So I've been in this journey for almost 44 years (44 next week, how the fuck did that happen?!), but this self improvement journey for 5-ish. We've been coming up here for 6-7weeks for the last 7 years. Usually I take home excess baggage of around 1kg per week so you do the math. Usually I'm all about enjoying all the yummy food, AND drinks but not this time. Don't get me wrong I'm enjoying them, but to be honest once is enough. I just don't like how some things make me feel these days but I sure don't feel like I'm missing out, this is a vacation after all!! So many driving miles gives one so much time to think, or contemplate more like. Making plans with my Mr for a healthier future, nice to be on a journey together. Self love has become a big thing to me, it means different things to different folk but to me it's about accepting the skin I'm in and improving myself for a long life with the ones I love ❤️ I'm not really sure if this post belongs with the quote but yes you can enjoy your life, while taking care of yourself X
And dinner time (watching American Ninja Warrior, check it out it's actually farking cool, think strength!!) after another fabulous day in the Smokies 💨💨 Today we went underground to see the lost sea, we drove to another KOA and then we swam, and water slid (well they did, I went straight for the hot pool because the weather was a tad inclement), and then I cooked 🍴 again... Gifted leftover chicken 🍗 southwest quinoa, sweet corn 🌽 and new taters 🥔 with onion & spinach 🍃 with sweet baby rays and a margarita from the gas station ⛽️ because that's just what they do here! AND we're super excited about tomorrow because after our @jackdaniels_us tour we're heading to the @grand_ole_opry to see @dierksbentley and @thecharliedaniels band. Bucket lists being ticked off all over the place for us three kiwis 🥝 ✅ 🥝✅🥝✅
Another day, another taco salad 🌮 🥗 I went in wanting fajitas but nope, I'm a taco salad gal. To be complete honest, this was the best one ever and I left the bowl (except for a bite). Thank you GPS for finding us a gem for lunch today. Now, 'scuse me while I go for a swim, after all it's almost 30 deg!!
Simple lunch made in the RV kitchen with pulled smoke pork (leftover from Watkins Glen), iceberg lettuce, onion, southwest quinoa and avo wrapped in a Mission carb balance tortilla (thanks my American Fellow IG'ers for showing me some of your better options here, sometimes you just don't have the time to spend looking but makes it easy when you know what to look for!) with a Corona light because, dang were on vacation and have spent the morning working, because rain ☔️ and humidity!
I saw this and loved it! Not so much for 'weight loss' as it's about more than that, but for improving oneself whilst actually living!! Small changes daily add up to big successes!! Even over here on holiday for 6wks I'm still doing my bit to keep that extra holiday weight off. Don't get me wrong as I'm all about enjoying life but have attacked this trip with a 'moderation' approach rather than stuffing my face with all the yummy things and drinking all the cocktails but that's not to say I haven't had a little of either. But moderation, right?!
Another day, another salad 🥗 7 pepper salad, dressing on the side & croutons and most the blue cheese pushed there too. Geez, it feels so good eating leafy greens and having control with the carbs and fats.
Delish BBQ 🍖 🍗 chop chop salad 🥗 from @whenpigsflybbqpit for dinner just before we pulled up to our KOA on beautiful Lake Erie. I left the chips and forgot to ask for the sauce on the side but what the heck, #moderation#balance and all that jazz 🍟 Oh, and Rubes burger 🍔 which she looked at and said 'I wasn't expecting that!', she ate it tho because it came with a hot choc fudge sundae 🍨
And today's lunch is pit smoked beef loaded tots. I left the tots, but drank the beer. We are mostly cooking all our own food for all meals, typically trying to keep away from sugar and stopping when I'm full. Also not drinking wine but have switched to la Croix with vodka which I'm thinking I may just keep rolling with that when I get home, just feel so much better the next day. So, so far, so good I reckon 🙌🏼
Reuben salad, blue cheese dressing on the side (didn't need it) 👌🏼 So pleased to find my fave sammy in salad form, and yes, I left the croutons (except for a couple rye, because the RYE is amazing up here!), washed it down with an 8% IPA 🍻 About to do a final grocery shop and head to Watkins Glen for a weekend of racing so may not be back until Monday as roaming data charges can be horrific!! But sure someone can spot me 😉
It's so true. I have zero diamonds 💎 (none that I wear anyway, just family heirlooms), but I have had, and am continuing to have some amazing adventures with my wee fam. Just have adventures and make memories, that's all that truly matters ❤️
This I love ❤️ Cooking a clean as a bean (well as clean as we could find) family meal for my wee fam in the RV kitchen while they check out the animals in the petting zoo (at the camp!) after a swim in balmy waters in the beautiful green rolling hills in Pennsylvania. After dinner he collected our laundry from the laundry drier then toasted marshmallows with Miss 8 (going on 18!). Making memories, that's what we're doing 🙏🏼
Bistro lunch at the vineyard today. Was going to do salad but the burger patties up here have been stellar thus far! Fried pickles topped it off perfectly and those sweet potato chips were made even sweeter with the sugar and cinnamon they were coated in. I ate a couple, they were heavenly but since I'm going to try and remain as sugar free as poss, I left it at a couple and taking it easy with gluten I left most of the bun. Best part of lunch was a yummy bottle of wine (Southern Rain) that only cost $5, the rest is not n the fridge for an after swim tipple. Having one hell of a good time and heading for New York 🗽 We pulled into a campground on the Blue Ridge Parkway with nothing for dinner, but they do pizza, so looks that's dinner for us tonight!!
