No one wants to hear they have #diabetes . No one wants to reach into their closet only to find nothing they own will fit. And trust me, NO ONE wants to travel with their loved ones and have to worry about being able to comfortably fit the seats, or have the endurance to enjoy vacation activities. I’d reached a point where my health ailments ruled and all but consumed my life – The most disturbing part, the majority of my complications were a direct result of my struggle with #obesity . To name a few of these complications; I suffered with type 2 #diabetes , a highly diminished quality of life, acid reflux, high blood pressure, swollen feet, lethargy, and let’s not forget about the daily aches/pains that made getting through each day a challenge.
I found the key to success embracing change as a new lifestyle – a long term commitment to health and not a short term commitment to fickle results. You have to find a way to make your eating and exercise habits work for you personally – there is no one size fits all plan. Keep in mind at the end of every “diet” you will have to return to real life and, unfortunately, typically back to old habits.
October 2015, I encountered a major setback in my routine when I was diagnosed with a benign #braintumor During my recovery the dreaded weight-gain I'm still standing; considering the medications and decrease in activity; however, it was the ultimate motivation for me to get back on track and continue my journey.
It's not really about what happens to us...it's about getting back up! About how we deal with certain setbacks and overcoming major crisis in our daily life. #beinspired Am I pissed about the weight regain YES! I worked so darn hard to get under 200 pounds. Only to find myself fighting once again - I will continue to fight for my life and share the ups and downs of my journey. I believe 'Somewhere Someone is looking for a reason to believe they can do it - let's encourage each other.

How to Add Complexity to Vegetable Broth; A good stock is the foundation of many meals—it's an essential in any cooking arsenal.
Saved up onion skins, garlic skins, carrot peelings, a Parmesan rind and other random veggies - throw em in a big pot with lots of water. Simmer for a few hours and strain. Nothing better than homemade stock!
For us it totally depends on what we intend to use the stock for.

Here's my Throwback Thursday contribution: Totally obsessed with Salmon.
However, today is all about my love not only for Salmon...but the cast iron skillet I regularly cook it in. Cast-iron skillets have always been an essential tool in my home. In fact, I don't remember a time when there wasn't at least one cast-iron skillet in the house - I couldn't imagine life it! A well-maintained cast-iron cookware can last for generations.
Cast iron is ideal for searing because of how well it holds onto heat, simultanioously creating that thick sear on steaks and roasts, crispy fish skin, and deep caramelization on vegetables. That's what we're going for, acrusty sear, extra crispy skin and caramelization - beautiful!
Listen, I'm not trying to sell y'all on a cast iron skillet. No ad here...Y'all just keep doing what you're doing, but know you can't go wrong with adding one of these to your kitchen!
