Step one 💚,,, make vegetable broth! ✅
Many of the recipes in Dr Michael Greger’s How Not To Die Cookbook include homemade vegetable broth. Much easier than you think and makes enough to handle several recipes. ••••
1 medium onion, coarsely chopped
1 carrot, cut into 1-inch pieces
2 celery ribs, coarsely chopped
3 garlic cloves, crushed
2 dried mushrooms
1/3 cup coarsely chopped fresh parsley
1/2 tsp ground black pepper
2 T white miso paste
Savory Spice Blend (found on page 4 of the cookbook)
In large pot cook over medium heat onions, carrot, celery, & garlic in one cup of water for 5 minutes. Stir in the mushrooms, parsley and black pepper. Add 7 cups of water, bring to a boil then simmer for 1 1/2 hours. When done and cooled enough transfer to a high speed blender and blend until smooth. To add the miso paste mix it with a little of the broth and stir well then incorporate back into the rest of the broth.
Freeze in air tight containers or keep in fridge for up to 5 days.

Green peas are one of the most nutritious leguminous vegetables rich in health promoting phytonutrients, minerals, vitamins and antioxidants. Also a very good source of ZINC, the presence of shallots and garlic helps the body to absorb this important nutrient. 🌿🍃Garlic is the superstar with it’s antibiotic, antifungal and anti inflammatory properties. 🌿🍃Shallots have the highest antioxidant activity with 6x more phenolic than the lowest rated onion. 🌿🍃Sauté one shallot, one large garlic clove, and 2 white mushrooms ( cook at the lowest possible heat to protect the vital allicins and flavonoids of the shallot and garlic ) for 4-5 minutes. Add 1 cup of non dairy milk, 1 cup cooked sweet green peas and blend till smooth. Reheat, add salt and fresh black pepper to taste.
