I’ve got a horrible cold 🤧 and just want to go back to bed. But as the saying goes...”starve a fever, feed a cold” After my turmeric porridge (see previous post) didn’t perk me up I knew I needed something simple but packed with goodness for lunch. So I bought a bag of prepared stir-fry veg 😱 and added some leftover tofu, leftover spicy rice with nuts and seeds, @bragglivefoodproducts liquid aminos for flavour and additional protein and some sesame seeds. I opted for a mushroom stir-fry mix as mushrooms help boost the immune system 😷 Lunch was ready in less than 10 minutes and I hadn’t used up all my energy to prepare it! ⠀

Breakfast this morning...after my daily hot water and lemon 🍋 I tucked into a bowl of turmeric porridge. This beautiful bowl of goodness was made with:⠀

🥣 2 tbsp whole oats⠀
🥣 1 tbsp chia seeds⠀
🥣 1 tbsp sunflower seeds⠀
🥣 1 tbsp pumpkin seeds⠀
🥣 1 tbsp desiccated coconut⠀
🥣 @rudehealth coconut milk + water (enough to cover the seeds and oats) ⠀
🥣 A few dried cranberries which I found lurking in the cupboard from Christmas 😆⠀
🥣 1/2 a tsp ground turmeric⠀
🥣 1/2 a tsp ground ginger⠀
🥣 1 tsp ground cinnamon⠀
⠀
I added everything to a pan, mixed well and gently heated. Add extra water/coconut milk to created your desired texture - I like my porridge quite thick! I served mine topped with @coconutcollab plain yoghurt and @bionaorganic crunchy peanut butter as I just can’t get enough of the stuff right now!⠀

Mr EBB has learnt how to put together a balanced breakfast with protein from nuts and seeds and healthy fats from the coconut yoghurt to balance out the carbs from the frozen raspberries and oats. But portion control could still use some work! Still, I’m not complaining I was up at 7am to walk the dog so coming home to this was a real treat. Thanks Mr EBB 🙏🏻⠀

I motivated myself to go for a swim, but found I had to scrape frost from the car, then the car park at the gym was full, the changing rooms were chaotic and the pool was packed. BUT I do believe that most of us would benefit from reducing the amount of animal products in our diets in favour of REPLACING them with healthy plant-based proteins like beans and legumes. Don't just cut out meat, eggs and dairy and think you'll be fine - you need to make sure you're getting healthy plant-based sources of nutrients to keep your body working optimally.⠀

I'm already a vegetarian as that makes me feel my best. I've been thinking about trying veganism for a few months but have never quite found the "right-time" (is there ever such a thing?? 😆) So for me, the concept of veganuary is the perfect way to inspire and motivate myself to try being vegan for a month, then I'll decide if it's the right thing for me long-term.⠀

A bit of a slower start today for me as the wind kept me awake half the night. But after walking the dog, I was craving berries so pulled some raspberries from the freezer and added them as I cooked the oats for my porridge in oat milk and water. I also added chia seeds while cooking for a boost of protein and omega-3 healthy fats to keep me feeling full and satisfied. I topped the finished porridge with desiccated coconut and @coconutcollab coconut yoghurt 🥥 ⠀

Raspberries are rich in vitamin c which is great to support your immune system as well as adding an amazing flavour (and colour) to my breakfast 👌🏻⠀

This gold and green warm salad with kings of the cruciferous vegetable family Brussel Sprouts and Kale alongside butternut squash and a turmeric tahini dressing is really hitting the spot this lunchtime. ⠀

Cruciferous vegetables (like Brussel sprouts and kale) are nutritionally great for helping boost energy, aiding detoxification, lowering inflammation and supporting the immune system. Perfect at this time of year. ⠀

Here's how I made this beautiful, nutritiously delicious creation...⠀
⠀
I cut a butternut squash in half (lengthways) and roasted it in the oven for about 40 minutes. ⠀
After 20 mins I add some Brussel sprouts (cut in half) with some coconut oil in a separate dish (I actually ate about half of these straight from the dish when they came out the oven I love them that much 🙈!) ⠀
I then steamed some kale and sliced the butternut squash into chunks after it was cooked (top tip - it's much easier to peel and chop a squash after it's been roasted or you can leave the skin on or added texture). ⠀
I added fresh spinach and @merchantgourmet precooked puy lentils and topped with a dressing made of 1 tsp tahini, 1 tsp lemon juice, 1/4 tsp garlic granules and 1/4 tsp turmeric powder mixed with warm water.⠀
