I wasn't sure what to expect pairing eggplant and lentils together. Had some left over lentils and decided to try this eggplant lentil lasagna. This is my first time cooking eggplant and I was pleasantly surprised at how it turned out!

°| Ontario summer squash is the star of one of our 5 courses for the FoodPar Suburbia supperclub. We'll roast our squash then puree it with sautéed bell peppers, garlic, onion and basil; salt to taste. We'll pair the filling with cashew ricotta before assembling our ravioli.
