Carbonara: fresh pasta, salt-cured & smoked egg yolk, cream, crispy bacon. Nice and simple. Salt cured egg yolk is a great substitute for Parmesan cheese. It almost has the same taste, texture and mouthfeel as bottarga but at a fraction of the price.
