Yesterday was TOUGH, y'all - I was at a work function with absolutely ZERO options for dinner, which meant I didn't have dinner until 10pm. It sucked.
I haven't felt all the extra energy and "awesomeness" that people brag about while on #Whole30 but maybe my expectations were just too high. I've followed the program to the letter, so it's a little frustrating but I'm still not giving up! #whole30#septemberwhole30

Goin' oodles for zoodles (AKA Zucchini Noodles!) over here.⠀
We love to spiralize them, sautee with some coconut oil + garlic + onion, and then top with your favourite protein and fresh tomato basil sauce.⠀
Zoodles con salsa bechamel❤
- 1 zapallo italiano
-champiñones -1/2 cebolla
-1/2 taza de leche de soja ( o cualquier otra)
-1chorrito de aceite de oliva
-1 1/2 cucharada de harina
Rallar el zapallo italiano para hacer los zoodles y reservar. Sofreír en un chorrito de aceite de oliva la cebolla en cuadritos, los. Champiñones y el ajo. Condimentar con sal y lo que quieran, yo use nuez moscada. Agregar la leche de soja y 1 1/2 cucharada de harina y revolver muy bien a fuego medio, hasta que espese sin formar grumos ni una masa ( no paren de revolver y corten el fuego para que no se recocine y quede como engrudo).
Agregar el cilantro y listo servir!
Dinner this week: Beef Zoodle Ramen. After my Momofuku trip earlier this week, I knew I had to try to make a zoodle version of ramen and this was so good! A lot of you have been asking me about the recipes for some of the food that I make. The details on this dish are below.
Broth: 1/4 cup of low sodium soy sauce, 2 tablespoons of Mirin, 2 tablespoons of Rice Vinegar, 3 cups of Vegetable stock, 2 cups of water, minced garlic and ginger, and chopped shiitake mushrooms.
Bring everything included in the broth to a boil in a large saucepan/stockpot. Then turn it down to a low simmer and let it cook for at least 20 minutes. I added some cooked beef, green onions, and spinach and let simmer for about 3 minutes. Finally, add some spiralized zucchini for the last two minutes. I used 4 zucchinis in total. At the end, top off your bowl with a poached egg.

One of my favourite ways to use my #ZOODLES This is a simple sauce that takes no time to make at all. It's almost like a one pot meal. I usually make enough for two or three days worth!
In a deep pan seasoned with butter and olive oil, sauté tomato sauce, 1 jar of baby clams with all the clam juice, 1 tablespoon of tomato paste, 2 cloves of garlic, shrimp and 1/2 cup of wine. Keep on rolling sauté for 10 to 15 minutes. Add in your desired amount of zoodles and cook until desired tenderness. And that's literally it! Bon appétit.....

You bet I made a big ol' batch to last me all week! I also threw in fresh tomato and basil for authentic and comforting Italian flavor.
Zoodles with a creamy 🥑🥑 sauce for dinner ✨ light and deeeelicious 🌱 for those asking for the sauce recipe from my story, literally winged it but roughly:
1 medium avo
1 clove of garlic
A handful of cashews (recommend using pine nuts)
Juice of half a 🍋*
A handful of basil*
Pinch of chilli flakes*
*add more to taste as you go
Blend with a splash or water (or oil if you prefer)
Topped with pepper, fresh basil & plum/cherry tomatoes 🍅
Last night I was in the mood for something different and my mind went to ZOODLES! Man am I obsessed with this low-carb alternative. There are so many ways to mix it up. I just threw it together with a simple pasta sauce / ground turkey but stilllllll. Who else is obsessed with Zoodles?! 😍
Yesterday's lunch was so tasty that it deserves a post! 🙌🏼 Zucchini noodles with an Almond Thai Sauce! 🇨🇴 Holaaa! Como muchos de uds me escribieron pidiendo la receta, decidí hacer el post de este plato como se merece!!! Esta es una pasta de Zucchini con vegetales y crema Thai.
Para la crema:
1/2 taza de mantequilla de almendras
2 cdas de Tamari (salsa soya)
2 cdas de jugo de limón
2 cdas de Syrup (yo use maple)
1 cucharadita de jengibre
1 cucharadita de aceite de ajonjolí!
Para los vegetales: Pasta de Zucchini + zanahoria en rodajas delgadas + pimentón en julianas + repollo morado + guisantes.
Combina todos los ingredientes y mézclalos y masajealos con la crema Thai de almendras. Luego agrega terminados, nueces y perejil a tu antojo! Esta receta se puede comer cruda. O también se puede poner todo en un sartén y cocinar durante unos minutos!!
