I made this last night for dinner and everyone LOVED it!!! I was a little nervous they'd be upset because we had no tortilla shells and my hubs is weird about quinoa. BUTTTTTT no one said a word and dove in!!!

**cooked them all in the skillet, then added
-black beans
-corn
-cooked quinoa -tomatoes
-shredded cheese ***as you can see my cheese is limited due to dairy sensitivity but my fam had a separate pan with more cheese for a more gooey baked look.
-topped with avocado.

This has me really thinking about how my family eats now (which is far from perfect) compared to how we ate 4,5,6 years ago. When my husband and I got married I couldn't cook a damn thing except spaghetti and tacos. We ate lots of prepackaged, bagged and restaurant food. For a long time. Since we moved to our farm, 4ish years ago, I have made it my mission to educate my husband, my children and I on the importance of what we consume. We're not perfect or holier than thou, but I think eating wholesome foods is so important for the overall health of my family. 🌿Recipe: pimientos
Nothing easier than this. Cover a baking tray with baking paper und preheat your oven to 180*C. Put olive oil in your hands and rub all the little green capsicums. Let them roast for about 25min till the skin burns a little. Sprinkle fleur de sel on top and enjoy. If this is not fany enough you can roast some garlic gloves with them or dip the pimientos in aioli.

One of the best and most popular vitamin water  combos - melon + cucumber + mint. As I get back into my fitness routine, I try to drink about a gallon of water each day, especially now that it's getting hotter in Texas. I let the fruit/veggies settle in the water for about 20 minutes before drinking and I'll sip on it throughout the day. This is something I like to do to make drinking water more enjoyable, while also giving my body a small boost of vitamins and minerals. Yes, you can refill the bottle with water up to 24 hours (keep it refrigerated) and yes, you can eat the fruit. If you've known me for a while or have me on snapchat, you'll know I'm a serious food lover and I try to take great care in what I eat and drink.

Take veganism for example, I can't honestly say I am one, and at first I was very narrow minded about the whole idea of it all. But after reflection and research, I agree with the philosophy to certain extents and have adopted quite a few vegan practices and substitutes - I intend to adopt more but it's not easy. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Truth is healthy food should be considered the norm and as time's gone on, humans have developed a need to eat for taste - if it doesn't taste nice we don't want it, its something that unfortunately is programmed into us from what we eat during our childhood and the society that surrounds us. You need to train your body and mind to eat what you know will be good for you and if you take a genuine interest in it, you'll learn ways to make everything taste amazing - which it will.

Like i said it won't happen overnight and takes some time and dedication to change your mindset. It's easier to go and buy a takeaway or eat what's ready made for you, rather than to go shopping and prep a home cooked meal for yourself.
