A bunch of people have messaged me about this bread recipe. Here ya go...all measurements by weight: * 1 cup of water
* 11g yeast (recipe recommended Saf. I used what I had)
* 1 tsp honey (I omitted)
* 27g swerve confectioners sweetener
* 2 eggs, lightly beaten
* 38g oat fiber.
* 84g flaxseed meal
* 192g vital wheat gluten
* 1-2g xanthan gum
* 6g salt
* 28g butter, softened
After adding yeast to the water and letting it sit a bit, I just added all the other ingredients and let the mixer knead it with a dough hook for about 10 minutes.
Then I kneaded it by hand for about five more minutes before putting in a warm place (I used an oven that had been preheated to 200F and then turned off 20 mins prior) covered with greased plastic wrap. Leave it until the dough rises. I left it an hour but others have left it as long as 2-3!
Pull the rolls from oven (if that’s where you’re proofing them) and heat to 375F before putting them in for about 20-25 minutes.
I made rolls but you can totally do a loaf of bread. If you google “best keto bread reddit,” it’s the second link and there are a bunch of pictures and a video or two in the thread as well!
I got 8 rolls and each roll has 8g fat, 22.3g protein, 3.3g net carbs, and 185.5 calories.
