Early morning sweat sesh with my lil cutie!
So i know ive happily transitioned back to a vegan lifestyle however, since march i have not been excersizing or eating super healthy. To be entirely honest ive been pigging out on a lot of not so healthy take out or fatty vegan foods and have gotten some junk in the trunk so to say, especially on my upper body mainly. Feelin like a linebacker, just sayin.
I was whatever about it but i notice the weather is getting so nice, but im over here hiding behind my husbands tshirts and jeans and overheating like no tomorrow because im apperently more self concious about my arms and such then i thought. Does not help having high anxiety and feeling like everyone is always staring at me, but to believe everyones staring at the elephant in the room -.- i know that may seem dramatic, however telling myself its all nonsense does not prevent nor lessen the panic attacks before i leave my house everyday.
So im gettin back to the grind, cant whine about the things i can control if i put forth the effort!
Made some oven baked potato fries with 4 large russets, seasoned with garlic and onion powder, salt and pepper and parsley the baked on 400°, while they baked i mixed 2 cups of a vegan vegetable stock and 4 tbs of low sodium soy sauce and brought it to a boil, then i added a package of mushrooms that i had chopped small and reduced to a sinmer for about 15 min. Then in a seperate cup i whisked 2 tbs of cornstarch with just enough water to make it a semi liquidy paste, then i slowly whisked that into the gravy and BOOM!
a delish, savory and carb filled lunch with a side of green filled salad that was seriously BOMBDOTCOM!
