I stopped drinking coffee a while ago. The caffeine made me jittery and it always hurt my stomach and it just doesn't do me good ya know? I still get it every now and then but most mornings I just drink tea. This matcha latte has been my jam. It's high in protein, fats, and tastes delicious. -4 tbsp tamari (or soy sauce/coconut aminos)
-4 tbsp rice vinegar
-2 tbsp garlic infused olive oil
-2ish tbsp maple syrup (less for a tangier low sugar version)

-2 tsp hot sauce (more or less for spice preference)
-2 tsp sesame oil
-1 tbsp cornstarch or arrowroot powder

1 cup cheddar cheese

Brown sausage in your cast iron. Remove, and cook potatoes down in remaining fat. Whisk eggs and milk together, mix cheese in. Add sausage back in with potatoes, pour cheesy egg mixture over top, and bake at 350F for 30 min!

House packing fuel! Made this unpretty potato hash yesterday and we finished the leftovers today. The uglier the hash usually means the better it tastes

-1-2 cup baby potatoes, cut in pieces
-1 sweet potato, cut in pieces
-4 pieces thick cut bacon, cut in pieces
-1 bell pepper, chopped
-1 jalapeno, chopped
-1/2 cup or so of cheddar
-chili powder, paprika, salt and pepper, cayenne
Toss your potatoes with some cooking oil of choice and roast at 400 for about 30 minutes. In the mean time, cook your bacon pieces and then saute your peppers in a little extra bacon grease - in a skillet that can go in the oven (cast iron is best!). Once roasted, add in your potatoes with your peppers. Sprinkle with bacon and top with cheese - place under broiler until melted (about 4 minutes!)

I picked feel_good_eats in a time crunch before I printed the wedding cookbook, but honestly, I wasn't feeling it. All this recipe development obsession & decision to change careers into nutrition happened behind our bright red front door. Our new house in Charlotte also coincidentally has a red front door. I figured it was only fitting to name what will soon be a food blog just that... Red Door Nutrition. Remember last week when I said I made the best gluten free brownies yet? Ignore that post (I mean not really cause those were still really good...) because these are straight up fudgy delicious perfection. Going to work on a healthy version soon!

I had a lot of leftover ganache from the macarons and no more chocolate chips, so the "chocolate" in these brownies comes from 6 ounces of my coconut chocolate ganache:
-1 bag of chocolate chips
-1 cup coconut cream
Melt together, pour in a bowl, and let cool down to thicken for macarons

-For these brownies, take about 6 ounces (I used a scale, but maybe just under a cup would work?) of ganache and re-melt it if it's hardened
-1 cup sugar
-1/4 cup brown sugar
-1 stick of butter melted
-2 tbsp vanilla
-2 eggs
-3/4 cup gluten free AP flour
-1/4 cup cocoa powder
-1 teaspoon baking soda
Whisk together sugar and butter until creamy. Add in vanilla and eggs, one at a time, until fully combined and light and fluffy. Add in melted chocolate and mix with a silicon spatula until incorporated. Gently fold in flour, cocoa powder, and baking powder. Be sure not to over mix to maintain crispy outer shell and fudgy inside once baked! Bake at 350 for about 35-40 min, or until toothpick comes out clean πŸ˜‹

Homemade spicy chips (makes 3-4 servings):
-10 corn tortillas
-1/4 cup avocado oil
-1 tbsp paprika
-1 tbsp cayenne
-1/2 tbsp chili powder
-1/2 tbsp cumin
-Sea salt
Preheat oven to 375. Mix oil with spices (not salt) well. Brush one side of each tortilla with the oil mixture and stack them as you go. Cut the stack into triangles, line on a baking sheet, and place in oven for about 9 minutes! Sprinkle with some chunky salt and serve!

Mix oil with spices (not salt) well. Brush one side of each tortilla with the oil mixture and stack them as you go. Cut the stack into triangles, line on a baking sheet, and place in oven for about 9 minutes! Sprinkle with some chunky salt and serve!
I. Finally. Did it. I've been working on a legitimately *good* gluten free brownie recipe for years and by total accident, I did it tonight. In a fit of pms induced need for brownies, I threw together what I actually had on hand and voila. Details below. Disclaimer: these are in no way "healthy brownies" and that's okay with me

3/4 cup chocolate chips
6 tbsp butter
3 tbsp dark cocoa powder
1/2 cup rolled oats
1/2 cup almond flour
1/2 teaspoon baking powder
1 teaspoon salt
1/4 cup brown sugar
3/4 cup coconut sugar
2 teaspoons vanilla
3 eggs
Optional: 2 scoops collagen powder #collagencrew

-Preheat oven to 350
-In a glass bowl over lightly boiling water, melt chocolate and butter together. Set aside to cool
-Blitz your oats in a blender to turn to flour. Mix with almond flour, baking powder, cocoa powder and salt. Add collagen powder here if you'd like, but just as good without. Set aside
-Whisk eggs, vanilla, and sugars
-Combine wet ingredients with chocolate, whisk well. Then combine with dry ingredients. Pour into greases or parchment lined pan
-Bake for about 40 min, until toothpick comes out clean
-I topped with melted almond butter!
