Dinner: mushroom pot pie.
Didn’t use a recipe. Just kind of winged it with leftover veggies around the kitchen and a @pepperidgefarm puff pastry crust I had in the freezer. Garlic, onion, bell pepper, carrots, bella mushrooms, red cabbage, kale, simmered in cooking wine & veggie buillion. Layering flavors, the ragout came out more complex and better tasting than I hoped. Spinach, pear, and clementine salad w/ homemade asian peanut vinagriette complemented it well. #vegan#whatveganseat#veganiseasy
Checked out @indigobistrotally for lunch today. A place known for #fresh , #local , and #organic meals. @disney_groom enjoyed the veggie hummus sandwich (minus cheese). They made me a pressed sandwich of tofu, mushrooms, spinach, cranberry chutney, and red onion on whole wheat. Get the blueberry lemonade! So yum! #vegan#whatveganseat#TalVeg#IHeartTally

Do you know how good it feels to be able to order ANYTHING from a menu with no modifications? Sometimes I want to weep from happiness that 100% vegan restaurants like this exist.
