For the first time in my entire life, I successfully eyeballed the right amt of pasta for πŸ‘†πŸΌ // @explorecuisine brown rice pasta (tons of #protein!) w/ homemade pomodoro: freshly diced πŸ… on low heat in @fodyfoods garlic evoo, hint of sugar, 🌱oregano, and s+p to taste, topped w grated parm + basil πŸƒ

After a weekend of low lowfodmap eating - aka late night πŸ•(bc what else would you do after a college bestie's wedding) - it's quite nice to come home to farm-fresh pickins!

With a little inspo from @wapofood, what started out as caponata turned into a new favorite: Eggplant Tomato Smash Sauce w/ @eatbanza chickpea pasta and all of the herbs 🌱🌿 peel the πŸ… and simmer everything together on low heat, then smash (I literally used a potato masher) and add in the pasta + some reserved water πŸ˜‹

Super pumped about @lowfodmapper's pad thai (my mom added 🦐) w/ rice noodles - tons of flavor and great crunch!

Garlic infused oil helps me forget how much I miss putting garlic in um, everything 😬 per @katescarlata, the FODMAPs in garlic (fructans) are water soluble, so they don't mix with the oil itself = πŸ™ŒπŸΌπŸ™πŸΌπŸ™ŒπŸΌ NOTE: if homemade, make sure to use within 2-4 days 🀒 and yes, it almost killed me to not eat those perfectly crunchy garlic chunks 🀀
