One of my favorite lazy meals is my Instant Pot chili! I use the same base ingredients every time and then throw in whatever else I have on hand. 20 minutes on the manual setting and you've got excellent chili. I love that dang @instantpotofficial so much ๐Ÿฝ๏ธ

-1 can Rotel (tomatoes and green chilies)
-1 3oz can tomato paste
-1 cup water or broth
-3 tbsp chili powder
-2 tbsp cumin
-1 tsp salt

Suggested ingredients (even frozen!):
-2 cans of beans, butternut squash, zucchini, carrots, corn, bell pepper, jalapeno, etc ๐Ÿฅ•๐ŸŒฝ๐ŸŒถ๏ธ I paired it with @sietefoods and topped it with cheddar, homemade chipotle salsa, avocado, and leftover carnitas ๐Ÿ˜

I thought my Who Dat carnitas would be the trick to win it. But alas, after an exciting come back, we lost in the final second ๐Ÿ˜ข โšœ๏ธ What a season. It's the final day of 7 days added-sugar-free. (Full disclosure, I used breadcrumbs with sugar, bought chicken sausage with "less than 2% sugar," and I drank a glass of wine last night. Let me live.) I got what I wanted out of it, which was learning when/why I crave sweets & seeing how many things I use regularly has added sugar ๐Ÿฉ

I'm pleasantly surprised to find that it isn't all that much! I put maple syrup in most of my sauces, which isn't necessary. I want something sweet after dinner every night, but fruit mostly satisfies the craving. Happy to say this was actually a nice experience ๐Ÿด

My favorite post dinner fruit treat might have been this broiled & chilled grapefruit. Cut it in half & sprinkle with cinnamon, broil at 550 F for 10-12 minutes. I don't like hot fruit so I popped it in the fridge for a while and then it was perfect! I'm not sure what broiling it does to make it even better, but yum

Homemade clean-the-fridge pizza for dinner tonight. @simplemills pizza dough was SO easy and quick! Homemade dough seems so intimidating but this 8 clean ingredient filled box took one bowl and like 5 minutes to make. It's technically not low fodmap because it has garlic as the last ingredient, but so far so good ๐Ÿคท๐Ÿผโ€โ™€๏ธ

I'm learning I only crave sweets when I'm 1) bored and 2) about an hour after dinner. I've been all about that natural fruit sugar this week, and honestly it has cured the sweet tooth every time. Last night I made these cast iron grilled plantains and topped them with some melted @nutiva coconut butter... Ohhhhh man. They still got nothin on @mastacos or anything but they were still delicious ๐Ÿ’“

I ate half the plantain last night and other half tonight
-1 ripe plantain, sliced in half long ways and cut into pieces
-1 tbsp coconut oil
-1 tbsp coconut butter, optional
Heat the oil in a pan and place the plantains flat side down. Sizzle for a couple minutes, until they start to soften and brown. Flip with a spatula and do the same on the other side. Remove, slather in coconut butter and enjoy ๐Ÿ˜Š

Last weekend some friends made our cabin group a realllly good homemade Thai green curry. I loved it so much I made my own earlier this week in the instant pot and it's even better leftover. I got all the ingredients at a local asian market for under $20 and it made about 6 servings! Way cheaper than takeout. Not quite ready to share this recipe... Gotta tweak some ingredients and I'm gonna try to make my own garlic-free curry paste. But this rainbow bowl was too pretty not to share ๐Ÿ˜Š

Sometimes I make an easy dinner and can't wait to share it. Sometimes I work really hard and can't wait to share it. Other times I work hard, mess up the entire kitchen, dirty 20 dishes, and come out of it thinking "no way this one is going on the website!" Anyone else? ๐Ÿคท๐Ÿผโ€โ™€๏ธ This one was somewhere in between. I thought the chicken was dry, veggies too spicy, noodles underdone and overall a general mess. Theron, however, LOVED it! Goes to show we are often way too hard on ourselves

Thai Peanut Sauce details (the best part!):
-1/4 cup ish all natural peanut butter, heated if necessary to get it a little melty
-2 tbsp rice vinegar
-2 tbsp tamari (or soy sauce/coconut aminos)
-1 tbsp maple syrup
-1 tbsp sriracha
-1 tsp sesame oil
-1 tsp grated fresh ginger
-1 tbsp water
Whisk everything together. Add a little more water if it's still too thick

Veggie-loaded enchilada casserole to feed 16... Easy and a crowd pleaser. Every now and then through the day I'd wander in the kitchen to prep a little more, so once it was time to assemble it was easy as can be .

Chopped & sauteed zucchini, sweet potatoes, bell peppers, jalapeno ๐ŸŒถ๏ธ Could add onions and mushrooms but I kept this one mostly #lowfodmap. Added in corn, black beans, and rotel ๐Ÿ… Did one with (cooked) chicken breast and one without. Line a dish with corn tortillas, add some veggie mix, enchilada sauce, cheese ๐Ÿง€ Top with more corn tortillas, mix, sauce, cheese... Continue until dish is full! Bake at 375 for 20ish minutes. Top with avocado cilantro sauce! Recipe for that is a ways down on the feed

After close to 4 years of very long hours as a construction project manager he finally saved enough to quit and start his own CrossFit gym. He did so much of this completely himself... Including transforming this old car shop into something awesome. As someone also completely shifting careers and potentially launching my own business, watching him go through this has been inspiring

Unexpectedly lost her to kidney failure ๐Ÿ˜ข. Quickly fell in love with a new pet, Millie. Went to the beach for my bachelorette. Quit my corporate job. Started a new job. Enrolled in @ntatraining. Do you have to feed a lot of people all weekend? Or perhaps you're easily susceptible to winter colds? This hearty, nutrient filled, vegetarian (technically even vegan!) soup inspired by Lee from @fitfoodiefinds is the ticket. I changed up some ingredients based on what we had on hand, put it in the Crock-Pot to make  it even easier, and made it a little more #lowfodmap to go easy on my gut.
