For the first time in my entire life, I successfully eyeballed the right amt of pasta for 👆🏼 // @explorecuisine brown rice pasta (tons of #protein !) w/ homemade pomodoro: freshly diced 🍅 on low heat in @fodyfoods garlic evoo, hint of sugar, 🌱oregano, and s+p to taste, topped w grated parm + basil 🍃
Fave part of #fodmap = learning that mozz is low in #lactose 🙌🏼🍕 #glutenfree crust from @wholefoods, smushed 🍅 blistered in @fodyfoods garlic evoo, all of the mozz, and fresh oregano + basil from the garden 🌱🌿
With a little inspo from @wapofood, what started out as caponata turned into a new favorite: Eggplant Tomato Smash Sauce w/ @eatbanza chickpea pasta and all of the herbs 🌱🌿 peel the 🍅 and simmer everything together on low heat, then smash (I literally used a potato masher) and add in the pasta + some reserved water 😋
Poké is always a good idea 🐟 make sure to let it chill for a min of 2hr (and up to 2 days - if you can wait that long!) before serving ⏲ I don't do well with cabbage, but that's another great topping, as are both 🍍 (#lowfodmap ) and mango (not #lowfod ) 😍 pay attn to what works for YOU, and that's the best bowl 👍🏼
Positively delicious way to start Monday 🍳🍞 @udisglutenfree toast with @kitehillfoods chive spread (obsessed, btw), and two eggs w/ spinach (sautéed in leftover garlic infused evoo) 😍 not pictured: dog at my feet who thinks it's all for him...
Garlic infused oil helps me forget how much I miss putting garlic in um, everything 😬 per @katescarlata, the FODMAPs in garlic (fructans) are water soluble, so they don't mix with the oil itself = 🙌🏼🙏🏼🙌🏼 NOTE: if homemade, make sure to use within 2-4 days 🤢 and yes, it almost killed me to not eat those perfectly crunchy garlic chunks 🤤
