Every week I find a few minutes to prepare and cook a chicken, spaghetti squash and a starchy squash or sweet potatoes so I have #protein and #healthycarbs any time I need it. 🍗🍠👌 Squash is drizzled with EVOO, sea salt and pepper and cooked cut side down at 375 for about 30 minutes. I finally tried delicata squash and I can't believe I haven't had it sooner. Sort of like a sweeter version of acorn squash and so easy to make because you can eat the skin.👌I scooped out the seeds, seasoned with olive oil and sea salt and roasted at 350 for about 40 minutes. After a full day of shopping it just occurred to me that I haven't eaten anything since this organic bok choy and beef messy omelet I made at around 11:00am. (Check my story for what's in it) 👆 In the "old days" I would have been beyond hangry by now...I used to get foggy and dizzy and have to sit down in fitting rooms to eat a granola bar because my blood sugar was so out of whack. It's amazing how now, fueled by a protein rich breakfast, I can last until 4pm without a second thought. Able to clearly focus on everything I need and have a productive day. All because I got off sugar and processed carbs. Who woulda thought... 🤔 .

Meal prep! 🥘 Following a paleo diet means I don't eat beans. For some people eating legumes can lead to inflammation, particularly those with autoimmune disease. But, when my son asked me to make him chili, I remembered that my kids LIKE beans and they CAN be a part of a healthy and nutritious diet, and I haven't made them in a really long time.
