest stretching into this inversion and then once I was upside down, breathing in the salty air, it's as if the earth stopped rotating.
