🌟Recipe below🌟 Coco crusted chicken and veggie macro bowl today for my handsome, sweet husband @eddiehpark who watched our kids all morning so that I could test out new recipes!! Thanks husband 💛💛 Ingredients: cauliflower, zucchini, sweet potatoes, chicken, arugula, arugula micro greens, avo oil, turmeric, red pepper flakes, real salt and pepper
Directions: 425 degrees, toss cauliflower florets in oil, turmeric powder, salt and red pepper flakes, toss zucchini and sweet potatoes in oil and salt and roast for about 20 minutes. For the chicken, I flattened some chicken breasts (I think I'll use thighs next time) and coated them with a mixture of 1/4 cup of coconut flour, 1/2 t of garlic powder, 1/2 t salt and fried them in my cast iron in coco oil. *Whats great about macro bowls is you can really put anything! So I added micro greens and toasted little pieces of sweet potato for some crunch! Enjoy!!! #thehappygf#thehealthygf

Sometimes it blows my mind how something so simple can taste so dang good! Prime example: this zoodle bowl 🤤 I randomly threw some prepped goods together and it ended up being one of the most delicious dinners ever #winning 👌🏼 If you need an easy meal, try this: @veggienoodleco zucchini spirals + roasted rainbow carrots 🥕+ pan grilled chicken breast + dollop of @kitehillfoods chive cream cheese 😋 Melt the cream cheese into the zoodles for a dreamy, creamy sauce 😍
When your friend brings you fresh zucchini from the garden you make zoodles! I'm all about easy meals and this one took about 5 min. I sautéed some onions, garlic and mushrooms and threw in the zoodles. I used some grilled chicken that I did during Sunday meal prep and topped with fresh basil👌🏻
Tonight's recipe is straight from the program, Shrimp Pesto Zoodles 🙌🏼 the amazing part? My husband really liked it even though it's zoodles! I call that a win.
