🍪Chewy Gooey PB Chocolate Chip Cookies (GF, DF)🍪
➖1 cup coconut sugar
➖1 egg
➖1/2 teaspoon vanilla extract
➖1/4 teaspoon pink Himalayan salt
➖2/3 cup + 1/4 cup natural PB (only ingredient should be peanuts)
➖1/2 cup @enjoylifefoods mini chips
✖️Preheat oven to 350 degrees.
✖️With an electric hand mixer, combine sugar, egg, vanilla, and salt. Then add peanut butter and mix until smooth.
✖️Fold in the mini chips with a spatula.
✖️Use a cookie scoop to scoop dough about 2 inches apart on a cookie sheet.
✖️Bake for 11-13 minutes.

I didn't have any wheat flour in stock today, so I used the chance to try something new with these 'spelt flour ombré pancakes'
Normally, I prefer crêpes over pancakes, so I don't make them often – but today I felt like having pancakes for breakfast would be great. I decided to try out a new idea, which turned out very delicious👌  SPELT FLOUR & BANANA PANCAKES (Base Recipe)
Ingredients:
200g /7oz spelt flour or any other flour
1 knife tip of vanilla powder / ¼ tsp. vanilla bean extract
2tsp. baking powder
A sprinkle of salt
150ml soy milk
1 banana
5tsp. maple syrup or another sweetener
100ml sparkling water
10ml oil
Optional: cinnamon, cacao powder, fruit, chocolate

1.Sift the dry ingredients into a bowl, then mix them together. Blend the bananas together with the soy milk.
2.Add the banana/soymilk mixture to the bowl, as well as the water, maple syrup, and oil. Stir until the dough is smooth
3.Put the dough into the fridge for about 30mins, then make your pancakes.

Enjoy them with some maple syrup and/or bananas🔥😉

I have been bedbound for the last couple of days 🤧which is a rather unusual thing for me and while it leaves me with an uncommon amount of time, I'm still at an energy low 🙈
Even more reason to eat healthy and to fuel my body with all the vitamins, antioxidants and anti-inflammatory goodness I can get 🥕besides eating a lot of warm soup this means a big glass of freshly squeezed juice with an extra shot of ginger and a veggie sandwich with turmeric-carrot-hummus and quick-pickled red cabbage 😋

Recipe: Salty Fruity Oat Breakfast Cookies with Cacao Nibs

Notes: If avoiding gluten is a concern, be sure the oats are certified gluten-free. Any Pure Organic Fruit & Veggie Strips and Layered Fruit Bars work here, so choose your own flavor adventure. The breakfast cookies should be stored in an airtight container at room temperature for up to 3 days. The breakfast cookies can also be made ahead of time and frozen.

Takes: 30 minutes
Makes: 8 – 12 cookies

Ingredients:
1 tablespoon ground flax seed
3 tablespoon filtered water
1/2 cup unsweetened apple sauce
1 tablespoon chia seeds
1/4 teaspoon Himalayan pink salt + more for topping
1 1/2 teaspoon cinnamon
1 cup oats {see notes}
1 cup oat flour
2 Pure Organic Fruit & Veggie Strips {see notes}
2 Pure Organic Layered Fruit Bars {see notes}
3 teaspoons cacao nibs, divided

Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

Combine the ground flax with the water in a small bowl and set aside.

In a large bowl combine the apple sauce, chia seeds, salt and cinnamon and stir. Then add in the oats and oat flour, stir again and set aside.

Cut both the Fruit & Veggie Strips and Layered Fruit Bars into small pieces {about the size of a pencil eraser}. Fold the strip and bar pieces, with 2 teaspoons cacao nibs, and the flax mixture into the cookie batter.

Starting your day off without pain and discomfort can mean a whole different kind of day! Everyone’s digestive system responds differently to coffee and how caffeine acts as a gut stimulant moving food through the bowels. Like coffee, certain types of tea can trigger digestive discomfort as well. There are two reasons tea could be irritating your digestive system:⠀

✖ Caffeine: Similar to coffee, a caffeinated tea can act as a gut stimulant. Many people suffering from IBS and digestive distress already struggle with diarrhea, loose stools, and/or multiple bowel movements each day. In these cases it is best to avoid gut stimulants, such as caffeine to help regulate bowel movements. 👌💩⠀

So where's the good news?! WELL there are PLENTY of low FODMAP teas that have actually been clinically shown to AID the digestive process. Healthy and yummy pasta. In here is; garlic, butter, broccoli, silverbeet, broccoli and pasta. 💚 Usually when I can, I like to have homemade pasta but tonight I didn't have time! Not the first time I've made it and definitely won't be the last 🐍🦎

What do you make when you are feelin blue? Are you like me who hides in the kitchen getting lost in the various aroma of spices, the mechanical act of chopping and prepping, crossing off things to do in your mind or are you the sort who don't even eat when upset? 
If you are feeling overwhelmed by anything today, or anytime, take a pause. Retreat into your safe space for a bit. Rationalise why and what caused your feelings or reaction. Try to sort it out. And if that's not possible just do what I do - lose yourself in the process of doing something that you love. Over time everything starts to look better once you give it some space. 
For me that safe space is cooking. 
So here I am today bringing you a bowl of our family favorite malai kofta curry. I use chhena (homemade cottage cheese) to make these koftas. They are mildly spiced with a lot of aromatics, ginger, green chilies, coriander leaves and shallot. Fennel seeds and aniseed flavour it further. I stuff my koftas with a mix of dry fruits (almond, cashew, pistachio and raisins) and add a secret ingredient to take the koftas to an all new level of deliciousness not found in the restaurant dishes. 
The gravy is super simple too. It is a time taking dish for sure.. not something you can whip up in minutes. But at times there is comfort in these slow dishes. You take the time and effort to make it perfect, and in the process you find yourself some of that much needed calm.

HAPPY PANCAKE SUNDAY 😄 I finally managed to make pancakes on Sunday 😂👍. And these ones were SO good! 😍 Style inspo by Garrett @sirplantsalot 😄. I made my basic recipe which is #ontheblog and added 10g chocolate protein, 2tsp cacao powder, gingerbread spice and orange peel. I'm seriously addicted to gingerbread spice atm 😂😂 I add it to everything! Then I layered the pancakes with smurf curd (soy yogurt, blue spirulina , some banana and psyllium husks), banana slices and topped it with figs and the coconut blossom syrup 😋. Okay enough food explanations 😂 ..my family will come for coffee later. How are you spending this Sunday?

It's officially autumn 🍁🍂🍁 -- I wore gloves all day today and half of my face and one ear hurts 🤤 This evening is all about ginger tea 👍

I'm having butternut squash 🎃 porridge almost every morning now -- and it has to be spiced! My favourite seasonal spices are ginger, cloves, nutmeg, cardamom, cinnamon, black pepper and turmeric. All those goodies are included in the porridge as well 👌

Breakfast is served! (Yes, breakfast!) I layered almond vanilla oatmeal with fresh peaches (picked right here in the Valley) and a warm, homemade chocolate sauce. I'm lovin' every spoonful! I think this would also be 'parfait' as a dessert or snack! Easy to do as overnight oats, too. What do you think? 🤗 Any chocolate lovers out there? Никогда не делайте так, как я! Не блокируйте сразу же большое количество ботов, массфоловеров и т.д., в моем случае это 1000 шт за сутки. 
Резкое падение количества подписчиков воспринимаемся Инстаграмом негативно - сразу падает органический охват публикаций! 
Видимо алгоритм просчитал, что мой контент перестал быть привлекательным 🤷‍♀️ и все 1000 акк с диким воплем быстренько собрали чемоданы, чтобы убежать от меня на другую сторону улицы 😅 .
