In the lead up to Christmas I am already swooning over my favourite side dishes such as these oven roasted red cabbage steaks and brussel sprouts with fresh thyme 😍  I have a resolution this year to include more organic produce in my kitchen adventures, especially over the Christmas period inspired by @organicUK. I feel it is important to inspire other people to eat more and a greater variety of organic food. There are so many good reasons to choose organic over commercially grown veggies and fruit, to make a few: avoiding chemicals, more nutrients due to better soil maintenance, thus better flavour, avoid GMO, help preserve ecosystems and support organic farmers etc. So this Christmas season opt in for a more conscious way to consume as you prepare your vegan feast, choose organic products and do something good for your own health and the health of those you feed, and those affected by our purchase choices. Big up all the vegan punks out there 👊 This breakfast is an absolute beauty and if you haven't already, we made it for our family on holiday this morning and they loved it so you need to try it - #vegan huevos rancheros...spicy mushrooms and peppers, the best scrambled tofu you're going to find, and some creamy avocado!
• 2 big portions 🙌
•  400g chestnut mushrooms 🌿 3 cloves garlic 🌿 1 red onion 🌿 1 tin tomatoes 🌿 1 tbsp tomato puree 🌿 1 red pepper 🌿 1/2 lime 🌿 1 tsp ancho chilli powder 🌿 1/2 tsp chipotle chilli powder 🌿 1/2 tsp cayenne powder (it's fairly spicy so tone down if you need to) - slice the mushrooms and finely dice the garlic, onion and pepper. Fry the onion and garlic in a little oil until soft, add the pepper, mushrooms, puree and spices and stir for 5 mins or so and the mushrooms have softened a bit. Add the tinned tomatoes, lime juice, a pinch of salt and leave simmering for 10mins, in the meantime do the scrambled tofu...
• 1 block firm silken tofu 🌿 1/2 tsp kala namak salt 🌿1 tbsp nooch 🌿 1/2 tsp turmeric - chuck it all in a pan and smash the tofu up while heating to get a nice consistency 👌
• Serve it all up on some tortillas, add some avocado and get stuck in! Optional hot sauce for the spice lovers out there 🔥

Self-care (and snowy) Sunday’s 🤗💖 happy Sunday evening lovely people. How has your day been? Filled with snow if it’s been anything like mine. As much as I love it ☃️ the fact all the trains are delayed meant I couldn’t meet any friends today but I took the time to spend a relaxing day with the family ❤️ I cooked, baked, started wrapping presents and just chilled out. That’s what Sundays are all about, right? 🎄 so most of you have probably heard/seen that I’ve been on the mince pie hype since October. We’re big fans in this household 👨‍👩‍👧‍👦 and I can’t believe I haven’t shared a post before! I often make pastry simply with plain flour & a vegan spread like @flora 🌼 but I’m so happy to find out that @jus_rol is vegan??!! ☝🏼homemade cinnamon infused mince pies with a coconut sugar crunchy top ❣️brushed with @alpro almond milk. What is it about oranges and chocolate that just go together oh so nicely 💓 having my dose of Vitamin C - that’s C for chocolate heaven 😍 with some beautiful easy peelers and @miaflavour candied orange dark chocolate. Also who doesn’t love satsumas in winter? Because guess what... It’s snooooowing! I’m having all the Christmas feels 💓 I had no idea since I hardly ever check the weather forecast so waking up this morning was a lovely surprise. By now it’s like 10cm high! Huge snowflakes coming down and the sky is still bright white so don’t think it’ll stop anytime soon. Sad cause church service got cancelled though due to unsafe driving conditions, and we were supposed to all have dinner at Zizzi’s afterwards 😔 but snooooow 😍⛄️❄️ so, since I’ll be staying in all day today, time to get cozy with some tea and God’s word, then having some fun in the kitchen, and then cuddle up with boyfriend and kitty and watch some Christmas movies. Elf or Grinch? .

I’m so hungry right now dreaming of this roasted pumpkin on baby kale root vegetable salad with red onions and rosemary 🤩 today I have the word discipline bouncing inside my head. Boy oh boy do I need an extra dose of that. To me, stress is a direct result of a lack of discipline. Being disorganised and spending too much time on insignificant things when I could be putting my time to better use is a real problem. Time is a precious gift from God. Time equals life. The time we have been given is the time that we are given the breath of life. So yes, wasting that time is wasting your breath, and that is a tremendous insult to the gift that we have been given. I’m so not talking about chasing after the worldly things. That includes everything from materialistic things to non-materialistic things that are of this world such as relationships and personal fulfilment. No, it’s not even about being fulfilled. It’s about your character. It’s about the value we put onto the time we have been given and how we put that time to use. So with the eternal perspective in mind, do we want to gain interest on the way we invested this currency? How are you going to honour this precious gift of time? Are you going to watch random videos on YouTube, think about the next thing you want to buy, engage in gossip.... or are you going to focus on things that will shape and improve your character?

I’m so hungry right now dreaming of this roasted pumpkin on baby kale root vegetable salad with red onions and rosemary 🤩 today I have the word discipline bouncing inside my head. Boy oh boy do I need an extra dose of that. To me, stress is a direct result of a lack of discipline. Being disorganised and spending too much time on insignificant things when I could be putting my time to better use is a real problem. Time is a precious gift from God. Time equals life. The time we have been given is the time that we are given the breath of life. So yes, wasting that time is wasting your breath, and that is a tremendous insult to the gift that we have been given. I’m so not talking about chasing after the worldly things. That includes everything from materialistic things to non-materialistic things that are of this world such as relationships and personal fulfilment. No, it’s not even about being fulfilled. It’s about your character. It’s about the value we put onto the time we have been given and how we put that time to use. So with the eternal perspective in mind, do we want to gain interest on the way we invested this currency? How are you going to honour this precious gift of time? Big up all the vegan punks out there 👊 This breakfast is an absolute beauty and if you haven't already, we made it for our family on holiday this morning and they loved it so you need to try it - #vegan huevos rancheros...spicy mushrooms and peppers, the best scrambled tofu you're going to find, and some creamy avocado!
• 2 big portions 🙌
•  400g chestnut mushrooms 🌿 3 cloves garlic 🌿 1 red onion 🌿 1 tin tomatoes 🌿 1 tbsp tomato puree 🌿 1 red pepper 🌿 1/2 lime 🌿 1 tsp ancho chilli powder 🌿 1/2 tsp chipotle chilli powder 🌿 1/2 tsp cayenne powder (it's fairly spicy so tone down if you need to) - slice the mushrooms and finely dice the garlic, onion and pepper. Fry the onion and garlic in a little oil until soft, add the pepper, mushrooms, puree and spices and stir for 5 mins or so and the mushrooms have softened a bit. Add the tinned tomatoes, lime juice, a pinch of salt and leave simmering for 10mins, in the meantime do the scrambled tofu...
• 1 block firm silken tofu 🌿 1/2 tsp kala namak salt 🌿1 tbsp nooch 🌿 1/2 tsp turmeric - chuck it all in a pan and smash the tofu up while heating to get a nice consistency 👌
• Serve it all up on some tortillas, add some avocado and get stuck in! Optional hot sauce for the spice lovers out there 🔥

Mince pie pops with a twist! Big reveal: I actually don’t really like mince pies 😝 at least not the traditional filling made with Bramley apples, raisins etc. So instead I came up with a version that uses one of my favourite flavour combos: cherries and cinnamon! I simply boiled down some frozen morello cherries with dark muskovado sugar and added @schwartz.uk cinnamon, cardamom and nutmeg. As the cherries release a lot of liquid I added some ground almonds to thicken the mixture, which gave this creation a lovely marzipan-y flavour. So good, I could have eaten it just like that with a spoon! Luckily some of the filling actually made it into the pies 😅 What do you think of this version? Many of you know how much I love fairy lights (I mean I only use them in almost all of my posts!) so it’s Christmas all year round in my kitchen 😅 but to me they are so much more than just a pretty prop. Honestly, fairy lights have such an impact on my mood, I can’t imagine my home without them. I have fairy lights in almost every room, on the dining table, next to my bed, in a jar on my windowsill, around the mirror in my bathroom 🤩 they make me happy! And it actually makes me even happier when people associate fairy lights with me 😍 and you can only imagine what my home looks like this season 🎄✨⭐️✨🎄⭐️✨🎄 they will most certainly play a huge role on my Christmas dinner table. People ask me how I came up with the idea of using fairy lights in my pictures, and I have to say honestly, it was a coincidence because they were already there, next to my flat lay, while I’m taking the picture I look over and see the fairy lights and one thing led to another and voila - this messy little Vegan can’t get enough of them 😊 and especially for Christmas, i could point a camera anywhere in my home and there will be fairy lights in shot! 😄😋 Do you love fairy lights as much as I do? Yum! Have u ever tried our sweet fluffy ricecakes, the so-called SWEET TTEOK ON STICK? 
We steam them, then deep-fry them for a few minutes and then turn them in a sugar-cinnamon mixture when still warm. They have a fluffy and chewy texture in the inside. The outside though is crispy 🤗

We usually serve it with some fruit such as mango or as u see here #pomegranate seeds. Fits well with our #candied korean walnuts, too😋😋 There will be more #healthyvegantreats ! So don't miss out and be prepared for our #newopening in January 💕

Vegan Linzer Cookies
INGREDIENTS
2 cups flour
1/2 cup granulated cane sugar
1/3 cup vegan butter
1 tbsp Vanilla paste
1 tbsp soy milk 
1 tbsp Orange zest
1. Mix everything and knead into firm dough.
2. Chill in fridge for 30 minutes 
3. Roll out thinly and punch out circles. Half of the circles, punch out a little star in the middle.
4. Bake everything at gas mark 6 for 10 minutes
5. Let cool. Spread raspberry jam on whole cookie and sandwich a star cookie on top.
6. Sprinkle with confectioners sugar

It’s no secret that I love potatoes. To me they’re so much more than just a side dish, but totally qualified to be the star of the show. People underestimate the amazing nutritional benefits of our beloved spuds. Not only are they naturally fat free, but pack amazing nutrition with dietary elements such as potassium and fibre! My favourite way to eat them is to hassleback the flip out of them 😝and enjoy them with a side of greens, roast garlic and fresh rosemary (shh, tip: rub the roast garlic all over them before eating and sprinkle with a bit of sea salt 🤫🤫🤫)

It’s no secret that I love potatoes. To me they’re so much more than just a side dish, but totally qualified to be the star of the show. People underestimate the amazing nutritional benefits of our beloved spuds. Not only are they naturally fat free, but pack amazing nutrition with dietary elements such as potassium and fibre! If you're looking for something new to try, how about this spicy lentil curry? 🍛

I added roasted eggplant 🍆, cherry tomatoes 🍅, and chopped cilantro 🌿 to this dish too, and served over brown rice. It was delicious! And had so much flavor. Smokiness, spiciness, and a creamy texture from the coconut milk to balance things out... It was an instant favorite for me! And a great healthy, oil free Indian recipe.

BBQ Chickpea Pizza 🙌
Wowowow the BBQ sauce with the onions and crispy chickpeas made every bite Heavenly!! My beautiful friend Janae @themidwestveg is the inspo behind this, check out her pizzas and just ALL of her crazy good food.

I made my own dough, using a super fast and super easy recipe (google Minimalist Baker breadsticks and use the dough recipe for your pizza.  It makes 2 12 inch pizzas or one bigger pizza and make a small round for some breadsticks, adding margarine and salt 😋) takes mins to throw together and an hour to rise, 13 mins to cook the pizza.

While the dough is rising I cut some red onion, gathered the BBQ sauce, warmed the frozen corn, cut the green onion, and made some bangin' bbq chickpeas:
·
Rinse and dry a can of chickpeas.  Oven at 400°. I coated my chickpeas with about 1 tbsp olive oil and a pinch of salt.  Shake pan every 15 mins, baking for 30-45 mins, until light brown and crunchy.  While they bake I threw together some seasoning.. 1/4 tsp of paprika, garlic powder, onion powder, brown sugar, chili powder, and 1/8 tsp black pepper.  Add the seasoning right after they come out of the oven while they are still warm so the seasoning will stick 🤤

Make your pizza by adding all ingredients except chickpeas and green onions, adding those after baking.  I just threw some chickpeas on top and saved the rest for snacking.  SO delicious 🙌💙

The sky is grey and gloomy, I’m wearing my old grey tracksuit bottoms, the ones that have the knees all bulging and stretched out, sipping on coffee, soaking God’s word into my heart. It’s going to be a very tumultuous December for me, not in the way most people might understand it. Yes I’ll be busy. Yes there’s a lot going on. Yes I still have to find the majority of Christmas presents for the people I’ll be spending Christmas Day with. Yikes. But I’m not talking about that. This is going to be a very different Christmas season for me. Because a) I’m getting baptised on the 17th of December b) I’ll be singing at the Carolling service in the evening that same day and c) my Mum will be visiting me from the 16th till after Christmas so she’ll be there for all of that. Now again, it’s not just about the events as such. But it’s about how it all ties together and what it truly means to me. You see baptism, it’s not just an act. You don’t just go through the motions, getting dunked, dry off, moving on. It has absolute spiritual significance and it has already started working in me. Things are brought up by Holy Spirit that I must address and workout before the big day, and with only 2 weeks to go, I can feel more and more layers being peeled back and it’s painful and scary and wonderful at the same time because never before have I felt more assured that God has me in His hand and is leading me through all of this. “Even though I walk through the valley of the shadow of death, I will fear no evil, for you are with me; your rod and your staff, they comfort me.” Psalms‬ ‭23:4‬ ‭ESV‬‬

Yorkshire puddings are so badass. Is a roast dinner even a roast dinner without them?  It took us a while after going #vegan to make some we thought kicked ass, but we got there, and we thought we'd share the recipe with you as part of our series of #veganchristmas posts 👊
• Makes 12 Yorkshires
• Ingredients:
• ~90g Vitalite (or other vegan butter/margarine) 🌿 180g self-raising flour 🌿 60g chickpea/gram flour 🌿 pinch salt 🌿 ~350ml vegan milk (we use @oatly barista)
• Method:
• Pre-heat the oven to gas mark 7/220c 🌿 Split the butter into the different holes of a cupcake tin - it should be around 1 tsp per hole 🌿 Put the tin in the oven for 5-10 minutes until the butter is extremely hot and bubbling 🌿 While the tin is in the oven, mix the dry ingredients in a bowl 🌿 Add the milk and whisk together - you want the mixture to be a kind of single cream consistency, fairly runny, so add extra milk if it looks too thick 🌿 When the oven and butter are hot, take the tin out of the oven and split the batter mix evenly between the 12 holes as quickly as possible 🌿 Put in the oven for 15-20 minutes. Don't open the oven until the very end – you don't want them to deflate!
• Serve up with your favourite roast and veggies, and try not to eat them all at once 😉

Es súper fácil de preparar, solo hay que poner en el procesador o licuadora los siguientes ingredientes:
(Para 2 o 3 personas)
• 1 aguacate hass maduro (que sea grandecito)
• 1/4 taza de nueces (walnuts) o piñones
• 1 puñado de albahaca
• 1 diente de ajo
• 1 pizca de sal
• 1/4 taza de aceite de oliva

Sirven con lo que prefieran y ya está! Yo serví con tomates 🍅 cherry y levadura nutricional

Time for some delicious vegan shepherd pie! I’ve been dying to have a go at my own version of a lovely rustic classic heralding deliciously fluffy buttery mashing potatoes (you know how much I love a good spud!) here I used the Co-Op Irresistible Mashing Potatoes which are incredibly rich and creamy 😍 these are Lilly potatoes which have been carefully selected and are available exclusively at Co-op @coopukfood 
My recipe here is super simple:
Simply cut the entire bag of potatoes into chunks (leave the skin on it or peel them, I left mine on) boil for 20 minutes until soft, mash them up with some dairy free butter or coconut oil (secret tip!! So scrumptious 😍) add a dash of salt. Time for some delicious vegan shepherd pie! I’ve been dying to have a go at my own version of a lovely rustic classic heralding deliciously fluffy buttery mashing potatoes (you know how much I love a good spud!) here I used the Co-Op Irresistible Mashing Potatoes which are incredibly rich and creamy 😍 these are Lilly potatoes which have been carefully selected and are available exclusively at Co-op @coopukfood My recipe here is super simple: Simply cut the entire bag of potatoes into chunks (leave the skin on it or peel them, I left mine on) boil for 20 minutes until soft, mash them up with some dairy free butter or coconut oil (secret tip!! So scrumptious 😍) add a dash of salt. 🚨 Mushroom Wellington recipe 🚨  Hey punks!  Sorry, it's been a while since we posted - we've been working on a few bits that have kept us busy, but we're back now...promise 💚  We thought we'd return with our mushroom Wellington recipe, ready for your #vegan Christmas dinner.
• 8 portions when served with all the trimmings!
• Ingredients:
• 250g chestnut mushrooms - sliced 🌿 250g portabello/portabellini mushrooms - sliced 🌿 4 cloves garlic - sliced 🌿 1 white onion - roughly chopped 🌿 100g brazil nuts - roughly chopped 🌿 1 cup breadcrumbs 🌿 1 tbsp thyme - chopped 🌿 1 pack of puff pastry (320g)
• Preheat the oven to gas mark 5/190c 🌿 In a saucepan heat up a dash of oil and fry the onion until soft 🌿 Add the garlic and mushrooms, then fry until the mushrooms are cooked and have released a load of water 🌿 Drain in a sieve to make sure the mix isn't too wet 🌿 Put the mix, along with the rosemary and brazil nuts into a blender and blend until roughly mixed - you still want it a bit chunky so it's not too much like mush 🌿 Lay the pastry out and put the filling in a line along the middle, leaving a gap at edges 🌿 fold the edges over to seal it up, then brush the pastry with a little vegan milk 🌿 Bash it in the oven for around 30 minutes, or until the pastry is golden-brown.
• Slice it up and chuck it on a plate with all your favourite veg and sides - we'll hit you up with some ideas over the next week or two, including vegan cauliflower cheese and an incredible gravy recipe we stole from our friend @naturalcookeryschool 🙌💚

For the tofu egg I used @thevietvegan 's awesome recipe 🙌 I added 1/8 tsp black salt to her soaking mixture.
• • •
Hollandaise Sauce:
3 tbsp margarine @earthbalance
2 tbsp ap flour
1 cup unsweetened soy milk
1/8 tsp tumeric
small pinch of black salt (adds a nice eggy smell and taste- not absolutely necessary)
1/2 tsp sea salt
2 tbsp nutritional yeast
2 tbsp lemon juice
1 tbsp vegan mayo @followyourheart
Additional salt & pepper to taste
• • •
In a small sauce pan melt butter over medium heat, whisk in flour and cook for one minute.  Whisk in soy milk and all other ingredients except vegan mayo.  Bring to a boil for 2 mins continuing to stir or until sauce thickens.  If it gets too thick for your liking add more soy milk.  Once you're happy with consistency add in mayo and taste, add pepper, and additional salt if you'd like.  Serve over tofu egg and/or asparagus and enjoy! 💜💜

Remember the “Tears Of Joy” dish I made last week? It was such a hit with my man I’m making it again today! It’s super simple, the base ingredients are rice noodles, scallions, roasted chopped and Lee Kum Kee Chiu Chow Chilli Oil, but I added a few of my favourite veg for some extra flavour.
In my recipe I use:
1 tbsp @lkkeurope Chiu Chow Chilli Oil
1/2 cup chopped scallions
1 cup grated carrot
1 cup chopped asparagus tips 
1 cup chopped red pepper 
1 cup shredded purple cabbage 
1 tbsp sechuan pepper corns 
1/4 cup chopped roasted peanuts 
2 servings instant rice noodles 
1. In a wok, heat the oil and add your chopped veggies. Stir until softened but still crunchy.

👀👉RECIPE: 
2 cups nut milk 
1 cup oats 
1/2 cup pumpkin purée 
1/2 tbsp cinnamon
1/2 tbsp nutmeg 
1/4 cup coconut sugar 
Simmer everything over medium low heat in a saucepan and stir until creamy.
For the caramelised cinnamon apple topping: cut apple into slices, cover with softened coconut oil and place on roasting pan. Sprinkle with coconut sugar and cinnamon and roast until grim for 10 minutes or until golden brown. Place on top of your porridge and serve with coconut yoghurt 😍

When you don’t have time to make pumpkin pie to satisfy the craving, have a warming bowl of pumpkin pie porridge 😍 
2 cups soy milk 
1 cup oats 
1/2 cup pumpkin purée 
1/2 tbsp cinnamon
1/2 tbsp nutmeg 
1/4 cup coconut sugar 
Simmer everything over medium low heat in a saucepan and stir until creamy.
For the caramelised cinnamon apple topping: cut apple into slices, cover with softened coconut oil and place on roasting pan. Sprinkle with coconut cigar and cinnamon and roast until grim for 10 minutes or until golden brown. Place on top of your porridge and serve with coconut yoghurt 😍

Garbanzos picantes 🌶, acompañados con arroz, plátano maduro asado y 🥑 aguacate

No se imaginan lo deliciosos que quedaron estos garbanzos, tienen que intentarlos, son muy fáciles de preparar.

INGREDIENTES:
• 400gr de garbanzos cocinados o de lata 🥫 (si los vas a cocinar en casa, asegúrate de dejarlos remojando de un día para otro, luego enjuágalos, cúbrelos con agua y cocínalos)
• 7 tomates 🍅 cortados en cubos
• 1 ají rojo picante cortado pequeñito
• 1 cebolla pequeña cortada en cubos muy pequeños
• 2 dientes de ajo cortados chiquitico
• 1/2 cdita de tomillo
• 1/2 cdita de Romero

PREPARACIÓN:
- En una olla mediana pon un poco de agua o una cda de aceite de oliva o 🥥 coco y cocina la cebolla y el ajo a fuego 🔥 medio hasta que la cebolla se vea como transparente y suave.

Agrega 1/4 parte de los tomates 🍅 y continúa cocinando hasta que casi todo el agua se haya evaporado. Ahora, echa el resto de los tomates, las hierbas, el ají y un poco de💧agua. Cocina hasta que los tomates 🍅 estén bien cocinados.

Quita la tapa y agrega los garbanzos ya cocinados. Continúa cocinando sin la tapa hasta que tome la consistencia que prefieras.
Sirve con los acompañantes que prefieras.
