Good morning! This is an unexpected flavor combination but it's so so good! These chocolate ginger cookies are thin & crispy. The ginger spice & candied ginger add a little kick to the rich buttery cookie ( is buttery a word?!) Recipe below!! ⬇️⬇️ Ingredients:
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder (Dutch processed) 
1/4 tsp salt
1/4 tsp ground ginger
1/4 tsp cinnamon
1/2 cup sugar
8 oz unsalted butter, room temp
1  tsp  vanilla extract
¼ cup finely chopped candied ginger

Instructions :
-In a medium bowl, sift dry ingredients and set aside.Using a stand mixer with paddle attachment, beat the butter & sugar until creamy, about 2 minutes. Add vanilla & mix. Add the dry ingredients in two additions & beat until JUST incorporated. Then add chopped candied ginger & briefly mix one last time. Do not over mix! -Scrape dough onto a lightly floured work surface & with your hands pat the dough together forming a  square. (You can also roll the dough into a log, and slice into circles when the dough has chilled). Wrap the dough in plastic wrap & refrigerate for an hour.
-Once the dough has been chilled, remove from fridge & place on a lightly floured work surface. Preheat your oven to 350 degrees F and line two sheet pans with parchment paper and set aside. -Roll the dough out until it’s about a ⅛-¼ inch thick, depending on your preference. As you roll out the dough, keep checking the bottom to make sure it’s not sticking. If it begins to stick add a little more flour and rotate the dough, continue until you have reached the desired thickness. * Tip: Flour your cookie cutter, it helps prevent the dough from sticking to it. -Place cookies on prepared sheet pans & space about 2 inches apart. Before baking, Place the cookies into the freezer for about 3-5 minutes until they are firm.
-Bake for about 16-18 minutes until the edges are firm. **If your cookies are thin, they will require less time in the oven! *Optional: decorate with melted chocolate and candied ginger. Enjoy!
